Chicken Bacon Alfredo Enchiladas

These Chicken Bacon Alfredo Enchiladas have an easy chicken and bacon filling inside a flour tortillas. They are baked with a creamy Alfredo sauce and cheese on top. Add lettuce and tomatoes before serving for a fresh texture.

Ingredients

  • 16 ounce jar ready made Alfredo sauce
  • 1/2 cup milk
  • 2 cups cooked, chopped chicken
  • 1/2 cup diced cooked bacon
  • 4 ounce can diced green chilies
  • 1 cup shredded cheddar jack cheese
  • 2 cups shredded mozzarella cheese, divided
  • 8 - 10 inch flour tortillas
  • diced tomatoes
  • chopped lettuce

Instructions

  1. Preheat the oven to 375 degrees.
  2. Whisk together the Alfredo sauce and milk. Spread out a few spoonfuls on the bottom of a 9x13 pan. Set aside.
  3. Combine the chicken, bacon, green chilies, cheddar jack cheese, and 1 cup mozzarella cheese in a bowl.
  4. Divide the mixture onto the 8 tortillas. Roll each one up and place in the prepared pan.
  5. Pour the remaining Alfredo mixture on top. Sprinkle with the leftover mozzarella cheese.
  6. Bake for 20 minutes. Then broil on high for 2 minutes to brown the cheese. Remove and serve hot. Top with lettuce and tomatoes. Serves 5-6.
