Ingredients

  • 8 Tablespoons unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 chocolate cake mix
  • 4 ounces cream cheese, softened
  • 3/4 cup chopped maraschino cherries, patted dry
  • 1 cup chocolate chunks

Instructions

  1. Beat the butter, egg, and vanilla. Stir in the cake mix and mix well.
  2. Add the cream cheese and beat until mixed in. Stir in the chocolate chunks and cherries by hand.
  3. Refrigerate the cookie dough for 1-2 hours. The dough will be sticky from the cherries.
  4. Preheat oven to 350 degrees.
  5. Roll the dough into 24 cookie balls. Place on un-greased baking sheet or a Silpat. Bake for 10-11 minutes. The cookies will be very soft, but do not over bake them.
  6. Cool on the baking sheet for 2-3 minutes. Remove the cookies to a sheet of wax paper and cool completely.
  7. If the cookies are extra puffy, tap the tops of the cookies with the back of a spatula to even out the tops. The cookies will continue to set up after cooling.
  8. Store in a loosely sealed container for 4-5 days.
