Cranberry Poppyseed Apple Salad

This fruit and nut salad is a refreshing side dish to add to any meal. The bright colors and crunchy texture is delicious.

Ingredients

For the Dressing

  • 1 - 14 ounce can whole berry cranberry sauce
  • 1/3 cup red wine vinegar
  • 1/4 cup honey
  • 1/2 cup olive oil
  • 1 Tablespoons poppy seeds

For the Salad

  • 2 romaine lettuce hearts, chopped
  • 1 cup julienne carrots
  • 3/4 cup dried cranberries
  • 1/4 cup raisins
  • 1/4 cup golden raisins
  • 1/2 cup chopped walnuts
  • 1/4 cup sunflower seeds
  • 2 cups diced apples
  • 4 ounces crumbled feta cheese

Instructions

  1. Place the cranberry sauce, vinegar, honey, and oil in a blender. Pulse until smooth. Stir in the poppy seeds.
  2. Toss the romaine, carrots, cranberries, raisins, walnuts, sunflower seeds, apples, and cheese in a large bowl. Cover and refrigerate until ready to serve.
  3. Stir in the desired amount of dressing. Serves 8-10.
