    {Blueberry Caramel Pecanbon Cupcakes}

    Week 3 of Hoosier Homemade's cupcake challenge
    is to jazz up a box cake mix.I started thinking how to use up some of the
    blueberries we picked this summer.When I found a can of cinnamon pecans in the
    ice cream topping aisle,
    I decided to create something using both.And then since I was by the ice cream toppings anyway...
    why not get some caramel to use somehow:-)
    Blueberry Caramel Pecanbon Cupcakes
    white cake mix
    1 c. buttermilk
    3 eggs
    ⅓ c. oil
    ¼ c. sour cream
    ½ c. blueberries
    ¾ c. chopped cinnamon pecans
    1 tsp. cinnamon
     
    Mix cake, milk, eggs, and oil as directed on box.
    Stir in sour cream and cinnamon until mixed.
    Fold in berries and nuts.
    Scoop into prepared cupcake liners.
    Bake at 350* for 23 minutes.
    Cool.
    Frost with Caramel Butter Cream.
    Drizzle with extra caramel topping
    and top with extra blueberries and pecans.
     
    Caramel Butter Cream
    1 c. butter
    4 c. powdered sugar
    1 tsp. vanilla
    4 tbsp. caramel ice cream topping
    ¼ tsp. salt
    Mix until creamy.

    These were given two thumbs up when
    I served them to my guinea pigs...
    I mean life group last night:-)

    The extra cinnamon pecans on top
    added the perfect yummy crunch
    to these delicious cupcakes.
