The other day I wanted chocolate.  I had to have something right away!

There is always some sort of candy in my baking cupboard, but I wanted something more than just a chocolate bar.  I kept thinking about these candy corn gooey cake bars and how good they were.  As I dug through the cupboard, I pulled out a bag of York peppermint patties.  What kind of yummy dessert could I come up with???

Red Hot Oreo Fudge…and a HOP!

But first let’s talk about red hots.
I don’t know why, but when I think of red hots
it reminds me of Valentines.
Can I tell you a secret?
I don’t really like red hots (unless it is in this jello)…
but I discovered that if you melt red hots into vanilla frosting
it turns into a yummy, slightly cinnamony goodness
that is hard to resist!
Believe me I know…because I didn’t resist it very well:-)
It is super easy to make because it only takes 2 ingredients.
I love no fail fudge.
(mostly because I can’t get the real stuff to set up)

Melt the chips…melt the frosting…chill.
Yummy fudge in less than 30 minutes.
Now that’s my kind of fudge!!!
This is technically 4 ingredient fudge
because I added cookies and candies,
but still super easy to make…
and to eat:-)
My biggest advice about this fudge…
use a food processor to crush the red hots if you have one.
I put mine in plastic baggies and
tried to smash the crap out of it with a wooden spoon.
Did you know red hots are super hard?
It took a lot of effort to crush them.
But once I tasted the fudge it was well worth the muscle
I had to put into it.
See how pretty it looks?
Believe me…
it tasted as good as it looks too:-)
Tasted because mine is all gone…that makes me kind of sad.

Red Hot Oreo Fudge

Prep Time: 20 minutes

Yield: about 50 squares of fudge

Red Hot Oreo Fudge

Two layers of chocolate and vanilla fudge with Oreo chunks and red hot candies mixed in.

Ingredients

For the Oreo Fudge
1 can chocolate frosting
1 bag chocolate chips
10 oreos, crunched
For the Red Hot Fudge
1 can vanilla frosting
1 bag white chocolate chips
1/2 c. red hots, crushed

Instructions

  1. Line an 8x8 pan with wax paper and spray lightly with non stick cooking spray.
  2. In a saucepan over low heat, melt the chocolate chips. Stir until melted. Stir in the chocolate frosting and continue stirring until melted and creamy. Stir in the cookie crumbles. Pour into the lined pan. Refrigerate for 10 minutes or until set.
  3. In a saucepan over low heat, melt the white chocolate chips. Stir until melted. Stir in the vanilla frosting and continue stirring until melted and creamy. Stir in the crushed red hots. Stir a few minutes while the red hots melt and turn your fudge a pretty pink. Pour on top of the chocolate oreo fudge and let set on the counter for 10 minutes. Top with sprinkles and place in the fridge to set up completely.
  4. Let the fudge come to room temperature before cutting into squares.

Mini Triple Chocolate Cheesecakes

Cheesecake is one of our absolute favorites around here.
I was going to wait until the new year to post this recipe,
but seriously…have you looked at these???

They might be small in size,
but they are mighty in taste.
Or was that mighty tasty?
Either way, I couldn’t wait to share them with you.
They are made with three layers of chocolate…
making them kind of irresistible!!!
Ok, totally irresistible!
I might have consumed more than a person on a diet should have…
but hey, it is still the holidays.
My real diet will start next week. (fingers crossed)

Mini sized cheesecakes are just the right size
for any party that you might be attending.
You could totally serve these up at a New Year’s Eve bash…
and then be home in bed by 11.
Everyone will be so enamored by your cheesecakes,
they won’t even notice you leaving early.
Yup, I’m an old fart who really doesn’t care
about the ball dropping anymore.
I value chocolate induced sleep more.
I have you hooked now, don’t I?
You just can’t resist these mini sized chocolate bombs.
Go ahead and eat a couple of these…
I certainly won’t judge you.

Triple Chocolate Cheesecakes

Prep Time: 20 minutes

Cook Time: 20 minutes

Yield: 20 cheesecakes

Triple Chocolate Cheesecakes

Mini chocolate cheesecakes with a chocolate mousse and chocolate chips...for the serious chocolate lover.

Ingredients

For the Cheesecake
2 (8 oz. each) packages cream cheese, softened
1/2 c. sugar
2 eggs
2 Tbsp. sour cream
1 tsp. vanilla
3/4 c. chocolate chips, melted
oreo cookies
For the Mousse
1 (8 oz.) package cream cheese, softened
1 (8 oz.) tub Cool Whip, thawed
1/2 c. chocolate chips, melted
mini chocolate chips, for top

Instructions

    For the Cheesecake
  1. Preheat oven to 350* Line cupcake pan with liners and drop an oreo into the bottom of each. Beat the cream cheese and sugar until creamy.
  2. Add the eggs, sour cream, vanilla and beat until fluffy. Melt the chocolate chips in a microwave safe bowl for about a minute, stirring often. Slowly beat the chocolate into the cheesecake mixture. Fill each liner 2/3 full. Bake 20 minutes.
  3. Cool in pan for about 15 minutes, then remove to wire rack to cool completely. Top with a large spoonful of chocolate cheesecake mousse and sprinkle with mini chocolate chips. Refrigerate.
  4. For the Mousse
  5. Beat cream cheese until creamy. Slowly beat in melted chocolate chips until incorporated. Fold in cool whip carefully.

Oreo Peppermint Cookies

I really hate to do this to you…

Chocolate Peppermint Cookies

but these cookies are going to rock your world.


I realize you probably already have your cookies baked

or at least have your list of ones you are going to bake.

And I realize you need another cookie recipe
like you need a hole in your head.

But let me persuade you to add these
chocolate peppermint goodies
to that Christmas list.

Santa would want them on his plate of cookies.

Seriously they have oreo and peppermint patty pieces
all baked inside a dark chocolate dough.
What’s not to like???

Shoot, forget Santa…you need these in YOUR life.

Oreo Peppermint Cookies

Prep Time: 10 minutes

Cook Time: 8 minutes

Yield: about 24 cookies

Oreo Peppermint Cookies

Chocolate cookies made with Oreo chunks and peppermint candies.

Ingredients

1/2 c. butter, softened
1/2 c. brown sugar
1/4 c. sugar
1/2 tsp. baking powder
1 c. flour
1/4 c. dark cocoa powder
1 egg
2 c. oreo cookie chunks
1 c. peppermint patty pieces(the chocolate candies, not the actual patties)

Instructions

  1. Preheat oven to 350* In a large bowl, beat butter until creamy. Beat in both sugars. Add the egg and beat again.
  2. Stir in the baking powder, cocoa powder, and flour. Add the oreo chunks and patty pieces and stir by hand to distribute. Do this gently so you don't break up the chunks of oreos more.
  3. Drop by rounded teaspoons onto ungreased cookie sheets. Bake for 8 minutes. Cool on wire racks. Store in an airtight container.
