Southwest Ranch Chicken Bacon Club Pizza

Ingredients

  • 1 - 13.8 ounce refrigerated pizza crust
  • 1/2 teaspoon olive oil
  • 1/2 cup southwest ranch veggie dip
  • 1 1/2 cups shredded cooked chicken (or 1 - 12.5 ounce can chunk chicken breast)
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1 cup chopped cooked bacon
  • 1/3 cup chopped sweet onion
  • 1/4 cup sliced black olives
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded pepper jack cheese
  • 1 cup shredded iceberg lettuce
  • 1 cup diced tomatoes

Instructions

  1. Grease a 10x15 inch pan with olive oil. Press the pizza dough onto the pan. Bake at 400 degrees for 8 minutes.
  2. Stir together the chicken, cumin, chili powder, and paprika.
  3. Spread the veggie dip over the partially baked pizza crust. Sprinkle the chicken, bacon, and onion over the top.
  4. Cover the pizza with both cheeses. Sprinkle the olives over the cheese. Bake again for 15-18 minutes.
  5. Remove and cut into squares. Top with shredded lettuce and tomato before serving.

Notes

  • If you are using canned chicken, drain and break it apart with a fork before using.
