Now it is time for another fun round of Secret Recipe Club.
This month I was assigned to the blog
I had a good time going through her older posts
and trying to decide which yummy one to recreate.
It was tough, let me tell you!
I wanted to try just about everything!
Her chocolate chip cookie bars almost had me sold…
until I came across these Peach Oat muffins.
My kids love a good muffin in the morning, and
I love a good muffin I can make the day before.
In fact, I actually thought these muffins tasted even better
the second day around.
The funny thing about choosing this muffin recipe…
earlier this week I had gone grocery shopping
and picked up some peaches…
for guess what?
You got it. Muffins!
No doubt about it…
this muffin recipe had to be tried!!!
I modified the recipe slightly, based on what I had in my cupboards that day.
Then because I like streusel topped muffins…
I kinda had to add that too:-)
And the best part of these muffins…
applesauce is used in place of any oil or butter.
Oatmeal and fruit…these are pretty much health food.
Just close your eyes when when you put on the buttery streusel:-)
Oatmeal Peach Muffins

Prep Time: 10 minutes
Cook Time: 25 minutes
Ingredients
For the Muffin
- 1 1/2 c. flour
- 3/4 c. quick oats
- 1 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. applesauce
- 2 eggs
- 1/2 c. sugar
- 3/4 c. brown sugar
- 1 1/4 c. ripe peaches, diced
For the Steusel Topping
- 1/4 c. sugar
- 1/4 c. brown sugar
- 1/4 c. quick oats
- 2 Tbsp. flour
- 1/2 tsp. cinnamon
- 2 Tbsp. butter, melted
Instructions
In a large mixing bowl, combine the flour, oats, cinnamon, nutmeg, baking soda and salt. Mix and set aside. In another mixing bowl, stir together the applesauce, eggs, and sugars. Slowly stir in the dry mixture. Fold in the diced peaches.
Fill muffin liners at least 3/4 full. Top with a spoonful of streusel topping. Bake at 400* for 25 minutes. Cool completely. Store in an airtight container.
For the Streusel Topping
Combine all ingredients and stir until mixed thoroughly.

You most certainly picked a good recipe to try. I’m gonna try it too for Farmer’s Market of course! What would I ever do without the food blogs??? I depend on them.
Sounds so wonderful and I bet you could even replace the fruit with whatever fruit you had on hand…what a versatile recipe.

How delicious looking! And to think I almost picked up some peaches yesterday in the grocery store. I will most definitely have to go back and get some so that I can give these muffins a try!!
Yum! I love muffins and oatmeal, so combining the two together is a great breakfast, especially with fresh peaches!
I LOVE streusel topped muffins, and with the fresh peaches–yummo! And, I’d say these are practically health food with the oatmeal and applesauce!
oh, yum! i’ve been on a huge oat kick lately, adding it to muffins, cookies, + even smoothies. these sound just wonderful + will be great with the local peaches that will be in season here soon!

Muffins. They are just so wonderful! Thank goodness someone invented them. And thank goodness you picked this recipe for SRC this month – now i have a lovely new recipe for muffins to make ASAP! Helps that I just adore putting oatmeal in my muffins along with the fact that peaches are always yummy to add to a baked goodie.

These sound completely delicious. I also love how you say they’re even better the next day. That’s incentive not to eat them all right out of the oven
