Quick kitchen tip…when cutting an avocado.
Slice with a knife
and then use a grapefruit knife
to scoop out the yumminess.

 Yup, this is definitely something to love about winter!
A nice bowl of warm spicy soup
to keep you toasty during a blizzard.

 

Spicy Rice & Chicken Soup

Prep Time: 30 minutes

Cook Time: 20 minutes

Yield: 10 servings

Spicy Rice & Chicken Soup

Easy spicy chicken and rice soup

Ingredients

8 cups chicken broth
1 cup cooked rice
2 cans tomatoes & green chilies (10 oz. each)
2 cups chopped cooked chicken
1/4 cup lime juice
1 cup chopped cilantro
1/2 cup chopped onion
1 Tablespoon garlic
2 Tablespoons butter
salt and pepper to taste
shredded cheese
chopped avocado

Instructions

  1. Saute the onion in the butter for a few minutes. Add the garlic and saute another minute. It should be nice and golden colored.
  2. Add the chicken broth, tomatoes, chicken, rice, and lime juice. Bring to a boil. Remove from the heat and stir in the cilantro. Season to taste with the salt and pepper.
  3. Top with cheddar cheese and chopped avocado, if desired. Makes about 10 cups of soup.

    yum. that looks really similar to tortilla chicken soup. Our friends taught me how to make that, and they top it with fried tortillas, lime and avocado, but use feta instead of cheddar. try it next time, it’s yummy!
