Today I am slightly dragging a little.  I have discovered that boys are much louder than girls.  And by boys, I really mean grown men.   Last night my hubby had game night at our house.  Seriously I think 5 grown men huddled around a board game are much louder than any group of women for sure.  Loud voices and laughing do not make going to sleep very easy.

Usually they set up the game in the basement, but last night it was upstairs in the dining room.  Of course it was the room without carpet, so it just echoed through out the entire house.  I did stay up for a bit doing some computer work in the office.  All I heard was laughing and talking about which army was going to destroy the rest.   I finally waved the white flag and went to bed even though they were still going strong on their game at midnight.  Thank goodness the closed door blocked some of the sound. Nutella M&M Bars - these easy bars are soft and full of Nutella and candy

Some days I want cookies, but I don’t want all the work that comes along with it.  Ok, ok, I realize that making cookies is not really that hard to do.  That’s just the lazy side of me coming out here and there.

These cookie sticks were a result of my laziness one day.  We had family visiting us, and I wanted to make cookies but didn’t want to spend time away from them in the kitchen.   [Read more...]

Strawberry M&M Granola Bars

Homemade granola bars are a quick and easy after school snack.  These Strawberry M&M Granola Bars were just the thing for a day full of sports practice.

Strawberry M&M Granola Bars, white chocolate M&M's, Stawberry Quik

I had so many random thought going through my head this morning as I edited these pictures bright and early…

1.  I love that these granola bars are one of my kids favorite treats.  Even their friends ask for more granola bars.

2.  Why can’t I just make the same flavor twice?  Apparently I have flavor issues…

3.  I really should have ironed the fabric before setting up my photo shoot.  That crease down the middle is driving me bonkers.

Strawberry M&M Granola Bars, white chocolate M&M's, Strawberry Quik

4.  I like candy and chocolate.  Enter a healthy breakfast/snack food and what do I do to it?  Add M&M’s and drizzle it with chocolate, of course.

5.  Where’s the milk or coffee in this picture?  I must have been in a hurry to take these pictures and not realized that I never added something to the cup.

Strawberry M&M Granola Bars, white chocolate M&M's, Strawberry Quik
6.  There were so many green and yellow M&M’s in the bag that I bought.  I really wish there had been more pink and purple ones…for some reason I liked eating those colors better.

7.  I hope no one thinks these Strawberry M&M Granola Bars look gross.  Although I wouldn’t be surprised by emails telling me how much they look like raw meat.  It’s pink because of the powdered milk people!!!!

Strawberry M&M Granola Bars, white chocolate M&M's, Strawberry Quik

8.  I really wish there were more granola bars in my kitchen today.  I guess I know what I am baking later this afternoon :-) But which flavor?

What flavor granola bar should I make next???

Strawberry M&M Granola Bars

Homemade granola bars are the perfect after school treat. These get their flavor from using powdered strawberry milk. The M&M's and chocolate are just a fun added bonus to snack time.

3/4 cup butter, softened
3/4 brown sugar
2 eggs
2 teaspoons vanilla extract
1 1/2 cups flour
2 1/2 cups quick oats
1/2 teaspoon salt
3/4 cup Strawberry Quik powder
3/4 cup white chocolate M&M's
1/2 cup miniature marshmallow bits
1/4 cup white chocolate chips
1/2 teaspoon shortening

  1. In a mixing bowl, cream the butter and sugar. Add the eggs and vanilla and beat again. Sift together the flour, oats, salt, and Strawberry Quik. Slowly add to the creamed mixture. Stir in the M&M's and marshmallow bits by hand.
  2. Spread the dough into a greased 9x13 pan. Bake at 350* for 20 minutes. Let cool completely before cutting.
  3. Place white chocolate chips and shortening in a microwave safe bowl. Heat for 20 seconds and stir. Repeat until chips are melted and smooth. Spoon into a plastic lunch baggie and cut one tip off. Drizzle over the bars in a quick motion. Let set. Store in a sealed container for up to a week. Makes 16 granola bars.

Regular or M&M's can be substituted if you can't find the white chocolate ones.

The other day I was shopping at Walmart, and I came across this season’s newest M&M flavor.  They created a white chocolate carrot cake M&M.  Now you either are an A person who decided immediately that it sounds nasty, or you are a B person who is intrigued and want to give it a try.  I am usually a B person with most new flavors, unless they are sour.  Sour candy gives me the heebie geebies!  Just can’t do it!!!  Anyway, I instagrammed a picture asking opinions on this new flavor, and sure enough, the results were about half and half on whether you guys would try these too.  Of course being a B person, I brought them home with me.   [Read more...]

M&M Nutella Popcorn

This Nutella Popcorn is the perfect movie night snack.  You won’t be able to resist eating this sweet and salty treat.

Last week my husband asked me to make a sweet popcorn munch for one of his church meetings.  He knows I love making popcorn munches.

I’m sure you have noticed how obsessed with fun popcorn I have become.  Have you seen this Reese’s Popcorn,  this Coffee Toffee Popcorn, and this S’mores Popcorn.  Yeah, I love creating (and eating) fun new popcorn.

I decided to cover this popcorn with a healthy coating of white chocolate and Nutella and some salt.  I couldn’t stop eating handfuls of this while it was in our kitchen.  Something kept drawing me back to the bowl for more and more.  And for research purposes, I just kept munching.  This Nutella Popcorn is magical I tell you!

I love a good sweet and salty treat, and this popcorn has both covered.  The salt helps balance out the super sweet coating and M&M candies.   I love how the candy gave it a fun and bright pop of color.  This would be the perfect snack for watching the Oscars this weekend.  You might want to make a double batch if you have anyone else watching with you :-)   I know we will be munching the night away.

This popcorn would also make a great St. Patrick’s day treat.

Yes, I know Valentine’s just ended, but I was over the pink and red, so of course I thought of the next holiday.  The best thing with this popcorn is that you can tint that extra drizzle of chocolate any color for any holiday.  The M&M’s can be changed out for the different holidays too.  I just happen to love those plain mini M&M’s…and it’s what I had in the cupboard that day.

If you are giving this away for St. Patty’s Day, place it in clear plastic bags or jars and tie with a ribbon or some green twine.  Thank you Pick Your Plum for keeping me supplied with fun twine colors.

Game nights and marathon movies are the perfect excuse for making this big batch of Nutella Popcorn.  Really it is a good snack any day or time of the week.

M&M Peanut Butter Pudding Cookies

Peanut Butter Pudding cookies can make a fun Valentine treat when filled with red and pink M&M candies and chocolate chips.  They are also good any time of year by switching out the M&M candy colors.

M&M Peanut Butter Pudding Cookies - soft peanut butter cookies full of chocolate chips and M&M candies

These cookies will be gone before you know it.

I made these M&M Peanut Butter Pudding Cookies a few weeks ago.  I thought they would last the entire week for the kids to pack in their school lunches.  I should have known better!   We did the same thing when I made these Peanut Butter Pudding Cookies and these Caramel Corn Pretzel Cookies.  The kids kept trying to eat these for breakfast.  It is full of peanut butter so I guess it is great protein.

For these particular peanut butter pudding cookies, I decided to combine both of those old recipes into one delicious cookie.  If you can keep your family from devouring them right away, they would make a great Valentine treat. They are so easy to make, so grab your mixer and a baking sheet and let’s get baking.

M&M Peanut Butter Pudding Cookies - soft peanut butter cookies full of chocolate chips and M&M candies

You will start by creaming your butter and sugars until light and fluffy.  I use my Kitchen Aid for every recipe…I love having my hands free to measure (and instagram).  Then start adding the ingredients little by little.  This recipe really is a one bowl kind of recipe.  Do you like it when you only have one bowl to wash?  Yeah, most days I do too!

After your dough is mixed up, you will need to chill the dough.  Now quite honestly, you could bake the cookies right away, but they will not be quite as thick and puffy.  Give the dough at least 30 minutes of chilling time and then start rolling the M&M Peanut Butter Pudding cookie dough into 1 1/2 inch or 2 inch balls.  The dough will be slightly sticky, but it should roll easily.  If not, refrigerate it longer.   Keep your dough in the refrigerator while each batch is baking.

M&M Peanut Butter Pudding Cookies - soft peanut butter cookies full of chocolate chips and M&M candies

I like to bake my cookies on a Silpat.  It will keep your cookies from spreading out even more.   Look at that freshly baked peanut butter pudding cookie.  Yes, I know that it looks underdone, but DO NOT bake any longer than 9-10 minutes.  I promise you they continue to bake and set up after you pull them out of the oven.    I always let my cookies rest about 2 minutes on the tray before moving them to some parchment paper on the counter.  For the cookies that are really fat and tall in the center, I gently pressed the centers down with the back of the spatula or a spoon. Not too hard…just enough to flatten it out  just slightly.

M&M Peanut Butter Pudding Cookies - soft peanut butter cookies full of chocolate chips and M&M candies

Store your peanut butter pudding cookies in a tightly sealed container once they are cool.  I had one of these 2 days after I made them, and they were just as good as the day I made them.  Obviously the kids thought so too. By the end of the  3rd day, all our M&M Peanut Butter Pudding cookies had disappeared!  I would call that a recipe success.

I guess I need to find two more of my favorite cookies and try to combine them into another great cookie recipe.

One of the traditions we always did when our kids were little was to leave milk and cookies for Santa on Christmas Eve.  And every year my husband tried to convince the kids that “Santa” would rather have White Castle burgers and Grape Soda.  Our kids never believed him though, and so cookies and milk were always left by the tree.  As the kids got older, they just realized that “Santa” is really just mom and dad.

Although one year we got them really good.  It was the year they were 2, 4, and 6.  The oldest was trying to convince the younger two that Santa wasn’t real.  We were ok with that.  It wasn’t something we have every really tried to convince our kids of.  It was just a fun tradition.   [Read more...]

Oreo Coconut Gooey Cake Bars - Oreo gooey cake bars with a delicious coconut topping
The gooey butter cake has been around for quite a while,
but can you believe that I have never tried one.
As in, never eaten one or made one.
That all changed earlier this week.
I baked one before the kitchen was demolished and then…
it happened.
One just jumped right into my mouth while I was taking pictures.
And the unthinkable…a second just might have joined the first.
I like to call it research instead of cheating on my diet.
The extra mile I had to run was totally worth it that day :-)
Can you blame me?
Look how scrumptious those bars look.
After all they had Oreos and coconut all baked into them.
I just couldn’t resist two of my favorite flavors all in one yummy bar.

Oreo Coconut Gooey Cake Bars - Oreo gooey cake bars with a delicious coconut topping
First I added Oreo cookie chunks to the cake dough. Yum!!!

Oreo gooey cake bars - crust
Then it got even better with a topping of coconut and condensed milk.
Is it bad that I wanted to eat it by the spoonfuls???

Oreo Gooey Cake Bars - coconut
And then my fav m&m in easter colors got sprinkled on top!
Don’t ask where the leftover ones are…
I have no idea :-)

Oreo Gooey Cake Bars - m&ms
These bars had to leave my house right away!
I’m pretty sure I would have cheated on the diet again…
and again…
and probably again!!!
And I don’t think my legs would appreciate all the running
they would have to do to work it all off.

I double dog dare you to make these this weekend!
