Pineapple Sriracha Chicken Salad

The homemade sweet and spicy salad dressing adds a fun kick to this easy Pineapple Sriracha Chicken Salad. Great healthy and refreshing dinner choice for summer.

Ingredients

For the Dressing

  • 1/2 cup Greek yogurt
  • 1 - 8 ounce can crushed pineapple, drained
  • 2 Tablespoons sriracha sauce
  • 2 Tablespoons olive oil
  • 2 Tablespoon honey
  • 2 Tablespoons red wine vinegar
  • 1 Tablespoon minced garlic

For the Salad

  • 4-5 cups spring salad mix
  • 3 grilled chicken breasts, cut up
  • 1/2 cup diced red onion
  • 1 cup shredded carrots
  • 1/2 cup diced red pepper
  • 1 - 21 ounce can pineapple chunks or tidbits, drained
  • 1 - 8 ounce block mozzarella cheese, cubed
  • 1/4 cup diced cilantro

Instructions

  1. Place the yogurt, crushed pineapple, sriracha, oil, honey, vinegar, and garlic in a food processor or blender.
  2. Pulse until mixed and creamy. Pour into a jar and place into the refrigerator.
  3. Put the spring mix in the bottom of a large salad bowl.
  4. Add the chicken, onion, carrots, pepper, pineapple, cheese, and cilantro on top. Toss before serving.
  5. Add dressing, as desired. Serves 6.
