I am trying to get my kids to realize early in life that breakfast really is important.  For the life of me, I cannot get my 2 youngest children to eat breakfast before going to school.  They both claim they aren’t hungry right away.  But then they are starving at recess and eat half their lunch then.  I make banana muffins and Biscoff donuts for them.  I buy french toast sticks and toaster strudels, trying to entice them to at least eat something.

My kids have officially decided they do not like cold cereal for breakfast.  There are boxes in our cupboards that have been there since last month…or longer.  I should probably clean out that cupboard because I’m sure they are stale by now.  We started keeping our cereal in some pourable plastic containers from Walmart to help keep the cereal fresher longer.  But even that can’t keep it fresh for over a month of no one eating it.

I think I have discovered the cereal eating problem…they have a new love.  It is called “Mom Made More Muffins” love.   Making a yummy breakfast the day before has become one of my favorite things to do.  I actually think I make more breakfast things than regular sweets.  Yes, I know that might seem surprising to you since most of what I post are sugary goods.

I need to start sharing more muffins and breads with you because I honestly think those are the things people might actually make from my site.  Everyone eats (or should be anyway) breakfast.

These Heath Latte Muffins are made with coffee, Heath coffee creamer, and Heath toffee bits for a fun muffin twist.  My kids gobbled them down after school and again for breakfast the next morning.  If you are opposed to your children having coffee, go ahead and substitute milk in place of the coffee.   The amount of coffee and caffeine in each muffin is not enough for me to keep these goodies from my kids.  Although we have been known to let our kids have a tiny cup of coffee with creamer, so obviously I have no problem caffeinating my own kiddos.  I know some people feel strongly about this, so I wanted to share an alternative to the recipe.

Cook Time: 20 minutes

Yield: 15 muffins

Heath Latte Muffins

These Heath Latte muffins get their kick from coffee, creamer, and Heath baking bits. They are perfect for getting you moving in the morning.

Ingredients

1/2 cup butter, softened
1/3 cup brown sugar
1/3 cup sugar
1 egg
1 teaspoon vanilla
2/3 cup Heath coffee creamer
2/3 cup strong brewed coffee, cooled
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups flour
3/4 cup Heath toffee bits (chocolate covered bits)

Instructions

  1. In a large mixing bowl, beat the butter, sugars, and vanilla until creamy. Add the egg and cream again. Sift together the baking powder, baking soda, salt, and flour. Stir together the coffee and creamer. Alternately add the flour and coffee mixture to the creamed butter until everything is incorporated. Do not over mix.
  2. Divide the batter into 15 lined muffin cups. Bake at 400* for 20 minutes. Let cool in the pan for 2 minutes until removing them to a wire rack to cool completely. Store in a sealed container on the counter for 4-5 days. Makes 15 muffins.

Notes

If you have a problem using the coffee in the recipe, feel free to substitute milk.

Triple Chocolate Donuts

Mornings seem to go so much better when you start out with a great breakfast.  These Triple Chocolate Donuts will wake you up in no time.

My husband just laughs every time I made donuts and say they are for breakfast.  He says donuts are wrong because they are not an acceptable breakfast since it is basically cake.

Well, if that’s wrong, I never want to be right :-)  I love my donut pans and have had so much fun creating fun breakfasts for our kids.  Let’s be honest…most times those donuts don’t make it to breakfast anyway.  So, we should just call them snack.

 I realized the other day that I hadn’t made donuts in a while.  Since Spring had forgotten about us and snow was coming down like crazy, I decided it was a donut kind of a day.  These Triple Chocolate Donuts are a combination of two recipes I made a few years ago – Chocolate Mint Donuts and Chocolate Zucchini Donuts.  Both of those are excellent donuts to go with too BTW.

 My youngest has all of  a sudden become the pickiest eater.  He doesn’t like anything that he used to.  In fact, all he wants to eat is Ramen…and we all know how healthy that is.  Yuck!  But if that means he is actually eating something, then I will let him.   Most mornings he refuses to eat breakfast because he isn’t hungry.  Then he eats half his sandwich at recess because he is starving.  I’m not sure what to do with him.  One week he likes something, and then the next week he won’t touch it.

I am claiming a small victory because he actually ate one of these for breakfast.   They have Chobani greek yogurt in them, so it has a sight health benefit, right?  Maybe I just need to offer chocolate coated health food more often ;-)

 These donuts are so easy to mix up and bake.  Once you make your batter, spoon it into a big ziplock bag and cut one corner off.  It makes it so much easier to fill those donut cavities with a bag instead of a spoon.  You also want to make sure they are filled at least 3/4 full.  They will bake up and be this nice puffy cake donut.

One thing to note:  these chocolate donuts are even better the next day.  Keep them stored in a sealed container and they will absorb the moisture from each other making them more dense.  When they come out of the oven on the first day, they will be light like a muffin.  So definitely give them a day to “ripen”.  That is if you can resist the urge to eat them.  I like to make them up the night before, so they are ready to be eaten first thing in the morning.

So, do you feel like donuts now?   I know I am feeling the urge to go make another kind today.

Triple Chocolate Donuts

Chocolate donuts with chocolate chips and a chocolate glaze will wake you up in the morning.

Ingredients

1/2 cup butter, softened
1/3 cup brown sugar
1/3 cup sugar
2 teaspoons vanilla extract
1 egg
2/3 cup plain Greek yogurt (I use Chobani)
2/3 cup strong brewed coffee, cooled
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup cocoa powder
1/4 teaspoon nutmeg
2 cups flour
1/2 cup miniature chocolate chips
8 oz. melting chocolate (CandiQuik)
sprinkles

Instructions

  1. In a large bowl, sift together the baking powder, baking soda, salt, cocoa, nutmeg, and flour. Set aside. In a mixing bowl, beat the butter and sugars until creamy. Add the vanilla, egg, and yogurt and cream again.
  2. Alternately add the flour mixture and coffee until everything is incorporated. Stir in the chocolate chips by hand. Spoon the batter into a large ziplock bag. Cut the tip off one corner and squeeze into the donut pan cavities. Fill at least 3/4 full. Bake at 375* for 9-10 minutes. Let cool in the pan for 2-3 minutes before removing to a wire rack. Cool completely.
  3. Melt the chocolate according to the package directions. Dip the tops of the donuts and top with sprinkles. Let set. Store in a sealed container on the counter for 3-4 days. Makes 15 donuts.

Coconut Chocolate Chunk Muffin Tops

I am always looking for easy breakfast recipes that my kids will eat.  These Coconut Chocolate Chunk Muffin Tops were a hit for breakfast here.

From about January until now I start to dream of warm days filled with sunshine.  Yesterday was the first day of Spring, but it was such a tease.  It was bright and sunny and a balmy 30*  Come on Spring…where are the warmer days?

That’s ok.  I can bake another batch of these coconut muffins, turn my heat up to 80, and pretend that I am sitting on the beach.  Every time I eat anything coconut, it totally makes me think of our trip to St. Maarten and eating coconut nutella crepes.  Another fun recipe that was inspired from that trip were these Coconut Nutella Cookies.  Hhhmmm…now I want cookies :-)

The more I make coconut baked goods, the more my kids are starting to like it.  I was a little worried they wouldn’t go for a coconut muffin that was topped with more coconut, so I did make some of the muffin tops without the extra coconut on top.  But they surprised me and ate all of them.

These muffin tops are actually a cross between a muffin and a scone.  The baking mix in the batter gives it that scone taste, but the pudding mix makes it light and soft.   These are more of a standard muffin that is not overly sweet.   If you want it slightly sweeter, you could add some chocolate chunks for a burst of chocolate in each bite.  I’m a fan of chocolate at breakfast, so chocolate went into my batter.

The box of coconut cream Jell-o pudding mix does add some extra sugar, but over all these are a little bit healthier than regular muffins.  Using applesauce in place of any oil or butter also keeps it more on the healthy side.  And when you are dreaming of being on the beach, we all want more  healthy baked goods, right?

Coconut Chocolate Chunk Muffin Tops

Easy baking mix muffins made with coconut pudding and coconut milk will take you to the beach while you are eating breakfast.

Ingredients

2 cups baking mix (like Bisquik)
1 box instant coconut cream pudding (3.4 oz.)
3/4 cup shredded coconut, divided
2 eggs
1 cup coconut milk
1/4 cup applesauce
3/4 cup chocolate chunks

Instructions

  1. In a large mixing bowl, sift together the baking mix, pudding, and 1/2 cup coconut. Create a hole in the center and set aside. In another bowl, whisk together the eggs, milk, and applesauce. Pour into the center of the baking mix. Stir together gently by hand, until just moistened. Do not over mix. Stir in the chocolate chunks.
  2. Place a large spoonful into a greased muffin top pan. Sprinkle with the extra coconut on top. Bake at 375* for 11-12 minutes. Cool for 2-3 minutes in the pan before removing them to a wire rack. Serve warm. Store in a sealed container for 4-5 days. Makes 16 muffin tops.

Notes

You can also bake these in a regular muffin tin if you don't have a muffin top pan. Fill muffin liners 3/4 full and bake 18-20 minutes. Makes 12 muffins this way.

Banana Bread Muffins

We go through quite a few bananas every week.  I eat the green ones and save the brown ones for muffins or donuts.

My kids have gotten really picky about what they will eat for breakfast.  They won’t eat cereal, unless it is a bedtime snack.  And toast and bagels are apparently not good anymore. Now I don’t like when they try to go to school on an empty stomach, so I have to keep bags of frozen pancakes and fresh banana muffins on hand at all times.  Those two breakfast items are the only things they will eat without a fuss.

Last week I had two bunches of bananas that went from green to spotty overnight.  My Facebook readers had so many great ideas on what I could make with them.  While I was waiting for their answers, I decided to tweak one of my banana muffin recipes with a box of instant pudding.  You will not believe how delicious these muffins turned out.  They were incredibly soft, and dare I say…moist!  That is not a word I like to use, but really no other word describes these Banana Bread Muffins so accurately.  My kids each ate two muffins right away when they got home from school.  My youngest, who is the pickiest eater all of a sudden, said they were the best ever!!!

I like to think these muffins are healthy because they have banana and yogurt in them.  We will just pretend the sugar, butter, and chocolate chips are healthy too :-) Haha!  I know better, but it does make me feel just a little better knowing there are a few healthy items in my kids’ breakfast.  Heaven forbid that I should make a banana muffin without the chocolate chips…my kids let me know when I try to leave out the chocolate.  Sadly they have the same sweet tooth that I have.

It’s a good thing my kids were in love with these muffins because I don’t think I could be trusted alone in the house with them.  I know because there were two left, and then they just sort of disappeared.  I plead the 5th…I have no idea what happened!  I went for a coffee refill and the next thing I knew…empty muffin wrappers.

Thank goodness I always have bananas in the house…these muffins are definitely being made again. Usually I want my bananas to stay green for a while so I can eat them, but not this time.  I want black bananas, so we can have these delicious banana bread muffins again.  Maybe the bananas should go in a brown paper bag to speed up the ripening process.

Instant pudding makes these Banana Bread Muffins the softest, most delicious muffins ever.

Ingredients

1/2 cup butter
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 cup banana, mashed
1/2 cup plain Greek yogurt
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 box instant vanilla pudding (3.4 oz.)
1/2 cup miniature chocolate chips

Instructions

  1. In a mixing bowl, cream the butter and sugars until fluffy. Add the eggs, vanilla, banana, and yogurt and beat again.
  2. Sift together the dry ingredients and slowly add to the butter mixture until it is just mixed. Stir in the chocolate chips by hand.
  3. Fill muffin liners 3/4 full and bake at 350* for 24-25 minutes. Let cool slightly before eating. Store in a sealed container for 4-5 days. Makes 20 muffins.

Growing up my mom had this little china tea set from my grandmother that we were only allowed to use when we were not feeling well. It was the only time those cups came out.  For some reason drinking tea from those little cups always made me feel so much better.

My mom has passed that china tea set on to me now.  I love to create special moments for my kids using the tea set from my childhood.  Every once in a while I will get the tea set out and bake them some treats for a surprise tea party.  By only doing it every so often, it keeps it special.  They love to have the little cups of tea with lots of cream and sugar.

Chocolate Cherry Muffin Tops

 So I have decided that it is time to start posting some Valentine’s recipes here.  You’re down with that right???  I promise not to go completely overboard, but this is a low fat chocolate cherry muffin top.   Who wouldn’t want this kind of recipe early?

You could wait until February to make these muffins, but I seriously don’t recommend it.  They were delicious!!!  The yogurt in these muffins give them a soft, tender inside.  I really like using yogurt instead of sour cream for muffins.  It helps cut down on the fat content, which is something that I have started to watch a little more.  My kids aren’t big cereal eaters, but they will eat muffins if I keep them on hand.  By making them with yogurt I feel better about them eating chocolate for breakfast.  Of course, we ate them at all times of the day.  They are a perfect afternoon snack when you are craving just a little bit of chocolate.  (that makes me laugh because when I crave chocolate, I don’t want to eat a little)  These chocolate cherry muffins are also a great before bed snack…or a midnight snack!  Whenever you decide to eat them, they will satisfy your chocolate crave!!!

Low Fat Chocolate Cherry Muffin Tops

 The great thing about this muffin is that it is easy to make it in a muffin top pan or a whoopie pie pan, or if you don’t have either, just bake it in a regular muffin tin.  I have included both baking times in the recipe for you.    Let’s talk about the cherries for a minute.  If you like fresh cherries, by all means, use the fresh cherries in your batter.  I just happen to love maraschino cherries.  There is usually a jar in my fridge at all times for sundaes or drinks.  And I keep a backup jar in my baking cupboard…does that surprise you that I have more than one jar?  Something about the taste of these jarred cherries makes me happy.  They also keep their bright red color when you bake with them.  I love pretty food!!! Pretty food just looks so much more appetizing!

Prep Time: 15 minutes

Cook Time: 12 minutes

Yield: 24 muffin tops

Chocolate Cherry Muffin Tops

Chocolate muffins made with yogurt and filled with chocolate chips and cherries

Ingredients

1/2 cup butter
1/3 cup brown sugar
1/3 cup sugar
2 teaspoons cherry juice
1 egg
2/3 cup plain yogurt (I use Chobani)
2/3 cup coconut milk
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cocoa powder
2 cups flour
1 teaspoon cinnamon
3/4 cup miniature chocolate chips
1 cup chopped maraschino cherries

Instructions

  1. In a mixing bowl cream the butter and sugars until creamy. Add the cherry juice, egg, and yogurt to the butter and beat again. Sift together the baking powder, baking soda, salt, cocoa powder, cinnamon, and flour and add alternately with the coconut milk to the butter mixture and beat gently. Stir in the chocolate chips and cherries by hand.
  2. Spoon a large tablespoon of batter into a greased muffin top pan (I used a whoopie pie pan) Bake at 400* for 12 minutes. Let cool 2 minutes in the pan, then remove to a wire rack to cool. Store in a sealed container for up to 4 days. Makes 24 muffin tops.

Notes

You can use a regular muffin tin if you don't have a muffin top pan. Bake the muffins for 18 minutes. Makes about 15 muffins.

One of the traditions we always did when our kids were little was to leave milk and cookies for Santa on Christmas Eve.  And every year my husband tried to convince the kids that “Santa” would rather have White Castle burgers and Grape Soda.  Our kids never believed him though, and so cookies and milk were always left by the tree.  As the kids got older, they just realized that “Santa” is really just mom and dad.

Although one year we got them really good.  It was the year they were 2, 4, and 6.  The oldest was trying to convince the younger two that Santa wasn’t real.  We were ok with that.  It wasn’t something we have every really tried to convince our kids of.  It was just a fun tradition.   [Read more...]

Eggnog Scones

Eggnog Scones

Eggnog is one of those holiday drinks that you either love or hate.  I personally love the stuff!   Now I can’t chug an entire gallon, but a nice sized cup once a day is a nice way to bring in the holidays.  Only my oldest agrees with me on this one.  It was pure torture for him the other week.  You see, I bought some eggnog and told him not to touch it until I was finished baking.  Then I promptly forgot about the eggnog for oh, let’s say about 5 days or so.   I say forgot very lightly, because you see my son would come home from school every day and ask if he could have some.  No, not yet, was the answer for those long 5 days.   I kept thinking maybe we needed some more eggnog muffins or maybe some eggnog cheeesecake brownies or even better eggnog latte cupcakes!    The only problem with those…I can’t bake the same thing twice.  At least not for myself that is.  So until inspiration hit, the cap was staying put on the eggnog.

And then one day I just decided that we needed some eggnog scones for breakfast the next day.  I usually bake on a whim every day.  My cupboards are packed with fun baking ingredients just waiting for the day when I get a lightbulb moment and decide to use that particular item.  Any one else bake like this?  I wish I could say I have a plan each day…but no, my kitchen is always very random.  I never know for sure what is going to happen each day.

Anyway, my son was a very happy camper when he got home and I handed him the eggnog container and told him the rest was his.   [Read more...]
