The homemade sweet and spicy salad dressing adds a fun kick to this easy Pineapple Sriracha Chicken Salad. Great healthy and refreshing dinner choice for summer.

Ingredients
For the Dressing
1/2 cup Greek yogurt
1 - 8 ounce can crushed pineapple, drained
2 Tablespoons sriracha sauce
2 Tablespoons olive oil
2 Tablespoon honey
2 Tablespoons red wine vinegar
1 Tablespoon minced garlic
For the Salad
4-5 cups spring salad mix
3 grilled chicken breasts, cut up
1/2 cup diced red onion
1 cup shredded carrots
1/2 cup diced red pepper
1 - 21 ounce can pineapple chunks or tidbits, drained
1 - 8 ounce block mozzarella cheese, cubed
1/4 cup diced cilantro
Instructions
Place the yogurt, crushed pineapple, sriracha, oil, honey, vinegar, and garlic in a food processor or blender.
Pulse until mixed and creamy. Pour into a jar and place into the refrigerator.
Put the spring mix in the bottom of a large salad bowl.
Add the chicken, onion, carrots, pepper, pineapple, cheese, and cilantro on top. Toss before serving.
