 Today I am slightly dragging a little.  I have discovered that boys are much louder than girls.  And by boys, I really mean grown men.   Last night my hubby had game night at our house.  Seriously I think 5 grown men huddled around a board game are much louder than any group of women for sure.  Loud voices and laughing do not make going to sleep very easy.

Usually they set up the game in the basement, but last night it was upstairs in the dining room.  Of course it was the room without carpet, so it just echoed through out the entire house.  I did stay up for a bit doing some computer work in the office.  All I heard was laughing and talking about which army was going to destroy the rest.   I finally waved the white flag and went to bed even though they were still going strong on their game at midnight.  Thank goodness the closed door blocked some of the sound. I have finally come to the realization that I don’t mind running.
Again.
Last fall I really started running to get ready for a Tough Mudder.
The more running I did, the more I didn’t mind it.
This past weekend my husband went mountain biking with a friend.
Today he took me back there, and we ran the whole trail.
All 3 1/2 miles off road. Booyah!!!
There is something fun about running through the woods
early in the morning and listening to the wildlife scurry
as you pound past.
And it is more fun when you send your husband in front of you
to clear all the spider webs away first :-)

I’m pretty sure that brownie is the reason I have decided to like running :-)
My sweet tooth has been getting the best of me lately…
so with vacation coming up in less than 3 months.
I needed a plan.
I have decided on lots of cardio, some weight lifting, and eating right.
The eating right is what I struggle with the most.
Doggone sweet tooth gets me every time.
But we are remodeling our kitchen this week,
so that should keep me from baking for at least a week, right?
And if I don’t bake it, I can’t eat it.
Sounds like a plan.
So bye bye brownies, I will see you in while.
(I can’t stay away forever you know)

Loaded Blonde Brownies

Prep Time: 20 minutes

Cook Time: 30 minutes

Yield: 24 blonde brownies

Loaded Blonde Brownies

These blonde brownies are loaded with toppings and candy. They are amazing with a scoop of ice cream.

Ingredients

2 cups brown sugar
1/2 cup butter, softened
2 eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon salt
2 teaspoons baking powder
1 cup peanut butter cups, chopped
1/2 cup chocolate chips
1/2 cup peanuts, chopped
1/4 cup caramel ice cream topping
1/4 cup hot fudge ice cream topping
vanilla ice cream and more toppings, if desired

Instructions

  1. Cream the butter and sugar until creamy and light. Beat in eggs and vanilla. Slowly add the dry ingredients while mixing on low. Stir in the chocolate chips, peanuts, and peanut butter cups by hand.
  2. Spread the batter in a greased 9X13 pan. Drizzle with the caramel and hot fudge topping. Gently swirl into the batter with a knife. Bake at 350 degrees for 30 minutes. Set on a wire rack until cooled completely. (Do not cut until cooled all the way) Cut into 24 squares. Serve with ice cream and toppings if desired.

I know what you are thinking.
Do we really need another blonde brownie recipe?
 
The answer to that is a very loud YES!!!
But I knew you would need more than a picture
to convince you, so…
I came prepared with some excellent reasons
on why you need to bake them. (like today)
 
Whatchamacallit Blonde Brownies
1. They are filled with two kinds of caramel.
2. Their crunch comes from rice krispies and peanuts.
3. A brownie topped with rich chocolate is a no brainer.
4. Brownies copying candy bars…always a good idea.
5. It is a eewwy gooey blonde brownie. Nuff said!
 
 
I did come up with one reason
NOT to make them…
 
1. They won’t last the night once you taste them.
 
Now you might think,
“that is a good enough reason NOT to bake them for me.”
 
But trust me…you want these blondies in your life ASAP.
ANd I do mean WANT them for sure!
It is possible that your thighs will hate you in the morning,
but it will be oh, so worth it when you take that first bite :-)
 
Slightly under baked, full of crunchy krispies and
loaded with gooey caramel…totally drool worthy!
 
Yup! I have you convinced to bake today, don’t I?

Whatchamacallit Blonde Brownies

Yield: 24 blonde brownies

Whatchamacallit Blonde Brownies

Caramel, peanuts, and rice krispies give these blonde brownies a fun candy bar taste.

Ingredients

2 cups brown sugar
1/2 cup butter, softened
2 eggs
1 teaspoon vanilla extract
1/4 cup caramel ice cream topping
1 teaspoon salt
2 teaspoons baking powder
2 cups flour
3/4 cup caramel bits
3/4 cup chopped peanuts
1 1/2 cups rice krispies cereal
1 cup chocolate chips
1/4 cup heavy whipping cream

Instructions

  1. Cream the butter and sugar until creamy. Add the eggs, vanilla, caramel topping and salt and beat on low until fluffy.
  2. Sift the baking powder and flour and slowly add to the butter mixture. Stir in the caramel bits, peanuts and rice krispies by hand. Spread in a greased 9×13 pan and bake at 350 degrees for 28 minutes. Cool on a wire rack.
  3. Bring the heavy whipping cream to a boil in a small saucepan. Remove from the heat and pour in the chips. Stir until melted and creamy. Let cool slightly. Spread on top of the cooled blondies and let set. Cut into 24 bars.

Blast from the Past!

Slightly under baked Congo Bars are a great recipe to make the next time you have company over.
Congo Bars, chocolate chip blonde brownies

All through high school, I made these gooey bars of deliciousness
for every youth group event that needed food.
It was must my sure fire recipe that never failed me
and was always asked for.
Then I went to college, got married, had kids
and forgot about these treats…
until a few months ago when
I was going through some old recipes.Now you may think they are just a blonde brownie
what is the big deal?
Congo Bar chips
I can’t explain it…
they just have a slightly different taste.
But boy are they good!!!
I just had to whip up a batch to savor
the old memories:-)
Congo Bars, chocolate chip blonde brownies
Now I like mine just slightly underbaked…
not gooey, but not cake like either.
And I think they taste better after sitting covered over night.
But that is just me:-)
Congo Bars

Prep Time: 15 minutes

Cook Time: 30 minutes

Yield: 16 bars

Congo Bars

Chocolate chip blonde brownies

Ingredients

2 3/4 cups flour
2 1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup butter, room temp
2 cups brown sugar
3 eggs
1 teaspoon vanilla extract
11.5 ounce package semi sweet chocolate chips

Instructions

  1. Preheat oven to 350* Sift flour, baking powder and salt in a large bowl. Set aside. Combine butter and sugar using a mixer until blended.
  2. Add eggs, one at a time to sugar mixture. Add vanilla and mix. Add flour and mix until combined. Stir in chips by hand. Spread in greased 13x9 pan and bake for about 30 min. Let cool before cutting. Makes 16 bars.
