Today is the last Monday of the month and that means it is Secret Recipe Club day. I have met so many great bloggers through this program and have enjoyed my past year of “stalking” new blogs. I was excited to receive Casey’s blog My Beautiful Disasters for my last SRC post. This girl is truly amazing!!! I wish that I had been as dedicated to working out in high school. I think it is so cool that she runs 5K’s with her dad too. And her blog has so many fun recipes on it…did I mention she is still in high school? I am way impressed that she keeps up with her homework all while posting all this delicious food.
My kids love to see all the pictures I have of me when I was little and baking.
I have a love/hate relationship with bananas.
I love to eat them when they are green.
I hate that they ripen so quickly on my counter.
Good thing I use a lot in smoothies and baked goods
because once they turn yellow
I won’t touch them with a ten foot pole.
Plain that is…
I don’t mind them mixed up with other things.
Just popping in with a quick recipe for you this morning…
I was “challenged” by a blog reader to come up with a
holiday muffin recipe for her to make this Christmas morning.
Ok, Brianna, here are
Cherry Mocha Chip Muffins!
(i sure hope you like cherries, chocolate and coffee:-)
Cherry Mocha Chip Muffins
1 c. flour + 2 tbsp. flour
1/2 c. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 c. milk
1 tbsp. espresso powder (or 2 tsp. instant coffee)
1/4 c. oil
1 tbsp. sour cream
3/4 – 1 c. cherry pie filling
1/2 c. choc chips
Preheat oven to 350*. Line muffin pan with liners…just to make it easier. Mix together dry ingredients. Add wet ingredients and combine until lumpy. Do not overmix. Stir in choc chips and pie filling. Fill liner 3/4 full. Bake 22-25 minutes. Muffins should be golden brown and spring back when touched.
