Easy Buffalo Chicken Dip

Grab a box of crackers or a bag of celery and dig into this Easy Buffalo Chicken Dip. The creamy and spicy flavor in this cheesy dip will have everyone going back for more.

Ingredients

  • 1 - 8 ounce package cream cheese, softened
  • 1/2 cup ranch dressing (or blue cheese)
  • 1/2 cup Franks red hot sauce
  • 1 1/2 teaspoons garlic powder or 1 tablespoon minced garlic
  • 1 1/2 cups finely shredded cheddar cheese
  • 1 - 12.5 ounce can chunk chicken breast, drained well
  • green onions, for garnish

Instructions

  1. Stir together the cream cheese, ranch dressing, hot sauce, and garlic powder in a saucepan over medium heat.
  2. Add the shredded cheese and chicken and stir gently.
  3. Place the lid on the pot and heat until melted and creamy, stirring occasionally.
  4. Spoon into a bowl, drizzle with a little bit of hot sauce, and top with green onions. Serve immediately with celery, pretzels, and crackers.

Notes

  • Keep it easy and use canned chicken in this buffalo dip. Remember to stir it gently because it is more fragile than diced chicken. You can also use any type of shredded chicken for this dip. Rotisserie chicken or grilled chicken breasts are great options.
  • Grate a block of cheese for a smoother texture. Sometimes pre-shredded cheese can leave a gritty texture.
  • Use 1/4 cup hot sauce to make it less spicy.
  • Ranch dressing versus blue cheese dressing is always a hot topic when you make a buffalo chicken recipe. We prefer ranch dressing, so that's how we make it. It's totally fine if you use blue cheese.
  • If the dip looks greasy, heat the mixture a little longer stirring constantly until everything melts together.
  • Spoon it into a baking dish, top with extra cheese, and bake it. Frank's original recipe calls for it be baked at 350° for 20 minutes.
