Happy Sparkle Day! So, today my kids and I picked 11 pounds of blueberries. Yes, 11 pounds!!! We love us some blueberries, but I’m thinking we are going to have blueberries coming out of our ears for the next week. I need lots of ways to use up these blueberries before they go bad. I have pans of berries freezing right now, but I do want to use the fresh berries in some baking. Please leave me comments with your favorite way to use blueberries. So far I have recipes for muffins, pie, and cake…what else can I make???

Thanks so much for featuring my garlic knots!! =) My favorite thing to make with blueberries are blueberry pancakes. If you’d never had them, blueberry-lemon ricotta pancakes are quite possibly the most delicious pancakes ever!

Personally, I think you should just freeze the blueberries and then let the kids stick them in marshmallow guns and shoot them at each other! :0) Or just a simple blue berry bread sounds good. Hum… maybe you should experiment and then I can come and try them on Monday! ;0)

Thank you ladies for a great party! A simple way we enjoy blueberries is to put a few on a large pick and dip in chocolate then freeze them (think frozen bananas!)

Eleven pounds of blueberries. I’m so envious. I just left a link to a yummy blueberry scone recipe. Hope it helps. I also love blueberry pie, smoothies, cobbler, sauce, buckle, cake, muffins, pancakes. They’re also great tossed into salads! If I were you I would freeze some of them to enjoy this winter too!
Just whipped up this fav blueberry salad for lunch today. I’ve had the recipe for years and can’t wait until summer to make it. Occasionally I’ll splurge in the winter and buy blueberries because I crave this one. Adjust quantities to your liking. Today I had about 1 1/2 cups blueberries, 1 banana sliced, 1/2 of a jar of mandarin oranges drained well, 1/3 cup coconut and the glue that holds it all together is just sour cream. Just eyeball it until it is all coated well. Just mix together gently and enjoy! The original recipe also called for mini marshmallows but I usually leave them out. This does not keep well. It will look pretty icky the 2nd day but it still tastes ok.
