I’m not sure what happened to my glorious sunshine and heat that we were experiencing earlier this month. The past week has been cloudy, rainy, and cold.
Ok, ok, so cold might be an understatement. I mean we lived in the midwest for almost 18 years, and I do remember what real cold weather is. But after you move south, your body really does adjust to the climate you are in. My body has decided that hot sunny days make it work best.
Although I have been told that here in west Texas, the weather can be fickle. Hot one day, cold and rainy the next. And then just hot, hot, hot in the summer. I’m cool with the hot. Bring it on! I hear this is a dry kind of hot, so I’m looking forward to it. We only had humid heat in IN…and curly hair and humidity just do not mix well.
I have to admit I am missing the strawberry fields of the midwest though. I used to take our kids berry picking every spring. There is nothing quite like a fresh warm berry right from the field. Just ask my kids. They always ate their weight in berries.
Trying to find good fresh berries in the grocery store has been a challenge lately. I’m pretty sure people are looking at me funny as I stand there in the store opening the berry boxes and flipping them over to look at the bottom of the container.
The other day I swear I looked at every single box before picking two semi-decent boxes of strawberries, so I could make more strawberry nutella twists. Is it too much to ask for nice red berries without mold and slime? I mean, berries are not cheap, so I do not want to throw half of them away when I get home! Ok, rant over!
I had a craving for a fresh strawberry cobbler the other day. I know! I can’t believe I’m not craving chocolate at the moment.
Although, for a brief second I thought about adding mini chocolate chips to my biscuit dough. I brushed that thought aside and went for the cinnamon sugar topping instead. I remembered how good these easy cinnamon sugar waffles were.
It was a good call. The cinnamon sugar topping adding a fun crunch to the biscuits. There was a perfect combination of crunchy, soft dough, juicy berries, and creamy ice cream in every bite.
This is really perfect fresh out of the oven with a big scoop of ice cream. But it also reheats well and makes a very tasty breakfast. At least that’s what my oldest son tells me.
Hey, it’s fruit and dairy, right? Sounds like a bowl of warm strawberry cobbler would be the perfect kind of breakfast for these cold, chilly days we have been having.
