Toffee Apple Bread

This Toffee Apple Bread and a cup of hot coffee makes a great snack to enjoy for an afternoon snack or breakfast.

Ingredients

For the Bread

  • 1 cup plain Greek yogurt
  • 1/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup quick oats
  • 1 1/2 cups shredded apples
  • 1 cup toffee baking bits

For the Frosting

  • 2 Tablespoons unsalted butter, softened
  • 1/4 cup brown sugar
  • 3 Tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 3/4 cup powdered sugar
  • 1/4 cup toffee bits

Instructions

  1. Preheat the oven to 350 degrees. Spray a 9x5 loaf pan with non-stick baking spray.
  2. Beat the yogurt, sugars, eggs, and vanilla until creamy.
  3. Stir together the flour, baking powder, baking soda, salt, and oats in a bowl. Slowly add to the egg mixture until mixed in.
  4. Stir in the shredded apples and toffee bits gently. Spread the batter in the prepared pan. Bake for 70-75 minutes or until a toothpick inserted in the center comes out mostly clean. A few crumbs is good.
  5. Remove it from the oven and let it cool in the pan for 10-15 minutes. Flip out onto a wire rack to cool completely.
  6. Melt the butter, brown sugar, and milk in a saucepan. Bring to a boil and boil for one minutes, stirring constantly.
  7. Remove from the heat and whisk in the vanilla and powdered sugar. Let it cool for 2 minutes, then stir in the toffee bits and spread it on top of the cooled bread. Let the frosting set before cutting into slices.

Notes

*If the bread is starting to get too brown, cover it with foil for the last 10 minutes of baking time.
