M&M Pumpkin Pudding Cookies

Easy M&M Pumpkin Pudding Cookies with milk are a great after school snack for fall days.  They also make a great midnight snack when you can’t sleep.

 Well, it was bound to happen again…
I had to make more pudding cookies.

Especially after I made the peanut butter pudding ones,
and after I have seen so many yummy combinations online lately.
Seriously…Maria, Nikki, and Ashton made me do it.

I have had pudding on the brain dreaming up combinations for a while now.

What was I supposed to do when I saw the box of pumpkin pudding at Meijer?
Make pudding and eat it?

Of course not…my first thought was to make it into yummy cookies.
Because if you have not tried pudding cookies, then you are missing out.
They are soft and chewy and basically addicting, no matter what the flavor.
It is my favorite way to make cookies right now, along with the cake mix cookies.

Yes, I may have bought a few different pudding flavors,
and yes, I may have made 3-4 different kinds in the last 2 months.

I’m just warning you there is a pudding obsession happening here, so be prepared.
I promise to spread them out though…
so the obsession isn’t quite so recognizable!!!

Lucky for me, my son needed a dessert kind of a snack this week…
for get this…National Punctuation Day!
Apparently this was a “real” holiday on Monday…I don’t know…
Yeah, I had never heard of it either…but I’m all for celebrating any day with cookies.
Especially soft, chewy pudding cookies made with Fall colored M&M’s!!!
You need to try these for sure!

M&M Pumpkin Pudding Cookies

Prep Time: 15 minutes

Cook Time: 8 minutes

Yield: 48 cookies

M&M Pumpkin Pudding Cookies

Chocolate chip cookies made with a box of instant pumpkin pudding and MM candies are a delicious fall treat with milk.

Ingredients

1 cup butter, softened
3/4 cup brown sugar
1/4 cup sugar
1 teaspoon vanilla extract
2 eggs
1 teaspoon pumpkin pie spice
1 box instant pumpkin spice pudding (3.4 oz.)
1/4 teaspoon salt
1 teaspoon baking soda
2 1/4 cups flour
1 1/2 cups fall colored M&M candies
1/2 cup miniature chocolate chips

Instructions

  1. In a mixing bowl, beat the butter and sugars until creamy. Add the eggs and vanilla and beat again. Sift together the flour, baking soda, pumpkin pie spice, pudding mix and salt. Slowly add to the butter mixture. Stir in the M&M's and chocolate chips by hand.
  2. Use a teaspoon to scoop the dough onto a baking sheet. Bake at 375 degrees for 8-9 minutes. They will appear undone, but they will set up while cooling. Let cool on baking sheet for a few minutes before removing to a wire rack. Store in a sealed container. Makes about 48 cookies.

Notes

*If you cannot find the pumpkin pudding, use vanilla pudding with an extra teaspoon of pumpkin pie spice added.

    I hadn’t seen the pumpkin pudding out yet, either. Is it Jello brand?? If I can find it, I might try these with toffee bits instead of the M&Ms.

    IT may come as a shock to you Jocelyn, but i’ve NEVER had that pumpkin spice pudding before. And i’ve never made pudding cookies before! You have quite the few in your recipe arsenal. :) I’ve got to try these!

    I honestly have that pudding in my pantry right now. I was thinking it would probably expire before I could figure out what to do with it. I always keep M&M’s on hand too. I know what I am making!

    I don’t normally post about the recipes, but these are amazing!! My husband, who’s not a pumpkin fan, was skeptical at first, but ate too many already. My son, who’s pretty picky about new stuff, loves them too. My new fall favorite :)

    Dumb question but what does it mean if my cookies didn’t spread out? I baked them but they just stayed I’m somewhat of a ball shape. I dont know if it matters but used a Pampered Chef stone to bake on.

      Hi, Andrea. You have me stumped with this one. I have made them several times and never had them stay in a ball shape. One question, did you preheat your stone before you baked on it? The baking stone would be my only guess at why they didn’t turn out. I hope you will give the recipe another chance and try again.

    I can’t find the pumpkin pudding, but I did find pumpkin cake mix. How would I substitute it? Thanks these look delicious. I use your peanut butter m&m cookie recipe all the time.

    Hi, Janel. I am so glad to hear you use the peanut butter cookie recipe. It’s one of my favorites too ;-) For these cookies you could substitute a vanilla pudding mix with a teaspoon of pumpkin pie spice in place of the pumpkin pudding if you can’t find it. I hope that helps :-)

    Hello! Thank you so much for sharing this recipe! I just tried them, but made a few changes (I used white chocolate chips instead of the M&Ms and I used cinnamon instead of the pumpkin spice, hubby’s not a big pumpkin fan) and they came out SO GOOD!! You weren’t kidding when you said they’d look undone coming out of the oven. I was tempted to put em back in – but I figured I’d follow the recipe! I’m glad I followed it the way you said, they came out delish! I even topped them with cream cheese icing to mask the pumpkin spice a little more. Wonderful! Thanks again for sharing!!!

      I am so glad you liked them. Good call on not putting them back in the oven :-) I just love the texture of the cookie after it sets up. You could also substitute any flavor pudding in the future since your hubby doesn’t like pumpkin.
