Pina Colada Fruit Dip

This Pina Colada Fruit Dip has the pineapple and coconut flavors of a piña colada drink in a light, fluffy mousse. It is the perfect sweet dip to enjoy with fruit and cookies.

Ingredients

  • 1 (3.4 ounce) box instant coconut pudding mix
  • 1 (20 ounce) can crushed pineapple, undrained
  • 1 (8 ounce) container Cool Whip, thawed
  • 2 Tablespoons toasted coconut, for garnish if desired

Instructions

  1. Whisk together the dry pudding mix and pineapple until it thickens.
  2. Fold in the Cool Whip gently.
  3. Refrigerate until ready to serve.
  4. Serve with pineapple wedges and vanilla wafer cookies.

Notes

  • Stir in a 1/2 teaspoon rum extract to add more of a tropical flair to the dip.
  • This fluffy fruit dip can also be made with 3 cups of Homemade Whipped Cream if you prefer that instead of Cool Whip.
