Chocolate Butterscotch Oat Bars

Butterscotch chips and chocolate frosting make these bar cookies an amazing treat to share.

Ingredients

For the bars

  • 1/2 cup unsalted butter
  • 1/2 cup shortening
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk
  • 2 large eggs
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups quick oats
  • 1 1/2 cups butterscotch chips (11 oz.)

For the Chocolate Frosting

  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 1/4 cup dark cocoa powder
  • 1/2 cup heavy whipping cream

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a mixing, beat the butter, shortening, and sugars until creamy. Add the vanilla, milk, and eggs and beat again.
  3. Stir together the flour, salt, and oats. Slowly beat into the creamed mixture.
  4. Stir in the butterscotch chips.
  5. Spread the batter in a greased 9x13 pan. Bake for 25 minutes. Do not over bake. Let cool completely.
  6. Beat together the frosting ingredients until creamy. Spread over the top of the cooled bars.
  7. Cut into 24 bars. Store in a sealed container.
