White Chocolate Caramel Cappuccino Bars

Fudgy white chocolate bars with caramel chips and coffee frosting are a fun way to change up your brownies.

Ingredients

For the Bars

  • 1/2 cup unsalted butter
  • 1 - 12 ounce bag white chocolate chips
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup Nestle caramel filled chocolate chips

For the Coffee Frosting

  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon coffee extract
  • 4 tablespoons heavy whipping cream
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°
  2. For the bars, melt the butter and white chocolate chips in a saucepan over medium heat. Stir until melted. The mixture will look very buttery. Whisk in the brown sugar and vanilla.
  3. In a mixing bowl, beat the eggs with a mixer until light in color. Add a little bit of the hot mixture to the eggs and stir again. Repeat a few times until all the hot butter mixture has been added.
  4. Add the flour and salt and beat again. Stir in the caramel chocolate chips by hand.
  5. Spread the mixture in a greased 9x13 pan. Bake for 25 minutes. Do not over bake. Remove and let cool completely.
  6. For the frosting, beat the butter, coffee extract, and whipping cream until creamy. Slowly add the powdered sugar and beat until creamy again.
  7. Spread over the cooled bars. Cut into 24 bars. Store in a sealed container on the counter.

Notes

*If you cannot find the coffee extract, use 1 teaspoon hot water with 1 teaspoon instant coffee.
