Brownie bites with hidden peanut butter cups and toasted marshmallows are a fun treat to share.

Ingredients
1 box brownie mix (9x13 pan size)
1/4 cup unsalted butter, melted
1 large egg
4 ounces cream cheese, softened
36 miniature white chocolate Peanut Butter Cups, unwrapped
18 large marshmallows, cut in half
Instructions
Preheat oven to 350°.
Mix together the brownie mix, butter, and egg. Add the cream cheese and mix thoroughly.
Refrigerate the dough for at least 30 minutes. Roll into 36 brownie balls. Use baking spray on your hands to keep it from sticking.
Place the brownie balls in mini muffin tins that have been sprayed with non stick spray. Bake for 12 minutes.
Remove from oven and let cool 2-3 minutes in the pan. Press a peanut butter cup into each brownie. Use a knife to run around the edges of each brownie. Gently remove the brownie and place on a wire rack to cool completely.
After the brownie has cooled and the chocolate has re-hardened, place a marshmallow half on each brownie bite with the sticky side down. Place the brownie bites on a cookie sheet.
Place under the broiler for 1 minute to toast the tops of the marshmallows. Watch them closely so they do not burn.
Let cool. Store in a sealed container on the counter. Makes 36 brownie bites.
