Strawberry Sugar Cookies

A red strawberry cookie drizzled with chocolate and sprinkles.

These Strawberry Sugar Cookies are soft, chewy, and bursting with flavor. Freeze-dried strawberries and red sanding sugar add sweetness and a fun pop of color to the dough.

Ingredients

For the Cookies

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon strawberry extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon table salt
  • 1 ounce freeze dried strawberries, crushed into powder with a food processor
  • 1/4 cup red sanding sugar

For the Topping

  • 1/4 cup dark chocolate melting wafers
  • 1/4 cup white chocolate melting wafers
  • holiday sprinkles

Instructions

  1. Preheat oven to 350°. Line a baking sheet with a Silpat or parchment paper.
  2. Beat the butter and sugar until light and creamy. Add the egg and extract and mix again.
  3. Slowly mix in the flour, baking powder, baking soda, salt, and strawberry powder until a soft dough forms.
  4. Use a cookie scoop to make 18 even balls. Roll the dough balls in the red sanding sugar, completely covering the dough.
  5. Place 9 cookies at a time on the prepared baking sheet. Bake 10 minutes. Remove and let cool on the hot pan for 1-2 minutes, then gently remove and place on parchment paper or a cooling rack.
  6. Once the cookies are completely cool, melt the dark chocolate and white chocolate in 2 bowls according to the package directions.
  7. Spoon the melted chocolates into 2 plastic bags. Drizzle over one side of each cookie and add sprinkles. Let set before storing.

Notes

  • Line your baking sheet with parchment paper or a Silpat to keep the cookies from sticking.
  • Find freeze-dried fruits by the dried fruits in Target or at Trader Joe's.
  • To make strawberry powder, purchase bags of freeze-dried strawberries from your local grocery store. Next, crush them in a food processor until you obtain a fine powder.
  • Add white chocolate chips for a sweet strawberries and cream flavor.
  • To make brighter cookies, tint the dough with red food coloring before rolling it into balls.
  • Cover the dough balls in colored sanding sugar or granulated sugar for a shiny and tasty sugar coating.
  • Drizzle or dip the cookies with melted milk chocolate, then add sprinkles to customize them for parties.
  • Place a scoop of vanilla ice cream between two cookies for a delicious ice cream sandwich treat.
