Buffalo Shrimp Tacos are the perfect dinner for busy nights. Shrimp cooked in wing sauce, wrapped in a tortilla, and piled high with your favorite toppings is the way to go.

Ingredients
2 cups tricolor coleslaw mix
1/4 cup ranch dressing
1 pound medium shrimp, thawed
1/2 cup buffalo wing sauce
8 medium flour tortillas (fajita size)
Toppings (optional, to taste): green onions, cilantro, avocados, blue cheese crumbles, extra wing sauce
Instructions
Prepare the shrimp. If frozen, thaw by running cool water over them. Remove the tail and devein, if necessary.
While the shrimp is thawing, stir together the coleslaw and ranch dressing and place in the refrigerator.
Reserve 2 Tablespoons wing sauce for later. Pat the shrimp dry, place in a bowl, and stir in the rest of the wing sauce.
Pour the shrimp and sauce in a preheated skillet and cook for 4-6 minutes, or until shrimp are pink and cooked through. Flip and stir the shrimp occassionally.
Spoon the cooked shrimp out of the pan and stir in the remaining wing sauce.
Fill warm tortillas with coleslaw, buffalo shrimp, avocados, onions, cilantro, and blue cheese crumbles. Drizzle with more wing sauce, if desired.
Notes
Feel free to use hot sauce instead of the wing sauce if you want spicier shrimp.
