Banana Bread Muffins

The addition of a pudding mix makes these Banana Bread Muffins one of the best breakfast choices you could make this week.

We go through quite a few bananas every week.  I eat the green ones and save the brown ones for muffins or donuts.

My kids have gotten really picky about what they will eat for breakfast.  They won’t eat cereal, unless it is a bedtime snack.  And toast and bagels are apparently not good anymore. Now I don’t like when they try to go to school on an empty stomach, so I have to keep bags of frozen pancakes and fresh banana muffins on hand at all times.  Those two breakfast items are the only things they will eat without a fuss.

Last week I had two bunches of bananas that went from green to spotty overnight.  My Facebook readers had so many great ideas on what I could make with them.  While I was waiting for their answers, I decided to tweak one of my banana muffin recipes with a box of instant pudding.  You will not believe how delicious these muffins turned out.  They were incredibly soft, and dare I say…moist!  That is not a word I like to use, but really no other word describes these Banana Bread Muffins so accurately.  My kids each ate two muffins right away when they got home from school.  My youngest, who is the pickiest eater all of a sudden, said they were the best ever!!!

I like to think these muffins are healthy because they have banana and yogurt in them.  We will just pretend the sugar, butter, and chocolate chips are healthy too :-) Haha!  I know better, but it does make me feel just a little better knowing there are a few healthy items in my kids’ breakfast.  Heaven forbid that I should make a banana muffin without the chocolate chips…my kids let me know when I try to leave out the chocolate.  Sadly they have the same sweet tooth that I have.

It’s a good thing my kids were in love with these muffins because I don’t think I could be trusted alone in the house with them.  I know because there were two left, and then they just sort of disappeared.  I plead the 5th…I have no idea what happened!  I went for a coffee refill and the next thing I knew…empty muffin wrappers.

Thank goodness I always have bananas in the house…these muffins are definitely being made again. Usually I want my bananas to stay green for a while so I can eat them, but not this time.  I want black bananas, so we can have these delicious banana bread muffins again.  Maybe the bananas should go in a brown paper bag to speed up the ripening process.

Banana Bread Muffins

Prep Time: 20 minutes

Cook Time: 6 minutes

Yield: 20 muffins

Banana Bread Muffins

Instant pudding makes these Banana Bread Muffins the softest, most delicious muffins ever.

Ingredients

1/2 cup butter
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 cup banana, mashed
1/2 cup plain Greek yogurt
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 box instant vanilla pudding (3.4 oz.)
1/2 cup miniature chocolate chips

Instructions

  1. In a mixing bowl, cream the butter and sugars until fluffy. Add the eggs, vanilla, banana, and yogurt and beat again.
  2. Sift together the dry ingredients and slowly add to the butter mixture until it is just mixed. Stir in the chocolate chips by hand.
  3. Fill muffin liners 3/4 full and bake at 350* for 24-25 minutes. Let cool slightly before eating. Store in a sealed container for 4-5 days. Makes 20 muffins.

Stuffins for a Progressive Dinner Hop

Chocolate Chip Oatmeal Muffins

 Today is the last Monday of the month and that means it is Secret Recipe Club day.  I have met so many great bloggers through this program and have enjoyed my past year of “stalking” new blogs.  I was excited to receive Casey’s blog My Beautiful Disasters for my last SRC post.  This girl is truly amazing!!!  I wish that I had been as dedicated to working out in high school.  I think it is so cool that she runs 5K’s with her dad too.  And her blog has so many fun recipes on it…did I mention she is still in high school?  I am way impressed that she keeps up with her homework all while posting all this delicious food.

Pumpkin Nutella Muffins and a Welcome Home Brands Giveaway

There are certain days that I just want to forget…

…last week I had a few of those.
It seemed like everything that I baked just didn’t go right.
One cookie recipe I tried twice, and both times it flopped.
I’m really bummed because it sounds good, but I haven’t gotten the consistency right yet.

Then on Wednesday morning I was driving the kids to school,
and apparently I was in my own little world.
I looked ahead, saw that the light was green and no one was coming either direction.
Then I was distracted by the red flashing lights at the new gas station.
I even pointed it out to the kids and said something
about someone must have been speeding and got pulled over bright and early.

All of a sudden my son asked me why I wasn’t stopping.
The green light that I had seen, turned yellow, and then red,
all while I was gawking at the flashing lights.

At that point it was slam on the brakes and slide through the intersection…
or just keep on going and blow through the red light.
No one was coming, so I opted for the second choice.
The first thing my son said was, “I’m going to tell Dad.”
He couldn’t believe I ran a red light.
Not the thing I want him to see when he is just a few years away from a license himself!!!

Carrot Cheesecake Muffins – SRC

Today is the Secret Recipe Club reveal day for Group D.
I was assigned  Karen’s blog Lavender and Lovage.
Although we come from completely different backgrounds and cultures,
I felt better connected to her when I read her about me page and learned she has been
interested in food since she was a little girl.

Pumpkin Raisinets Muffin Tops

I think it is safe to say that I like to bake…
One of the things that I enjoy baking the most are different breakfast items.
Lots of muffins, donuts, and scones get cranked out pretty regularly here.
My kids love to have this kind of breakfast instead of eating dry cereal,
and I am happy to make them these yummy baked goods.
Have you seen the 2 ingredient muffins?

The ones with a cake mix and a can of pumpkin???

I have to say how much I love these muffins…so fast and easy to whip up.
The last time I made them they were just a little to heavy for m,
so this time I added a little water and some spices.
And then drizzled 2 kinds of chocolate on top…because I happen to like chocolate on everything.Oh, and I baked them in a whoopie pie pan
and I added some dark chocolate Raisinets…it was one of my better ideas:-)

Pumpkin Raisinets Muffin Tops

Cook Time: 17 minutes

Ingredients
  • 1 box white cake mix
  • 1 (15 oz.) can pumpkin
  • 1/2 c. water
  • 2 tsp. pumpkin pie spice
  • 1 1/4 c. dark chocolate Raisinets
  • 1/4 c. chocolate chips
  • 1/4 c. white chocolate chips
  • 1 tsp. shortening, divided
Instructions
In a mixing bowl, stir together the cake mix, water, spice and pumpkin until blended. Stir in the Raisinets. Spoon a tablespoon of batter into a muffin top pan and bake at 350* for 17 minutes. Let cool 2-3 minutes in the pan before removing to a wire rack to cool completely.
Place the chocolate chips in a microwave safe bowl with 1/2 tsp. shortening. Heat for 20 seconds and stir. Repeat until melted and smooth. Spoon into a plastic bag and cut a corner off. Drizzle over the muffin tops. Repeat with the white chips and remaining shortening. Store in a loose fitting container.
Note: A whoopie pie pan can be used in place of a muffin top pan. You can also spoon it out on a baking sheet like cookies, if you don’t have either pan.

Banana S’mores Muffins with Kernel Season’s

Need a jump start in the morning?  These Banana S’mores Muffins will get you going.

I have an unhealthy obsession with bananas…

I can’t go to the grocery store without buying them.

I can’t bake without them.
I can’t eat them once they turn yellow.
Yes, you read that right.

It’s a real dilemma because then I have to buy more bananas to eat.
Meanwhile the yellow bananas continue to ripen on the counter.
My husband will eat some of them, but he can’t keep up with all the ones I buy.
The kids don’t eat them that often either.
I can only freeze so many.
Currently there are 2 (soon to be 3) very large ziplock bags full of frozen banana chunks.

And what did I do today…bought more bananas because they were on sale:-)

It’s a very good thing that I bake a lot.
And that I like to bake using a lot of bananas.

A few weeks ago, I was contacted by Kernel Season’s to try a few of their popcorn seasonings.
My husband was super excited about this because he eats popcorn like all the time.
Can I confess something to you?
I’m not a huge popcorn fan….unless it is covered in white chocolate and has candy in it,
then I go to town on the stuff!

We started looking over their website, and I was in awe at all the flavors they offer.
Definitely “no more naked popcorn” with the fun ones they carry.
It was hard to decide which ones to try first.
Since we were given the option to try 4, I let my husband pick 2 for his popcorn,
and then I picked 2 to create some fun desserts with.

Of course when they came, we tried the pizza on popcorn and the nacho cheese on rice.
They are absolutely delicious.  You get so much flavor even using just a small amount.
I can’t wait to find some of the other flavors in the stores now.
Salt and vinegar, sour cream and onion, and cajun are just a few I’ll be keeping an eye out for.
Now to use the sweet ones for something out of this world…sure popcorn is much better with these.
But I am a dessert blogger…what COULD I do with these???
Insert the yellowing/blackening bananas that I have on my cupboards…
yup, banana muffins it is!
But not just any banana muffin. No, that would be too easy, and so not me.

Let’s go with banana muffins…
with graham crackers, marshmallows, and chocolate chips
AND then…let’s dip the tops in butter and cover it
with some awesome Chocolate Marshmallow seasoning
just like a donut muffin.

Now we’re talking:-)

Banana S’mores Muffins

Prep Time: 20 minutes

Cook Time: 18 minutes

Yield: 16 muffins

Banana S’mores Muffins

Banana S'mores muffins with a marshmallow sugar topping makes a great breakfast choice

Ingredients

For the Muffins
2/3 c. brown sugar
2 Tbsp. butter, melted
1 egg
1 tsp. vanilla
2/3 c. banana, smashed
1/2 c. sour cream
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 c. graham cracker crumbs
1 Tbsp. Kernel Season’s Chocolate Marshmallow Seasoning
2/3 c. milk
1/2 c. miniature chocolate chips
1/2 c. miniature marshmallow bits
For the Topping
1/2 c. butter, melted
6 Tbsp. Kernel Season’s Chocolate Marshmallow Seasoning

Instructions

  1. Cream the butter, sour cream, and sugar. Add the egg, banana, and vanilla and cream again. Sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg and graham cracker crumbs. Add the flour mixture alternately with the milk until it is all mixed in. Do not over mix. Stir in the chocolate chips and marshmallow bits by hand.
  2. Fill the muffin liners at least 3/4 full. You can fill them almost to the top. Bake at 400* for 18 minutes. Let cool for about 5 minutes. Dip the tops of the muffins in the melted butter and sprinkle with the chocolate marshmallow seasoning. Store loosely covered. Makes about 16 muffins.

Oatmeal Peach Muffins – SRC

Now it is time for another fun round of Secret Recipe Club.
This month I was assigned to the blog
I had a good time going through her older posts
and trying to decide which yummy one to recreate.
It was tough, let me tell you!
I wanted to try just about everything!
Her chocolate chip cookie bars almost had me sold…
until I came across these Peach Oat muffins.
My kids love a good muffin in the morning, and
I love a good muffin I can make the day before.
In fact, I actually thought these muffins tasted even better
the second day around.
The funny thing about choosing this muffin recipe…
earlier this week I had gone grocery shopping
and picked up some peaches…
for guess what?
You got it. Muffins!
No doubt about it…
this muffin recipe had to be tried!!!
I modified the recipe slightly, based on what I had in my cupboards that day.
Then because I like streusel topped muffins…
I kinda had to add that too:-)
And the best part of these muffins…
applesauce is used in place of any oil or butter.
Oatmeal and fruit…these are pretty much health food.
Just close your eyes when when you put on the buttery streusel:-)

 
Oatmeal Peach Muffins

Ingredients

For the Muffin

  • 1 1/2 c. flour
  • 3/4 c. quick oats
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. applesauce
  • 2 eggs
  • 1/2 c. sugar
  • 3/4 c. brown sugar
  • 1 1/4 c. ripe peaches, diced

For the Steusel Topping

  • 1/4 c. sugar
  • 1/4 c. brown sugar
  • 1/4 c. quick oats
  • 2 Tbsp. flour
  • 1/2 tsp. cinnamon
  • 2 Tbsp. butter, melted
Instructions
In a large mixing bowl, combine the flour, oats, cinnamon, nutmeg, baking soda and salt. Mix and set aside. In another mixing bowl, stir together the applesauce, eggs, and sugars. Slowly stir in the dry mixture. Fold in the diced peaches.
Fill muffin liners at least 3/4 full. Top with a spoonful of streusel topping. Bake at 400* for 25 minutes. Cool completely. Store in an airtight container.

For the Streusel Topping

Combine all ingredients and stir until mixed thoroughly.

Chocolate Avocado Muffins

This past week my husband challenged me to try
eating JUST fruits and veggies.
Hhhhmmm, I think he knows that I have been letting
my sweet tooth rule my diet lately.
So last Tuesday I began.
The first day was not really a problem.
But by the end of the second day,
all I wanted to do was raid all the Easter baskets
and pillage every single reeses egg/cup.
Instead I went to bed and the urge went away!
Then it was strange…the rest of the week I didn’t
really have a big desire to go all crazy on chocolate.
(I think keeping my coffee/creamer was what kept me going)
 
I also found that if I wasn’t in my kitchen
being the crazy baking lady,
there were no goodies to munch on.
 
But then Friday night came and I just wanted to bake…
something…anything!!!
We had some avocados sitting on the counter,
so I decided to work them into a “healthy” chocolate muffin.
Google is such a great thing right?
It totally bursts my bubble every time I think I have a great idea…
turns out lots of people thought avocados were a
great addition to chocolate muffins:-)
But how about adding some other stuff like
applesauce, yogurt, and coconut oil…
that makes anything healthy right?
Time to get our green on…muffin style.
Isn’t this batter freaky looking???
It is a really good thing that chocolate is getting added to it
because there was no way my kids would have touched this otherwise.
My first batch had some baking issues…
they were undone when I first pulled them out.
So they went back into the oven for more time
in an attempt to save them.
They still didn’t seem to be setting up right,
but I let them cool and put them in a container for the morning.
I really thought I would have to redo the ingredients, BUT…
The next day…oh my goodness!!!!!
These were so amazing!!!
Think fudge breakfast brownie…on steroids!
I made another batch right away to fix the baking issues
because I knew that I had to share these with you…
and yup those were much better!
You just HAVE to give these muffins a shot!
Don’t let the thought of avocados
in your breakfast scare you away!
Seriously all you taste is chocolate!
Who else wants to eat their fruits and veggies this way with me???
Chocolate Avocado Muffins

Ingredients (15 muffins)
  • 1/2 c. coconut oil
  • 1/2 c. sugar
  • 1/4 c. applesauce
  • 1 tsp. vanilla
  • 1 ripe avocado, smashed
  • 1/3 c. yogurt
  • 2/3 c. milk (I used almond milk)
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. cocoa powder
  • 2 c. flour
  • 1 c. mini chocolate chips
Instructions
In a mixing bowl, cream the coconut oil and sugar until combined. Add the applesauce, vanilla, yogurt and smashed avocado and beat until creamy. Whisk together all the dry ingredients in another bowl. Add the dry ingredients alternately with the milk to the mixture, slowly beating it in. Stir in the chocolate chips by hand. Divide the batter into 15 muffin liners. Bake at 400* for 26 minutes. Let cool for about 2 minutes in the pan and then remove to a wire rack to cool completely. Store in a tightly sealed container overnight. They are much better when they have had time to set up.

Tropical Smoothie Muffins

Tropical Smoothie Muffins
I confess that eating clean is boring. 100% boring.
Not that it doesn’t taste good…
but I like my sugar and I like it a lot!
Salad, green smoothies, and eggs are all I have been having.
I really want muffins, cookies, and brownies.
But those sweet things make my jeans shrink…
or my butt grow depending on how you look at it.
I’m of the opinion my washer and dryer are out to get me
and that is why my pants are smaller now:-)
I confess that I have been guzzling Diet Dr. Pepper
trying to keep my body from going into sugar withdrawals completely.
So far it is working, but all the diet websites tell you
that the aspertame or whatever makes it diet is even worse for you.
I am willing to take my chances since the yummy taste of it
is keeping me from raiding the many boxes of baking stuff
stored in my living room. (yes, living room…my kitchen is barren right now)

I confess that with all the warm glorious weather
comes the urge to…clean every nook and cranny.
My shoe shelves were looking kind of “messy”,
so I started organizing there first.
And that led to me putting them into like piles.
Which led me to realize just how addicted to shoes I am.
Even I didn’t know I had accumulated that many! Whoops:-)
Since some are old and some are just not worn any more,
I gave 15 pairs to Goodwill.
And put the other ?? back in the closet. Baby steps.
Let’s not even talk about my purse or jewelry addiction.
I confess that shopping at Target is not good for my wallet.
There is always something too cute to look at.
But since I am trying to hold out on clothes for me…
you know…the clean eating thing trying to shrink myself.
So my daughter got some cute stuff!
1 cute dress and shrug & 1 cute pair of skinny capris and top
and 1 super cute food prop item for me. (love their new glassware)
Then there are the cute orange flip flops that I really need to go back for.
Bonus: she wears the same size as me…so really flips for me:-)

I confess that I finally bought The Hunger Games.
The library still had a hold on it, so I figured $6 at Walmart
was my best option.
Now I will probably not sleep for the next night or so
while I get totally addicted to it.
Hello, grouchy mama, when 6:30 am rolls around.
It’s all part of the confessions…if I don’t get enough sleep…
let’s just say mornings are not my favorite part of the day.
But from all the good stuff I have heard from this book…it will be worth it:-)
I confess to bribing my kids to do yard work with Klondike Bars.
Not that they don’t like to help out around the house,
well, they are kids. They don’t like doing work period.
There was piles of cut off shrubs and weeds that needed moved.
Enter in the Klondike…
help mom do the yard work. Get an ice cream bar.
Bribery works every time:-)
I figure if they eat them all, I will stop hearing
ice cream voices yelling at me from the basement freezer!
I confess that I did indeed eat 1 of these muffins last weekend.
They are my somewhat feeble attempt at a healthy baked good.
Feeble because there was still butter and sugar involved.
They actually turned out pretty good.
Of course my kids turned their noses up, because I didn’t use chocolate.
Would you want chocolate in your pineapple muffins?
I didn’t think so either.
But the laughs on them, because I am working on a chocolate muffin
with some pretty healthy alternatives…I’ll let you know if it works out!
But for now make some Tropical Smoothie Muffins

Tropical Smoothie Muffins

Tropical Smoothie Muffins

Tropical muffins topped with toasted coconut

Ingredients

For the Topping
1/2 c. shredded coconut
For the Muffins
2 c. flour
1/2 c. quick oats
1/2 tsp. salt
3/4 tsp. baking soda
1/2 c. butter, softened
3/4 c. sugar
1/4 c. applesauce
3/4 c. vanilla yogurt
1 (8 oz.) can crushed pineapple, drained(reserve juice)
1/4 c. fresh mango, crushed
1 tsp. vanilla
For the Glaze
1 c. powdered sugar
2 Tbsp. pineapple juice

Instructions

  1. Spread the coconut out on a baking sheet. Bake at 375* for about 10 minutes, stirring often. Remove and let cool.
  2. Combine the flour, oats, salt, and baking soda. Set aside.
  3. Beat the butter and sugar until creamy. Add applesauce and combine again. Place mango in microwave safe bowl and heat for 1 minute. Crush using a fork. Add to the butter mixture with the pineapple, yogurt, and vanilla until creamy. Stir in the flour mixture.
  4. Spoon into 15 cupcake liners in a muffin pan. Bake at 350* for 28-30 minutes. Cool on a wire rack.
  5. Stir the powdered sugar and juice together until smooth. Dip tops in glaze and sprinkle with toasted coconut. Store in a sealed container.

Biscoff Apple Muffins

Biscoff Apple Muffins are a great way to start the morning….or the afternoon.

I love that we don’t usually have too much going on Sunday afternoons.
Today I got to snuggle on the couch with my youngest
and watch a Disney movie.
Even though he is getting older,
he still likes to cuddle and hold my hand.
It will be a sad day indeed when he decides his mom isn’t cool.

In fact, I might be guilty of babying him (just a little)
because I really don’t want him to grow up!
He is my little buddy after all!
So we sat and drank our coffee and had a movie date.
It was a really good day.

Muffins also make for a good day.
Especially muffins topped with a buttery streusel topping
AND filled with biscoff and apples.
Just recently grocery stores in our area
started carrying the deliciousness that is Biscoff.
(I may have bought a few jars.)
One for baking and one for eating by the spoonfuls!!!

Yield: 15 mufins

Biscoff Apple Muffins

Apple muffins made with Biscoff spread and topped with a streusel topping.

Ingredients

For the Muffins
1/3 c. quick oats
1 2/3 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 c. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1/3 c. oil
2 eggs
1/4 c. buttermilk
1/4 c. biscoff
1 tsp. vanilla
1 c. apples, peeled and diced
For the Topping
3/4 c. quick oats
1/2 c. flour
1/2 c. sugar
1 tsp. cinnamon
1/3 c. butter, chilled

Instructions

  1. Whisk all the dry ingredients in a large mixing bowl. Make a well and add all the wet ingredients. Beat on low until mixed. Stir in the apples by hand.
  2. Combine all the topping ingredients and cut the butter in with a fork until crumbly. Fill 15 muffin cups 3/4 full. Top with a large spoonful of topping. Bake at 350* for 28-30 minutes. Cool on a wire rack. Store in an air tight container. Makes 15 muffins.

Chocolate Mocha Muffins

Chocolate Breakfast Muffins

A few weeks ago my daughter and I went out on a shopping “date”. We try to go out every couple months just the two of us.  The plan is that she can stop at any store she wants and we usually get some sort of coffee drink for our shopping energy.  Now on these “dates” I am not allowed to go to the stores that I normally would go into.
This means no Old Navy, no Maurices, no American Eagle…basically no clothing stores except for Justice.  And that clothing store is the only one allowed because she loves their clothes. Me…I don’t love their prices that much, so I have to limit her to the clearance racks and maybe a nail polish.
We had a blast going through the racks and even found her a few tops and nail polish without breaking the bank.
