No Bake Strawberry Cheesecake Cups

These No Bake Strawberry Cheesecake Cups are easy to make in a blender. Perfect no bake dessert for those hot summer days when you do not want to turn on your oven.

Ingredients

For the Crust

  • 1 cup pretzels, crushed
  • 6 Tablespoons butter, melted
  • 1 Tablespoon granulated sugar

For the Cheesecake

  • 1 Tablespoon plain gelatin (1 pkt. Knox)
  • 1/4 cup warm water
  • 1 1/4 cups fresh strawberry slices
  • 1 1/4 cups cottage cheese
  • 1/4 cup plain Greek yogurt
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Combine crushed pretzels, melted butter, and sugar in a bowl. Spoon into 10 small glass jars (4 oz. Mason jelly jars) and press into the bottom. Set aside.
  2. Combine the gelatin and warm water in a small bowl. Stir until dissolved. Set aside.
  3. Place the strawberries in a blender and pulse until finely chopped.
  4. Add the sugar, yogurt, vanilla, cottage cheese, and gelatin water and blend until creamy.
  5. Pour into prepared jars. Refrigerate for 3-4 hours or overnight.
  6. Serve with Cool Whip and strawberry slices, if desired.

Notes

  • This is a very soft set cheesecake. You could also freeze the jars for a thicker consistency.
