Chocolate Chip Zucchini Bread

A loaf of the Best Chocolate Chip Zucchini Bread is a delicious way to use up the extra zucchinis that are growing in your gardens.  Loading this sweet bread with extra toppings truly makes it the best.

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup buttermilk
  • 1/4 cup oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated/shredded zucchini, squeezed if needed
  • 1/2 cup shredded coconut
  • 1/2 cup diced pecans
  • 1 cup miniature chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x5 loaf pan with nonstick spray. Sprinkle the sides and bottom of the pan with 2 teaspoons sugar.
  2. Stir together the flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl. Create a hole in the center of the dry ingredients.
  3. Add the buttermilk, oil, egg, and vanilla to the center of the ingredients and stir until combined.
  4. Stir the zucchini, coconut, pecans, and chocolate chips into the batter gently.
  5. Pour the batter in the prepared pan. Bake for 65-75 minutes. A toothpick inserted into the center should come out with a few crumbs when it is done.
  6. Remove from the oven and let cool in the pan for 10-15 minutes. Flip out and turn upright to cool completely.

Notes

If you want to add a glaze to the top of the bread, whisk together 1 cup powdered sugar with 1-2 Tablespoons water or milk. Spread on top of the cooled bread.
