Healthy No Bake Brownie Bites

Ingredients
1 cup pecans
1 - 7 ounce bag dried figs
1 teaspoon vanilla extract
2 Tablespoons raw honey
1/4 cup dark cocoa powder + extra
1/2 teaspoon coarse ground sea salt
Instructions
In a medium - large food processor fitted with an "S" blade, grind the pecans into a fine meal. Make sure you do not over grind and make a paste.
Remove the stems from the dried figs.
Add the figs, vanilla, honey, cocoa powder, and sea salt to the ground nuts. Process until a sticky, uniform dough is formed.
Scoop the dough out by spoonfuls and roll them into balls with your hands. Place on a parchment paper lined tray.
Roll half of them in the extra cocoa powder, if desired. Make sure to brush off the excess powder.
Store the brownie bites in the refrigerator or freezer. Serve chilled for a firmer texture.
Notes
I prefer the taste of pecans in these, but feel free to use any nut you like. Almonds or walnuts would be good in these too.
Seeds may work if you want to make these nut free.
Dates or raisins would also work if you prefer those instead of the figs.
