Andes Mint Filled Cookies

There are certain things that drive me to eat more sugar…
…cleaning up a “lake” on the bathroom floor and a
“waterfall” in the basement just happens to be one of those things.
My youngest decided to fill the tub up to the rim
and then proceeded to do some sort of “wave”.
(Apparently this is some sort of pokemon move that
you would use in a battle.)
Water was everywhere from the waves crashing over the side of the tub.
And of course the floor isn’t waterproof so it was gushing
like a waterfall into the storage room.
I have now declared our bathroom to be a battle free zone.
Under no circumstance is there to be a Pokemon fight in our tub again!
Pokemon’s swimming…ok. Pokemon’s battling…not ok!
1 dehumidifier and 10 soggy towels later,
I felt the need to have some sugar.
Sugar is obviously a drug of some sorts
because it can totally calm any irritations in a heartbeat!
Water gushing through my floors…
that’s ok because I have cookies to munch on!!!
Go ahead and bake yourself some
for when the next panic moment happens!
Andes Mint Filled Cookies

Prep Time: 1 hour, 20 minutes

Cook Time: 9 minutes

Yield: 18 filled cookies

Andes Mint Filled Cookies

Chocolate mocha cookies filled with a mint chocolate frosting.


For the Cookies
1 1/4 c. flour
1/2 tsp. baking soda
3/4 c. brown sugar
2 Tbsp. instant coffee
6 Tbsp. butter
1 Tbsp. water
1 c. chocolate chips
1 egg
For the Filling
1 c. canned chocolate frosting
1/2 c. Andes mint chips
1/4 tsp. peppermint extract


  1. Preheat oven to 350* In a small saucepan over low heat, combine the sugar, butter, coffee and water until melted. Add the chocolate chips and stir until melted. Pour into a bowl and cool 10 minutes.
  2. Stir in egg, flour, and baking soda. Chill the dough in the refrigerator for an hour or until able to roll. Roll into 1 inch balls and place on an un-greased baking sheet. Bake 9 minutes. Cool a few minutes on the pan and then remove to a wire rack. Cool completely before filling with chocolate mint frosting.
  3. Stir together frosting ingredients. Fill cookies. Store in a sealed container.

    i totally have ariel and all of her sisters in my bathtub, practicing the little splash up on the rock bit. somehow my girls think they are mermaids, which sounds just as messy as pokemon.
