Skinny Banana Bread Recipe

Skinny Banana Bread is a delicious way to use up ripe bananas.  This healthy banana bread recipe is made with extra bananas, oat flour and coconut milk making it gluten free, vegan, and dairy free.

Ingredients

  • 1 1/2 cups mashed bananas (3-4 medium)
  • 1/4 cup monk fruit sweetener
  • 1/3 cup melted coconut oil
  • 2 cups oat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsweetened coconut milk
  • 1/4 cup mini chocolate chips + extra for the top

Instructions

  1. Preheat the oven to 350 degrees Spray 3 mini bread pans with nonstick spray.
  2. Beat bananas, monk fruit, and oil until mixed.
  3. Add the flour, baking soda, salt, and cinnamon and mix in. Slowly mix in the coconut milk
  4. Stir in the mini chocolate chips and spoon evenly into the prepared pans. Sprinkle the tops with extra chocolate chips.
  5. Bake 30 minutes or until a toothpick inserted in the center comes out mostly clean.
  6. Let cool in the pans for 10 minutes, then flip out onto a plate. Quickly flip the bread back over so the chocolate doesn't stick to the plate. Let cool 10-15 minutes before cutting into it.
