By now you know that I am not the greatest at doing dinner. I’m getting better, but my brain is usually in sugar mode most of the day. Since brownies and cake are not really an acceptable meal choice, dinner plans have to be made ahead of time.
My hubby and I try to plan out a weekly dinner schedule over the weekend and then do our grocery shopping Mondays when our kids are in school.
Recently SeaPak contacted me about creating a new shrimp recipe and a meal plan. I was excited because this is exactly what I needed to get me going on creating a meal plan for the week. Having a menu plan in place makes it so much easier to get dinner on the table after school and practices.
To get started I made and tried this Spicy Parmesan Shrimp Scampi earlier this month. The creamy cheese sauce has just enough of a spicy heat to compliment the shrimp and pasta. Since we were still traveling over Valentine’s Day and didn’t have a special dinner, I couldn’t wait to make this easy pasta dinner again to start out this week.

With the menu planned out for the week, all that is left to do is grocery shopping with the hubby and meal prep each night. I have a feeling dinner time is about to get a little bit easier…as long as I stick to the menu list.
