Red Velvet Cookies

Our Red Velvet Cake Mix Cookies are loaded with a mix of dark and white chocolate chips, and the cake mix adds a vibrant red color! Soft and delicious these red velvet cookies are the perfect dessert to share with family and friends.

Ingredients

  • 1 red velvet cake mix
  • 8 tablespoons unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 1 cup Hershey's cream cheese chips, divided
  • 1 cup dark chocolate chips, divided

Instructions

  1. In a mixing bowl, combine the dry cake mix, butter, egg, vanilla, and cream cheese and beat on slow speed until a soft dough forms.
  2. Stir in 3/4 cup white chips and 3/4 cup dark chips by hand. Chill the dough 60 minutes.
  3. Preheat the oven to 350°. Scoop and roll the dough into 24 even balls. Bake 12 at a time on a nonstick sheet pan for 10 minutes.
  4. Let rest on pan for 2 minutes before removing to a sheet of parchment paper on the counter. Tap the tops with a spatula if needed, then press a few of the remaining white and chocolate chips into the tops of the hot cookies.
  5. Let the cookies cool completely before storing in a sealed container for up to 5 days.

Notes

  • Refrigerate the cake mix dough for at least 60 minutes before baking. This will keep the cookies from spreading too much. Plus, they will bake up soft and puffy.
  • Use a cookie scoop to make the same size dough balls.
  • Save a few baking chips to add to the tops of the cookies after they come out of the oven.
  • Change up the mix ins. Try using M&M's, candy bars, peppermint chips, or sprinkles.
  • Skip the baking chips and roll the cookie dough balls in powdered sugar before baking to give them a pretty crackled look.
  • Do not over bake! These cake mix cookies will look soft and under baked when you take them out of the oven. Just trust me, they will set up as they cool.
