Spicy Guacamole

Avocados and spicy tomatoes make a wonderful dip for chips.

Ingredients

  • 5 large ripe avocados
  • 2 cans diced tomatoes with green chilies (drain liquid from 1 can)
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped cilantro
  • 2 tablespoons lime juice
  • salt and pepper

Instructions

  1. Peel and scoop the avocados into a large bowl. Smash with a potato masher or a fork.
  2. Stir in the tomatoes and chilies, onion, cilantro, and lime juice. Season to taste with salt and pepper. Cover and refrigerate.
  3. Serve with your favorite chips.
