Sunday’s are one of our busiest days of the week.  My husband is the worship leader at our church, I sing on praise team, and our oldest son changes slides on the projector during morning practice.   Our day begins early in the morning because we all have to be over at the church early for practice and sound checks.   The last thing I want to think about is cooking a big meal on Sunday afternoon.  I have enough struggles getting to practice on time.  The sad thing is that I live right next door.

Mango Habanero Chicken Wraps 1-001

I was really excited when I had the opportunity to try out Tyson’s new Any’tizers Boneless Chicken Wyngz.  I can make a quick and easy meal on busy days with these Boneless Chicken Wyngz.  All you have to do is open the bag and place them onto a baking sheet.  I did line my baking sheet with foil for easy clean up later.  When I am busy, I don’t want to spend time scrubbing baked on sauces.

Tyson sent me the Mango Habanero and the Sweet Garlic Any’tizers to review.   I knew right away that I wanted to make a “build your own wrap” dinner for Sunday afternoon.  These Mango Habanero Chicken Wraps were so easy to put together.  While the chicken was baking, I chopped the onion, romaine, and mango and put those into little bowls for on our table.  After the chicken came out of the oven, I heated the tortilla shells in the microwave for about a minute.

You have to love having an easy dinner on the table in 20 minutes after a busy morning.

The kids loved being able to customize their wraps because they did not want onions hiding under their chicken.  The onion and mango pieces were the perfect compliment to the Mango Habanero Any’tizers.   Our kids put ranch on just about everything, so I had small dipping bowls for them, but we had ours plain.  The sauce on the chicken gave it just the right amount of sweetness for me.

These two flavors of Tyson Any’tizers are now available at Walmart.  I can’t wait to stock my freezer with a few bags.  I see more chicken wraps on Sunday afternoons in our future.

Mango Habanero Chicken Wraps

Cook Time: 20 minutes

Yield: 10 wraps

Mango Habanero Chicken Wraps

Tyson Any'tizers are the perfect addition to a "build your own wrap" dinner. Dinner can be on the table in 20 minutes.

Ingredients

1 package Tyson Mango Habanero Any'tizers Chicken Wyngz
1 cup shredded romaine
1/2 cup chopped red onion
1 cup diced mango
10 tortilla shells

Instructions

  1. Cook the Tyson Any'tizers according to the package directions. Chop the romaine, onion, and mango while the chicken is cooking.
  2. Place romaine, onion, and mango in a warmed tortilla shell. Add chicken chunks on top and roll up. Serve with ranch if desired. Makes at least 10 wraps.

Chocolate Reese’s Pudding Cookies – #snackmadness

This weekend  the last games in the big college basketball tournament will be happening.  Will you be watching them?  Who are you rooting for?  I have to be honest, my bracket is still blank.

I’m not as into watching sports as the boys in my house.  They can sit and watch all the games every weekend.  But what I am into, is planning a fun party for friends to come over and enjoy treats and the big game with us.

I had the opportunity this week to visit Walgreens and to buy some snacks for a last minute party.  You can check out my shopping story on Google+.  Walgreens is a convenient place to shop for snacks and party decor when you only have a few minutes to spare.

Our Walgreens was stocked with lots of Coke Zero and Reese’s products for game day.   Buying lots of Reese’s to snack on scores big points with me any day of the year.   While I was shopping, I picked up some 12 packs of Coke Zero to share with our guests.  Having drinks in cans means I can get away with not buying cups, and we can recycle those cans.

Of course I bought every kind of Reese’s product that Walgreens offered.  You don’t have to tell me twice to buy Reese’s.  They are my all time favorite candy.  I love baking different sweets like these Peanut Butter Pudding Cookies, Chocolate Reese’s Cheesecakes, and Marshmallow Reese’s blonde brownies with lots of Reese’s in each bite.

When you have a lot of people over for a big game, you want your party food to be finger foods that can be easily eaten.  Cookies are always a good party choice.   I had a box of Hershey’s chocolate pudding in my cupboard, and I thought that would make the perfect pudding cookies with a few boxes of Reese’s pieces added in.

The answer is yes, I did eat some of the cookie dough before it was all baked :-)  It was delicious and who could resist all that candy?

I wanted my game table to be festive but easy.  This corner of our living room was the perfect size for our 6 foot folding table.  I covered the table with a white plastic tablecloth that I found at Walgreens.  The party streamers were actually ones I had leftover from previous birthdays.  I love that I had the colors to match the serving bowls and trays that I bought from Walgreens.

I wanted some disposable plates on our table, so I wouldn’t be doing dishes after everyone left.  Walgreens had some different colored plates on one of their shelves.  I grabbed a few packs of the orange ones because they reminded me of basketballs.  I even used a sharpie to draw lines on a few of those orange plates making them look like basketballs that I could hang on the front of the food table.

Now it was time to get everyone together to enjoy all the treats and a game.  We have lots of friends who just love when we send them a quick message saying we want to spend time with you, and we have treats to share too.  I think the treats are what sold them this time.  All I had to do was mention Reese’s recipes and they came running.  I am thankful for great friends that we can spend a fun evening with chatting and eating snacks.

Walgreens is definitely the place to shop if you want to get together with friends for a last minute basketball game.  You can find everything you need to enjoy a night of #snackmadness .  You don’t have to tell me twice to start planning the next party.  And if that party include more Coke and Reese’s, I think it will be another win for the BruCrew Team!

Chocolate Reese’s Pudding Cookies

Prep Time: 45 minutes

Cook Time: 9 minutes

Yield: 48 cookies

Chocolate Reese’s Pudding Cookies

Chocolate cookies made with instant chocolate pudding and Reese's pieces are the way to go if you are looking for a chocolate fix.

Ingredients

1 cup butter, softened
3/4 cup brown sugar
1/4 cup sugar
1 egg
1/4 cup sour cream
1 teaspoon vanilla
1 box instant Hershey's chocolate pudding mix (3.5 oz)
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups Reese's Pieces
1/2 cup miniature chocolate chips

Instructions

  1. In a large mixing bowl, beat the butter and sugars until creamy. Add the egg, sour cream, and vanilla and beat again. Sift together the pudding mix, flour, baking soda, and salt. Slowly add to the creamed mixture beating on low until everything is combined. Stir in the Reese's and chocolate chips by hand. Refrigerate the dough for 30 minutes.
  2. Roll the dough into 1 1/2 - 2 inch balls. Place on a baking sheet. Bake at 375* for 9 minutes. Remove from oven and let rest on baking sheet for about 2 minutes. Transfer cookies to a wire rack or wax paper. Let cool. Store in a sealed container on the counter for 4-5 days. Makes about 48 cookies.

Cheddar Jack & Bacon Meatball Sliders

Now that Spring sports have started, I am on the look out for easy new products that I can use to make a fast and delicious dinner for my family.  There are some nights that we do not have time for a huge sit down dinner because someone needs to be at practice in an hour or so.

I also have some picky eaters, so finding something that everyone will eat can be tricky.  Now we have a rule in our family that you have to at least try what has been made.  They are not allowed to turn their noses up at what we have made for dinner.  Easy snack dinners are a win win for everyone.  Win for me, because I can have these made and in the crock pot in less than 40 minutes.  And a win for the kids because they love meatballs and macaroni and cheese dinners.

Last week I had the opportunity to go looking for the new Kraft Fresh Take cheese products.   I headed to Walmart to see where it would be.  You can follow my shopping story on Google+.  My first thought was that it would be in the cheese cooler in the deli, and sure enough that is where my Walmart had it displayed.  It was right in the middle of all the other Kraft shredded cheeses.

I looked at all 6 flavors and decided to try the Cheddar Jack & Bacon flavor.   My family goes gaga for anything bacon, so I knew this was going to be a great choice for Cheddar Jack & Bacon Meatball Sliders.

As soon as I got home that afternoon, I got started on the meatballs.   I like to use ground chicken to keep things a little healthier.  The Kraft Fresh Take has all the seasonings mixed right into the package.  These meatballs were a cinch to make up and get in the oven.

Kraft was thinking when they created these easy dinner products.  The cheese and breadcrumbs add such a great flavor to any meat dish with very little preparation.  The bag is sealed in the center.  When you are ready to mix the cheese and breadcrumbs together, you gently pull it apart and blend the two products together.  Your dish will end up crispy, cheesy, and delicious.

I poured the cheese and breadcrumbs into my ground chicken.  The easiest way to mix all the ingredients together is just to roll up your sleeves, remove your rings, and get messy.  You will eventually be getting your hands into the mixture to roll meatballs anyway.  I like to make 24 meatballs from 1 pound of ground chicken.  That makes a decent size meatball for mini sandwiches.

One trick that I have learned is to line your baking sheet with some foil.  That will save you from washing a pan later.  Just remember to spray the foil with some non stick baking spray.  I actually forgot this time, so my fingers were burning as I tried to pull them off gently before they cooled on the foil.

After the meatballs finished baking, I put them in a small crock pot on low with some Kraft barbecue sauce.  I stopped and bought some Hawaiian rolls to serve the meatballs on when I went to get the kids from school.

When everyone was home from school, it was easy to make a pan of macaroni and cheese and relax around the table catching up on the day’s events before someone had to leave for practice.  I love when dinner prep is so easy, and I can enjoy more time with my family.

Cheddar Jack & Bacon Meatball Sliders

Prep Time: 15 minutes

Cook Time: 20 minutes

Yield: 24 meatballs/12 mini sandwiches

Cheddar Jack & Bacon Meatball Sliders

Easy meatballs made with ground chicken and Kraft Cheddar Jack & Bacon Fresh Take cheese. Serve on Hawaiian rolls for a quick dinner.

Ingredients

1 lb. ground chicken
1 package Cheddar Jack & Bacon Kraft Fresh Take cheese (6 oz.)
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon minced garlic
1/2 cup Kraft Honey Hickory Smoke barbecue sauce
12 Hawaiian rolls

Instructions

  1. Mix the ground chicken, cheese and breadcrumbs, salt, pepper, and garlic together. Shape into 24 meatballs. Place on a foil lined baking sheet that has been sprayed with non stick spray. Bake at 400* for 20 minutes.
  2. Place meatballs in a small bowl and coat with barbecue sauce. Serve immediately or place in a crock pot on low until you are ready. Serve with Hawaiian rolls. Makes 12 mini slider sandwiches.

Fruit Salsa Yogurt Cups #healthychoices

Eating healthy is all about moderation and food choices.  These Fruit Salsa Yogurt Cups are a great way to enjoy a healthy dessert.

Having a dessert blog definitely has it’s challenges when it comes to eating healthy.  I get so many comments and emails asking how I stay healthy and fit with so many cookies and brownies in my kitchen.   The biggest thing I have to say is moderation and lots of exercise.  Moderation is eating just one brownie, even though you really want to chow down on 4 more.  I think that as long as you eat healthy throughout the day there is nothing wrong with a small treat, but that is definitely the key.  I have found that keeping track of what I eat helps me stay on track.

Life here gets busy between work, school, sports, baking, blogging, and church activities.  But I know that taking time each day for daily exercise and drinking plenty of water helps me be healthier, and it also helps me be a better mom and wife.   This winter we bought everyone updated bikes, and we are looking forward to lots of trail riding this summer.   It will be fun to share this “fun” exercise with our children.  I want them to learn healthy eating and exercise habits early in life.

Staying active is definitely a big part of being healthy, but you also need to eat healthy foods.  My metabolism has definitely slowed down as I have gotten older.  That means it is even more important to watch and record what I put into my body.  I have to keep my sweet tooth in check more often.  Recently I had the opportunity to try some of the Healthy Choice Top Chef meals from Walmart.  (You can follow my shopping HERE.)  Make sure you check out the awesome coupons for these products located on the right hand sidebar!

I was excited to add these into my afternoon lunch routine.  I love that you cook and eat from the same container.  Booyah for less dishes to wash.  The crustless chicken pot pie was so delicious.  There were plenty of vegetables along with the lots of tender chicken and dumplings.

My children definitely have developed more of a sweet tooth with all the baking that I do.  They are ready to eat everything in sight when they get home from school.  Most days we limit them to fruit or vegetables, but I do like to surprise them with “healthy” apple cake  every once in a while.

This means keeping the counter and refrigerator well stocked with the bright colored things they are allowed to eat.  Combining all the colors of the rainbow into a fun fruit salsa is also a great snack.  It can be eaten plain, with baked cinnamon chips, or on yogurt.

While I was at Walmart, I also bought some of the Healthy Choice Greek Frozen yogurts.  I was impressed with how smooth and creamy each flavor was.  Having the yogurt in small cups works well, because then I do not over fill my bowl and add extra calories into my day.  That kind of snack sure does put a smile on my face.

I wanted to make a fun and healthy dessert for my family using the dark fudge swirl yogurt cups.  The containers were the perfect size to fill a baked wonton wrapper.  The fresh fruit salsa on top was the perfect  extra “sweetness” to end out our day.

Fruit Salsa

Yield: 9 cups

Fruit Salsa

Fruit salsa can be eaten with yogurt, cinnamon chips, or oatmeal.

Ingredients

1 can pineapple tidbits (20 oz.)
1 can mandarin oranges (15 oz.)
1 container of blackberries (6 oz.)
2 cups fresh blueberries
3 kiwis, peeled and diced
2 cups diced strawberries
2 Tablespoons lime juice
2 Tablespoons honey

Instructions

  1. Cut up any of the larger fruits first. Then combine all the fruit into one large bowl. Whisk together the honey and lime juice. Stir into the fruit. Keep refrigerated. Makes about 9 cups of fruit salad.

Notes

The blackberries will stain the other fruit. I would stir that in right before serving to avoid the discoloration.

Home Run Movie Review – #HomeRunMovie

Are you interested in new movies that share the hope of a new life?  Home Run is a new faith based movie that will share just that with you.

Home Run is the story of Cory Brand  who has become a professional baseball player.  He struggles with alcohol abuse, as his father did before him.   After a series of alcohol related events, he is suspended from his team and forced to coach his brother’s Little League team.  One more requirement is to attend a recovery program through a local church, called Celebrate Recovery.  Through this program and other events in his life, he realizes the answer to life’s problems are not found in a bottle.  The hope and trust in God, and the love of family help him get his life back on track.

Recently, I was given the opportunity to review this movie with leaders from our church.  We also invited our life group to watch this movie with us as well.  Pizza, popcorn, and baseball themed paper products were a fun way to enjoy an evening with friends.

After watching the movie, we sat for a while discussing various topics from the movie.  One of the things that was shared was how strongholds can destroy your life and relationships if help isn’t given.  It is important to have a strong trust in God and to surround yourself with people who can point you in the right direction.  We all enjoyed the personal testimonies that were shared through the Celebrate Recovery program segments.

The movie was professionally done and the actors were believable and easy to watch.  There were a few slow scenes and a few scenes that didn’t answer your questions right away.  There are also scenes with drinking and driving and mentions of sex addiction and drugs, so be careful watching this movie with young children.  We did feel that as a faith based movie, a greater emphasis could have been placed on Christ and the hope that He offers.

Overall, we really enjoyed the movie and the forgiveness and redemption message that it presented.

Citrus Fish Tacos – #fishnveggies

 

Every so often I like to change up our meals around here.  So when I was asked to try out the Van De Kamp’s/Mrs. Paul’s Fish Tenders and the Bird’s Eye Vegetables, I knew right away I wanted to have some citrus fish tacos for our dinner this week.

We usually eat chicken or beef in our tacos, so I was excited to try the fish tacos.  It was actually our first time having them.  We don’t usually have fish very often for our meals.  Maybe with new recipes like this, we will start incorporating it in our dinner menu more often.

I decided on our side dish and taco toppings and then headed out to Walmart for all my ingredients.  You can see my whole shop over on my Google+ page.

Now depending on what part of the country you live in will determine if you can find Van de Kamp’s or Mrs. Paul’s fish tenders.   My local store happens to carry the Van de Kamp’s fish tenders.   I love that both companies use 100% whole fillets for their fish tenders.  These are great quality products to keep in your freezer for quick and easy dinners.

Bird’s Eye vegetables are also a high quality, healthy option.  The company flash freezes the product to protect the color, flavor, and texture. I love the packages that you can just cook in the bag.  That saves me time washing dishes later.

The first thing I did when I got the ingredients home, was to create the fruit salsa.   You want to give those flavors time to blend and mix while you prepare the rest of the meal.  I chopped up all the veggies at once, setting aside some for the rice I was making a little bit later.  Give the salsa ingredients a little stir and put the bowl in the refrigerator until later.

The next thing I make up is the cole slaw sauce.  I like to throw all the ingredients into my food processor.  In two minutes, you have a fresh sauce with great flavor.  Toss in the bagged cole slaw and into the refrigerator it goes.

Now the fish goes into the oven, and I can concentrate on making some rice.  By choosing the 10 minute rice, I can have the rice put together and finished while the fish is cooking.

All that is left to do is to set the table and to plate the tacos.    The fruit salsa was the perfect addition to our citrus fish tacos.  We loved how all the citrus flavors went so well with the fish and the veggie rice.

 It is nice to have a dinner recipe on hand that can be made in a short amount of time.   I love a meal that is quick to prepare and gives you restaurant flavor.

Citrus Fish Tacos

Prep Time: 30 minutes

Cook Time: 25 minutes

Yield: 8 servings

Citrus Fish Tacos

Citrus fish tacos with a side of Rice and Corn.

Ingredients

Pineapple Lime Salsa!
1 (20 oz.) can of pineapple tidbits
1 finely diced jalapeno (about 2 Tbsp.)
2 Tbsp. finely diced red onion
2 Tbsp. finely diced red pepper
1 Tbsp. lime juice
Cilantro Lime Cole Slaw!
1/2 cup mayonnaise
1/2 cup plain yogurt
1 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon salt
1 cup loose cilantro leaves
2 Tablespoon lime juice
2 Tablespoon white vinegar
5 cups coleslaw mix
Rice and Corn!
2 cups uncooked instant brown rice
2 Tablespoons finely diced red onion
2 Tablespoons finely diced red pepper
1 finely diced jalapeno pepper (2 Tbsp.)
1 bag (12 oz.) corn
salt and pepper
1 Tablespoon lime juice
Fish Tacos!
1 box of fish tenders (18.1 oz.)
flour tortillas

Instructions

  1. Combine all the salsa ingredients in a bowl and stir together. Place in the refrigerator for later.
  2. Place the mayonnaise, yogurt, chili powder, cumin, salt, cilantro, lime, and vinegar in a food processor. Puree until smooth. Toss with the coleslaw mix. Place in the refrigerator for later.
  3. Place fish on a baking sheet and cook according to box directions.
  4. Boil water and cook rice according to package directions. When the rice is done cooking, stir in the onion, red pepper, jalapeno pepper, and corn. Season to taste with the salt and pepper and lime juice. Keep warm.
  5. Serve the fish on tortillas with coleslaw and salsa on top and the rice on the side.

Growing up my mom had this little china tea set from my grandmother that we were only allowed to use when we were not feeling well. It was the only time those cups came out.  For some reason drinking tea from those little cups always made me feel so much better.

My mom has passed that china tea set on to me now.  I love to create special moments for my kids using the tea set from my childhood.  Every once in a while I will get the tea set out and bake them some treats for a surprise tea party.  By only doing it every so often, it keeps it special.  They love to have the little cups of tea with lots of cream and sugar.

So when I was asked to try Bigelow Tea, immediately I knew I wanted to surprise my kids with another tea party.  I think our last one was this past  summer, so I knew they would love to come home from school and enjoy treats and and tea.   [Read more...]

I know you are used to seeing lots of sugar treats here, but today we are going to take a look at one of my favorite lunch meals.  My husband makes this Broccoli and Cheese Egg Casserole for us to eat throughout the week.

He usually eats this for breakfast and I will usually have it for lunch.    The egg casserole is not something new.  I love it because you can change it up with different vegetables each time.  Now because I’m the one making all the sugar, and my husband is the one making the dinners, I had to ask him for the ingredients.  My husband kind of laughed at me and said he bakes by feeling.  He just throws in what he wants and doesn’t measure.  So the other day I had him make this with me,  and I measured the ingredients for this Broccoli and Cheese Egg Casserole.  He said I was cramping his style by making him measure :-)

 For this particular egg casserole we used red onion, mushrooms, broccoli, a can of tomatoes, and a bag of sharp Sargento cheese.   We like to use a food processor to chop the vegetables.  It will cut down on your prep time by quite a bit.  We have the Ninja and I love it.  It is perfect for finely dicing your ingredients in a very short amount of time.   Whisk your eggs, stir in the vegetables, and pour in a baking dish.  It doesn’t get much easier than that.  One bowl to clean and no mixer.  You need easy recipes like this every once in a while.

This Broccoli and Cheese Egg Casserole is so delicious.  The best thing about this casserole is that it reheats well.  I usually reheat a square in the microwave for lunch.  It is a nice meal to make up and have in your refrigerator for the week.

Eating a healthy lunch means I can have that brownie or cookie in the afternoon.  Oh wait!  That isn’t how healthy eating is supposed to work!

Broccoli and Cheese Egg Casserole

Prep Time: 15 minutes

Cook Time: 30 minutes

Yield: 12 servings

Broccoli and Cheese Egg Casserole

This Broccoli and Cheese Egg Casserole is a great low fat breakfast or dinner option. It is full of flavor and protein.

Ingredients

1/2 cup red onion, finely chopped
1 cup mushrooms, finely diced
1 1/2 cups broccoli, finely chopped
1 can diced tomatoes, drained (14 1/2 oz.)
12 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups sharp shredded cheese (Sargento)

Instructions

  1. Crack the eggs into a large bowl. Whisk. Stir in all the chopped vegetables, tomatoes, salt, pepper, and cheese. Pour into a greased 9x13 dish. Bake at 350* for 45 minutes.
  2. Cool on a wire rack. Refrigerate. Serves 12.

Lean Cuisine Salad Additions #BYOL #CBias

I am all about easy and convenient when it comes to making dinners in my kitchen.   Dinner recipes with a lot of steps or prep work having me running the other way. I think I will stick to my baking and leave the dinner menu to my husband.  But that doesn’t always work during the day when he is at work.

There is a secret weapon in my freezer now.  Have you seen the new Lean Cuisine Salad Additions?

We have been eating quite a few salads around here and trying to lose some of that holiday bulge that we have gained.    There is only one thing bad about salad…they require chopping up lots and lots of veggies.  If I am faced with the choice of chopping veggies for a salad or just grabbing a muffin or scone, the muffin or scone will win every time.

Now I know what you are thinking?  Those boxed dinners and prepackaged items are always higher priced.

I headed out to Walmart to see how the boxed salad compared to the fresh ingredients.  You can check out my #BYOL shopping trip here on Google+.  I like my salads to have variety.  The only way to do that fresh is to buy quite a few produce items.  If I were to make a salad with even some of these items, I would have to spend about $20 in produce. Now granted I can get multiple salads from these ingredients.  But I know myself, and I know that some of those vegetables will go into the crisper drawer where I will promptly forget about them until about 3 weeks later.   Three weeks in the crisper doesn’t do good things to fresh vegetables.  So that beautiful produce there will end up in my trash because I won’t use it in time.

The Lean Cuisine Salad Additions were only $2.50 at my local Walmart.  This makes this salad very affordable.  They can stay in my freezer until I decide to have one for lunch.  This means no wasting or spoiling will happen with these.

So, I’m sure you want to know just how easy this salad is to create.   I can honestly tell you that I had the salad made, and I was sitting down eating it in under 5 minutes.   The only thing you need to know how to do is operate your microwave.  The instructions are very clear on how to create your salad.   You start by dropping your dressing packet in a cup of room temperature water.   Then the veggie packet goes in the microwave for about 2 and 1/2 minutes.  Then it sits and steams for another minute or so.

All that is left to do is open the bag and place the steamed veggies and chicken on top of some lettuce.  Absolutely no chopping is required to have a gourmet salad in under 5 minutes.  A salad this easy is going to be a staple for my lunches from now on.

Are you still wondering something?   How did it taste?  I have to be honest I wasn’t sure what to expect.  A salad from the freezer?  I can honestly say that I was very happy with how good the salad was.  It was delicious and looked just like it came from a restaurant.  The extra little bag of crunchy tortilla strips was the perfect topping and gave the salad the crunch and texture that I like.  The salad was very appealing to my eyes and more importantly it was fresh and tasted great.

One thing that I could eat every single cold winter night is a bowl of hot soup.  I’m not overly picky on what kind of soup.  It just has to be one that will warm you up from the inside out.

I have a new appreciation for full-time working moms.  My hat is off to those of you who run your household, work, exercise, and find time to pack your children’s lunches.  In the past 6 months I have transitioned from a full time stay-at-home mom to a part-time working mom.  I am still at home, but the transition has been harder than I imagined.  My daily cleaning schedule that I used to stick to has gone out the window.  Flexibility has become my new best friend, as I allow it to become part of my life.  I am still working on developing a good routine that includes work and housework.

My laundry room now has piles of clean and dirty laundry waiting for me to attend to, and dust bunnies have taken up residence under my couches.  There are days I work right through lunch to meet deadlines, or because there is nothing good to eat in my refrigerator.  Have I mentioned that dinner is usually the last thing on my mind?  Thank goodness for a husband that loves to prepare real food, or we would be eating cookies, brownies, and cake three times a day.
