Ingredients
3/4 cup butter, softened
1 - 8 ounce package cream cheese, softened
3/4 cup sugar
3/4 cup brown sugar
2 cups mashed banana (4-5 bananas)
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3 cups flour
1 cup cinnamon chips
1/2 cup toffee bits
1 cup finely chopped pecans, divided
2 bananas, sliced
Instructions
Preheat the oven to 350 degrees. Spray two 9x5 loaf pans with nonstick spray.
Beat the butter, cream cheese, and sugars until creamy. Add the mashed banana, eggs, and vanilla and beat again.
Stir together the baking powder, baking soda, salt, and flour and slowly add it to the banana mixture until completely mixed in. Stir in the cinnamon chips, toffee bits, and 3/4 cup chopped pecans gently.
Divide the mixture evenly into the prepared pans. Add the sliced bananas to the top of the batter and sprinkle the remaining pecan bits around the slices.
Bake for 70-75 minutes or until a toothpick inserted into the center of the bread comes out mostly clean. A few crumbs sticking to it is good.
Remove and let cool in the pan for 15 minutes, then place a plate on the top and flip it over and out. Turn the bread over, so the banana slices are facing upward. Serve warm or let it cool completely before covering. Makes 2 loaves of bread.
