These Buffalo Chicken Pizza Rolls combine the flavor of buffalo chicken with cheese pizza. These little pizza bites are spicy, cheesy, and easy for weekend snacking or game-day parties.

Cook Time 28 minutes
Total Time 43 minutes

Ingredients

  • 4 ounces cream cheese, softened
  • 2 teaspoons minced garlic
  • 1/4 cup diced onion
  • 1 - 12.5 ounce can chunk chicken breast, drained well
  • 1/4 cup buffalo wing sauce + extra for serving
  • 1/4 cup ranch dressing
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 - 13 ounce can refrigerated pizza crust
  • 1 large egg
  • 1 teaspoon milk
  • 2 tablespoons blue cheese crumbles

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x13 pan with nonstick baking spray.
  2. Mix together the cream cheese, garlic, onion, and canned chicken. Stir in the 1/4 cup wing sauce and ranch dressing.
  3. Add the shredded cheese to the chicken mixture and stir until mixed in.
  4. Unroll the pizza crust. Spread the chicken and cheese mixture evenly on top of the crust, leaving a little border around the edges.
  5. Roll the crust up from the long side. Cut the roll into 12 even slices and place in prepared dish.
  6. Whisk together the egg and milk and brush on the sides of the pizza rolls (crust part). Bake 28-30 minutes.
  7. Drizzle with extra wing sauce and top with blue cheese crumbles. Serve immediately.

Notes

  • Adjust the spiciness. If you prefer a milder taste, use less sauce; for a spicier flavor, add more sauce gradually, tasting to achieve the desired heat level.
  • Properly seal the roll. Take your time when rolling up the dough, making sure to tuck in the edges and seal them tightly. Pinch the end of the dough into the roll before slicing.
  • Watch the bake time. Oven temperatures do vary, so the suggested baking time might need to be adjusted slightly according to your oven. The ultimate goal is a golden brown exterior with a hot, melted cheesey center.
  • Don't forget the garnishes. A drizzle of extra Buffalo sauce, a sprinkle of chopped green onions, or blue cheese crumbles add a wow factor to your dish.
  • Experiment with fillings. While Buffalo chicken is a classic choice, don't be afraid to try other fillings. You can try variations like BBQ chicken, pepperoni, and cheese or a vegetarian option with spinach and feta.
