Ingredients

For the Cookie Bars

  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup pumpkin puree
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon ground cloves
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cups all purpose flour

For the Frosting

  • 1/2 cup unsalted butter, softened
  • 3/4 cup marshmallow fluff
  • 1/2 teaspoon salt
  • 2 cups powdered sugar
  • 4-5 teaspoons heavy whipping cream
  • sprinkles

Instructions

  1. Preheat the oven to 375 degrees. Spray a 9x13 pan with non-stick baking spray.
  2. Beat the butter and sugars until creamy. Add the egg and pumpkin and beat again.
  3. Stir together the cinnamon, nutmeg, ginger, cloves, baking powder, salt, and flour. Slowly add to the pumpkin mixture until every is mixed in.
  4. Spread in the bottom of the prepared pan. Bake for 18-20 minutes. Remove and cool completely.
  5. Beat the butter until creamy. Add the marshmallow fluff and salt beat again.
  6. Slowly add the powdered sugar and whipping cream until everything is mixed in. Beat on high speed for 1-2 minutes until light and fluffy.
  7. Spread on top of the cooled bars. Top with sprinkles. Store in a covered container.
