Cinnamon rolls that don’t take a lot of effort and time are a plus around this house.

There isn’t one person in our home that is an early morning riser.  We all love sleeping in until the last possible moment.  So over the years I have spent my afternoons and evenings making different breakfast options like these White Chocolate Caramel Granola Bars, these Banana Nut Cinnamon Rolls,  or some of these Coffee Chocolate Chip Muffins.

I love easy breakfast items that can be made the day before and still taste great the next day.  Of course, we also eat our fair share of cereal, milk, yogurt, eggs, and oatmeal.  Every day isn’t a “start the day out with sugar” kind of day.

Challenge Butter

When I started thinking about what I wanted to make for my first butter recipe, I kept thinking about these easy cinnamon rolls.  I mean there is butter in the dough, butter in the filling, butter poured on top, and butter in the frosting.  What better recipe to start out with!

To give these rolls a little bit of extra flair, I added sprinkles to the dough.  And of course they had to have more sprinkles on the frosting.  Sprinkles make everything better!  Especially early mornings before school starts!

These rolls are easy to make the day before.  Just one bowl and some flour on the counter and you are ready to have some sprinklified rolls in your life too!

I do use my kitchen aid to mix my dough together, but you can also use a fork to bring the ingredients together to form a soft dough.  Add the sprinkles into the dough after the dough has already formed.  You do not want to break the pieces up too much.  We want to see the sprinkles in every single bite!

Make sure your counter has a good layer of flour on it.  Knead the dough a few times, but don’t go crazy with it.  Too much flour added into the dough can make it tough.  We want these rolls to be light and flakey!

Seven Layer Burritos

These Seven Layer Burritos are an easy dinner meal that your children can get in the kitchen and help you prepare.

It’s that time of year when everyone is trying to get back into a good routine with school, sports schedules, and dinner times. We are constantly on the go running between different soccer, volleyball, and dance practices. With our busy schedules, it is great to spend some quality time in the kitchen preparing easy meals that we can enjoy together.

Our kids have grown up helping us in the kitchen. They love to be involved in all the steps. Did you know that studies have shown that cooking with your children teaches them to have better eating habits later in life? Cooking can also be a fun time to catch up on the day with them too. Let them handle the little things like mashing and stirring while you do the chopping. Then start asking questions about what they learned in school and who did what.

We all enjoy Mexican food, so we chose the Spanish Style Ready Rice® for in our burritos.

Seven Layer Burritos have always been one of my favorites. Our daughter made the Spicy Guacamole for our dinner, while our son cooked the rice.

The Uncle Ben’s Ready Rice® is so easy to make. Tear one corner and pop it in the microwave for 90 seconds. My son couldn’t believe that was all he had to do for it.

Once you have all your toppings ready, give everyone a plate with a warmed tortilla and let them have fun spreading everything on.

You might want to give them some guidelines on how much is too much though. Some of their burritos ended up too big to fold at first, but they quickly figured out how to not over fill them.

Seven Layer Burritos

Prep Time: 20 minutes

Yield: 10 burritos

Seven Layer Burritos

Using Uncle Ben's Ready Rice makes these Seven Layer Burritos so much easier to put together. Have you kids help you in the kitchen with all the prep work.

Ingredients

10 - 8 inch flour tortillas
1 - 15 ounce can refried beans
1 package Uncle Ben's Spanish Style Ready Rice
1 cup shredded cheddar cheese
1 cup shredded lettuce
1 - 15 ounce can diced tomatoes and chills, drained
1/2 cup sour cream

Instructions

  1. Prepare the Uncle Ben's Ready Rice according to the package directions.
  2. Open the can of refried beans and spoon into a glass bowl. Heat in the microwave for at least 1 minute or until heated through. Heat the tortillas for 20-30 seconds too.
  3. Spread a layer of beans down the middle of the tortillas. Top with a little bit of rice, cheese, lettuce, tomatoes, sour cream, and guacamole. Roll up and serve immediately. Makes 10 burritos.

Earlier this year I had a chance to try a sample of Brownie Brittle.  Let’s just say that little bag of goodness did not last long enough in my hands.  My kids were climbing all over me trying to get the last piece.  Our family was definitely a fan from that very first bag.

This past May I attended the BlogHer Food conference in May where one of the vendors was Brownie Brittle.  I kept making my way around the vendor floor to snag more bags of the crispy brownie wafers.  My logic was that I was making sure I had enough samples to take home for each of my children.  I’m such a giver you know.

In reality, it was for my own snacking pleasure because a few of those sample bags may have disappeared on the flight home.

What exactly is Brownie Brittle?  It is exactly what it sounds like.  They are small crispy, crunchy brownie pieces that come in four amazing flavors:  Salted Caramel, Mint Chocolate Chip, Chocolate Chip, and Toffee Crunch.

Make sure you check your local grocery stores or Costco to find this product.  I do suggest buying a few extra bags because when you open the first bag and start snacking, you will find the bottom of the bag before you know it.  Not that I would know or anything :-)

Salted Caramel Brownie Brittle

One thing I love about this business is that it came from a family recipe.  Sheila G.  started her own brownie business selling a family brownie recipe to restaurants and theme parks.  She had a particular fondness for the crispy outer edges of the brownies though, and one day decided to try making an entire pan of crispy edges.  Her desire to create a fun new treat blossomed into the Brownie Brittle company today.  I think it is great when someone has a dream, and they are able to make it come true.

I am so excited to share this easy no bake treat with you today using Brownie Brittle.

Salted caramel, chocolate, crispy Brownie Brittle…do I have your attention yet?  Did I mention it is a no bake recipe?  You can be chowing down on this in about 15 minutes if you get started now.

Normally I make a large batch of muddy buddies because my kids and I can’t seem to stop eating it once we start.  But today I wanted to show you how to make this treat using just one bag of Brownie Brittle.  Although once you start eating it, I think you will be running to the store for a few more bags.

Muddy buddies, or puppy chow depending on where you live, is very easy to make.  Crush a bag of Brownie Brittle using a food processor.  Or you can use a plastic bag and a mallet or a rolling pin.  Just make sure all the Brownie Brittle chunks are in fine crumbs.

Stir melted chocolate over the cereal in a large bowl.  When everything is coated, spoon the cereal into a big Ziplock bag and pour the crushed Brownie Brittle on top.  Close the bag and shake those crumbs all over the cereal pieces.

Now add a little bit of powdered sugar while the mixture is still warm.  Shake it again and then pour onto a lined tray.  Cut the caramel candies while you wait for the muddy buddies to set up completely.  Sprinkle the candies throughout it, and then prepare to go to snack heaven.

My daughter took a bag of this snack mix to school in her lunch box.  All her friends that tried it have been asking for more!  The other day when I was working on this post, my daughter came into our office and saw the pictures for this Salted Caramel Brownie Brittle Muddy Buddies on our computer.  Her eyes lit up and she started talking about how good this snack mix was and when could we make another batch.

Like I said, stock up on a few bags when you find the Brownie Brittle in your stores.  I see a whole lot of different flavored muddy buddies in our future lunch boxes!

Salted Caramel Brownie Brittle Muddy Buddies

Prep Time: 15 minutes

Yield: 5 cups

Salted Caramel Brownie Brittle Muddy Buddies

Crushed Brownie Brittle and caramel candies make this an irresistible snack mix. Perfect for packing in lunch boxes or snacking on any time of day.

Ingredients

1 cup crushed Salted Caramel Brownie Brittle (4 ounce bag)
4 1/2 cups Chocolate Chex cereal
8 ounces chocolate CandiQuik
1/4 cup powdered sugar
15 Rolo candies, quartered

Instructions

  1. Use a food processor and crush the bag of Brownie Brittle into fine crumbs. Makes about 1 cup. Set aside.
  2. Melt the CandiQuik in the microwave according to the package directions. Pour over the cereal in a large bowl. Stir until all the cereal is coated.
  3. Spoon the chocolate covered cereal into a large ziplock bag. Pour in the crushed Brownie Brittle, close the bag, and shake the bag until all the cereal is coated in crumbs. Add the powdered sugar and shake again.
  4. Pour the cereal onto a wax paper lined tray. Let set completely. Stir in the chopped Rolos. Store in a sealed container. Makes about 5 cups of snack mix.

I don’t know about your school year, but ours is extremely busy the first month and a half.  Our two boys are playing soccer, and our daughter is playing volleyball and learning tap dance.  Talk about a crazy schedule trying to juggle all those practices and games with our work and life schedule.  I’m still trying to figure out where homework is going to fit in.

Even with the craziness of the sports schedule, we still try to sit down for dinner as a family as much as possible.

Obviously there are going to be some nights where we just grab something quick as we drop off the school bags and go right back out the door for a game.   Those days might even be easier if we hit the drive thru.  What?  There are some healthy options there too.

Pasta and cheese gets thumbs up from everyone here just about every single time we put it on the menu.   Doing all the prep work the night before definitely gets a thumbs up from me on nights when the hungry monsters want to devour everything in sight as soon as they walk in the door.

I like that I can add so many different dairy products into this cheesy dish.   Milk, yogurt, and 2 kinds of cheese packs a big protein punch.  That protein power will keep everyone full and energized as we moo-ve on to the next thing on our schedule.

Experts recommend that everyone should be consuming 3 servings of dairy per day, but did you know that most people only eat 1?  By getting more dairy into your diet, you are paving the way for a healthier lifestyle later in life.  Who doesn’t want strong bones and healthy teeth as they get older.

Prepping your vegetables and pasta the night before will help you have dinner ready faster.

I like to cut all the veggies and place them in containers or ziplock bags while my kids are getting ready for bed.  You can also cook your pasta and stir some olive oil into it after it drains to keep it from sticking together.

Another great thing about this dish is that you can customize your veggies to suit your taste.  I happen to like hiding mushrooms in mine…my kids never know until after the fact.  Although they are getting wise to my tactics.

Start by sautéing the butter and onion, then add more of the veggies and some flour.  Make sure you cook that for another 1-2 minutes to get that flour cooked down.  Whisk in the milk and cook until it thickens slightly.  I use skim milk, so it never really gets too thick.  Let it cook about 2 minutes and then add the cheese and yogurt.  It’s an moo-velous sight to see all that thick and creamy sauce.

Stir in those noodles and the cans of tomatoes and green chilies.  Now if you are in a hurry just add the extra cheese on top and cover the skillet for a few minutes to melt the cheese on top.  BUT…if you can stretch dinner time for another 20 minutes, I recommend baking it in the oven to melt the cheese.

Then set it on the table and watch everyone’s eyes light up as they see all that melty cheese goodness!

Veggie Supreme Pasta Bake

Prep Time: 20 minutes

Cook Time: 22 minutes

Yield: 8-10 servings

Veggie Supreme Pasta Bake

Use your favorite veggies and cheese to make this cheesy pasta bake for dinner. Easy prep the night before makes it a fast dinner to serve on a busy night.

Ingredients

16 ounce box pasta (I used cavatappi)
1Tablespoon olive oil
3 Tablespoon butter
1/2 cup chopped onion
1 Tablespoon minced garlic
1/2 cup chopped green peppers
1/2 cup chopped fresh mushrooms
1 - 2.25 ounce can sliced black olives, drained
1 cup chopped spinach
3 Tablespoons flour
2 cups milk
1/4 cup grated parmesan cheese
1 cup plain greek yogurt
3 cups shredded Italian blend cheese, divided
1 - 4 ounce can diced green chilies
2 - 14.5 ounce can diced tomatoes, drained
salt and pepper
1-2 teaspoons oregano

Instructions

  1. Cook the pasta to al dente following the package directions. Drain. Spoon back into hot pan and stir in olive oil. Cover and set aside.
  2. Melt the butter in a large skillet. Add the onions and sauté for 2 minutes. Add the garlic, green pepper, mushrooms, olives, spinach, and flour. Stir and cook for 1-2 minutes.
  3. Whisk in the milk and cook until it thickens slightly. Stir in the parmesan cheese, yogurt, and 2 cups cheese. Stir until melted.
  4. Stir in the tomatoes, green chilies, and cooked pasta. Season to taste with the salt and pepper.
  5. Spoon into a greased 9x13 baking dish. Top with the remaining cheese and sprinkle with oregano.
  6. Bake at 350 degrees for 20 minutes. Broil for 2 minutes to brown the cheese. Serve immediately. Serves 8-10.

Notes

*Use your favorite veggies in place of ones you may not like.

The middle of summer just screams ice cream.  We have gone through quite a few homemade versions and store bought cartons.   The ice cream monsters in our house stage mini revolts when there is no available ice cream to cool off with, or if there is ice cream in the freezer that is off limits.

Ok, so revolt might be a strong word.   They do give me “the look” though when I say the ice cream has other plans.  Yes, now ice cream has been added to the list of “must not eat unless mom gives the ok”.   They had to know that one was coming.

A few weeks ago I was approached by a rep from the Cake Boss Baking Site  about creating a fun ice cream dessert using one of their baking pans to celebrate a #SummerSundae .

Ice Cream, dessert, and Cake Boss?  That was kind of a no brainer for me.  I couldn’t wait to get in the kitchen to create something fun to share over there.

Since we like to make cheesecake a lot around here, I chose the 9 inch springform pan.  But instead of cheesecake, I used my homemade brownie recipe in the pan.

Topping it with 2 ice cream flavors, Cool Whip, and fun sprinkles turned it from an easy brownie into an awesome summer dessert.  It didn’t last long around here once the kids knew it was fair game.  In fact, I’m pretty sure I saw a few slices being eating for breakfast.

It’s summer…there are no rules in our house about what you can and can’t eat for breakfast.  I bet you wish you lived in our house :-)

Some of the things I like to look for when shopping in different kitchen stores are fun baking pans.  I have started to accumulate quite a collection of different types of pans.  There are pans for making donuts, whoopie pies, and cheesecake stored in totes in our basement.  Those pans come out every so often when I have a fun baking idea.

On the shelves in my basement are also a few different sizes of skillets.  I tend to forget those pans are down there when I make dinner.

Recently VELVEETA contacted me about trying their new Cheesy Skillet dinners for my family.  These are a delicious and easy way to put those unused pans back into play.

Apparently there are quite a few other people out there that have forgotten about their skillets too.  VELVEETA noticed that there are thousands of skillets listed for sale on online auction sites.   All of their owners have forgotten how to use these skillets for dinner.  VELVEETA purchased more than 1,000 skillets and returned them to their owners with a box of VELVEETA Cheesy Skillet.  #whatmyskilletisfor

I was very excited to watch for my new skillet and boxes of Cheesy Skillets to arrive.  That box was opened immediately, and the first one I noticed was the Nacho Supreme Skillet Dinner staring back at me.  I have a slight weakness for any and all things nacho related.  A plate of nachos can not be anywhere near me, or I will devour it all.

Seeing that dinner on top was a sign to me that I needed to make this one first for our family.

The only thing you need to add to these boxed dinners is the meat.  Now the Nacho Supreme does call for ground beef, but chicken nachos happen to be my favorite.  So I substituted a pound of chicken for the beef.    I love that these dinners are easy to make, and that you can change up the ingredients based on what you like or have on hand.

I cooked the chicken in my skillet and then added the water, noodles, and seasoning and waited for it to come to a boil.  After the noodles finished cooking, I also added one can of drained corn and one can of rinsed black beans.

Now it is time to add that Liquid Gold!

I think stirring in the packet of cheesy goodness was my favorite thing.  I mean look at the Liquid Gold covering all the noodles and meat.  This is definitely what those unused pans in my basement need.

Now to set the table and add one more nacho inspired topping.  I had bowls of chopped lettuce, diced tomatoes, and diced avocados ready for anyone who wanted to take their dinner to another level.  This Chicken Nacho Supreme Skillet got thumbs up from everyone around the table.   Our skillet will definitely be used again for more meals.

Chicken Nacho Supreme Skillet

Chicken, beans, corn, and nacho toppings turn this VELVEETA Cheesy Skillet into a delicious nacho experience.

Ingredients

1 pound chicken, cut into 1 inch pieces
1 Tablespoon olive oil
1 box VELVEETA Nacho Supreme Cheesy Skillet
2 cups water
1 can corn, diced
1 can black beans, rinsed and drained
lettuce, diced tomatoes, and diced avocados for garnish

Instructions

  1. Place oil in a skillet over medium heat. Add the chicken and cook until completely cooked through.
  2. Add the water and the bag of noodles and seasoning to the cooked meat. Bring to a boil. Reduce heat and cook until most of the water is gone, about 10 minutes. Remove from the heat.
  3. Stir in the can of beans and corn. Open the cheese packet and stir into the pasta. Drizzle the top of the skillet dinner with the salsa packet.
  4. Serve with lettuce, tomato, and avocado if desired. Makes 5 - 1 cup servings.

Hot summer days remind me how much I love cheesecake.  The cool creamy texture right out of the refrigerator is awesome after a hot steamy day in the sun.

One of my favorite things to do with cheesecake is to make easy to eat bars.  For this dessert, I sandwiched the cinnamon cheesecake in between layers of cookie dough.  But not just any cookie dough!  This cookie dough has chunks of apples and butterscotch chips.   Butterscotch always gets looked over in my cupboard, even though I love those chips.  The butterscotch and cinnamon was just the right flavor to pair with the apples.

I love having Crunch Pak apples in my refrigerator all the time.  They are the perfect on the go snack for my kids when we get busy.  And I love how easy they are to chop up and throw into my recipes.

The only thing that I do not like about cheesecake is that it does take a bit of patience before you can dig into these delicious cheesecake bars.

I get so excited when I pull these treats from the oven only to remember that they need some chill time.  Use that time to catch up on your favorite show, read a book, clean the bathrooms (ok, maybe not that one), or go for a run.  Anything to distract yourself from those amazing bars in the kitchen.

We have added a new member to our family.

Now before you start thinking we have a new baby or puppy, let me set you straight. We bought a panini press. And it has been love at first use. Honestly, I think someone has made a sandwich on it every day for the past week. My oldest even told me he was kidnapping the machine when the time comes for him to move out.  I think it is safe to say this new purchase is going to get lots of use in the next few years.

Another thing I’m thinking is thank goodness for a machine that is so easy to use that our kids can make their own lunches this summer.

And hooray for easy to use products from Mezzetta to jazz up those summer sandwiches. They were wonderful enough to send me some jars of product to get our sandwich making started. These products are also available in the condiments aisle of your local grocery store.

I decided to start with some roast beef and add some peppers and onions. As I looked at the jars on my counter, I stopped on the Savory Garlic. This spread is a blend of olive oil, parmesan cheese, and garlic. It was the perfect thing to spread on the outside of my bread before putting the sandwich in the panini press. If you do not have a panini press available, you can use a griddle or a pan on the stove to grill it to perfection.

Look at all that goodness inside the sandwich. Who can turn down a sandwich loaded with meat, melty cheese, peppers, and garlic?

I think it’s time to get my sandwich love on again for lunch and dinner today. My family shouldn’t have a problem with that…I hope. At least it’s better than cold cereal for dinner.

Cheesy Beef Panini

Prep Time: 10 minutes

Yield: 2 sandwiches

Cheesy Beef Panini

A delicious blend of roast beef, cheese, peppers, onion, and garlic in a toasted sandwich.

Ingredients

4 slices thick oat bread
6 slices deli roast beef
4 slices smoked Gouda cheese
2 teaspoons Mezzetta Savory Garlic Spread
1/4 cup Mezzetta Roasted Bell Pepper Strips & Caramelized Onions

Instructions

  1. Spread the outside of the bread slices with the Savory Garlic spread. Place a slice of bread spread side down. Top it with 3 slices roast beef, 2 slices cheese, and 1/2 the peppers and onions. Place another piece of bread on top, spread side up. Repeat with remaining ingredients.
  2. Place sandwiches on a panini press or griddle that has been preheated to medium high heat. Cook for a few minutes or until the bread is golden brown and the cheese has melted. Cut in half or quarters and serve. Makes 2 sandwiches.

All things summer are happening around our house.  That is just udder-ly ridiculous that it is already June.  Wasn’t it just snowing the other day?   We even did our big family vacation last week after the last day of school was over.  Our summer calendar was already full, so that week was the only one that worked well for us to get away.

Now we are home and adjusting to our summer schedule.   Those are two dreaded words that all school kids do not like to hear during the summer.  My husband and I want to be dairy sure that our kids are not spending all their time watching TV, and that they are eating healthy while they are home this summer.   There will be plenty of fun things that they can do for the next 2 1/2 months that do not involve screens.  Today they are already pulling out the sprinkler for some extra ordin-dairy fun on the trampoline.

My job this summer is to make sure that they are making good choices when it comes to eating.  I want to make sure they are grazing on fruits, veggies, yogurt, and milk this summer instead of the cookies and cake that is always in our kitchen thanks to the crazy baking I like to do all the time.  Did you know that most people do not eat the recommended servings of dairy each day?  Dietary experts recommend 3 servings of low fat or fat free dairy each day.  Most people need to add another serving of dairy per day to reach that quota.

Milkshakes are one of our favorite summertime treats to make.  They are so easy to customize and change up each and every time.  Our kids are always in the moo-d for a cold treat on a hot day.  Scratch that…they like these on any day of the year.  It keeps me moo-tivated to make these icy treats a little bit healthier for them.

I used frozen yogurt mixed with coffee and chocolate milk to create a fun version of our favorite coffee house frappe.  That’s a double whammy of protein and dairy in each serving.  My kids had no idea they were drinking a healthy shake.  This is one healthy treat that I will definitely be milking for all it’s worth.

Ok, ok, I am dairy sorry for all the milk puns you endured in this post.  I’m sure you have herd all those before.  Seriously, I’m moo-ving on :-)

Java Chip Milkshake

Frozen yogurt and chocolate milk mixed with coffee and chocolate chips makes this milkshake the perfect way to get another serving of dairy in your diet.

Ingredients

2 1/2 cups vanilla frozen yogurt
1/2 cup strong brewed coffee, cooled
1/4 cup chocolate milk
2 Tablespoons mini chocolate chips
Cool Whip
chocolate syrup

Instructions

  1. Combine the frozen yogurt, cooled coffee, chocolate milk, and mini chocolate chips in a blender. Pulse until combined and the chips have been completely incorporated.
  2. Pour into 2 glasses. Top with Cool Whip and chocolate syrup. Serve immediately.

 My in laws live near an outlet candy store, so any time they come visit us or we visit them, they have bags and bags of candy and nuts.  One of my absolute favorites that they buy are some dark chocolate amaretto pecans.  I seriously could eat an entire bag of them and not feel guilty at all.  So delicious!

It’s true your tastes change as you get older.  Growing up I did not like to eat nuts of any kind.  My way of eating nuts was a peanut butter and fluff sandwich.  Slowly as I got older, I started to like peanuts with M&M’s.  Gradually I started to branch out and try new nuts.  Now I actually eat a few kinds of nuts all by themselves.
