Italian Veggie Salad

This easy Italian Veggie Salad is a delicious and healthy addition to your meal plan. Feel free to change it up with your favorite veggies.

Ingredients

  • 2 cups chopped red, yellow, & orange peppers
  • 2 cups chopped cucumber (1 large)
  • 2 cups chopped broccoli
  • 2 cups cherry tomato halves (1 pint)
  • 1 - 5 ounce bag mini pepperoni
  • 1 - 8 ounce block mozzarella cheese, cubed
  • 1 cup garlic parmesan vinaigrette dressing
  • salt and pepper, to taste

Instructions

  1. Place all the veggies, pepperoni, and cheese in a bowl and mix.
  2. Pour the dressing on top and stir in. Season to taste with salt and pepper.
  3. Refrigerate until time to serve.
