We just finished up signing our youngest up for soccer and baseball, and our daughter is looking at running track and also has a volleyball camp in a few weeks. That means meal time is about to become interesting in our house.
Track practice is right after school until dinner time. Soccer and baseball usually starts right after dinner. That means dinner needs to be fast and easy, so that everyone can enjoy a hot meal before heading to the next activity. With Spring quickly coming and practices going on the calendar, I am on the look out for new and easy dinner ideas for our family.
I was contacted recently by Crock Pot to try their new Cuisine meals. They sent me a 4 quart Crock Pot and 4 meals to try out with my family. Everything you need for dinner comes packaged separately in one box with instructions on how to cook your dinner. Dinner on the table without shopping and chopping definitely has me loving these new meal kits.
We started with the Sesame Ginger Chicken first. It couldn't have been easier. First in the Crock Pot went the chicken and sauce mixture. Turn it on and leave it. Everything else goes into the refrigerator until 30 minutes before serving the meal. I love a delicious meal that I don't have to think about. The only thing I had to plan was my timing.
You can choose the high or low setting, and it changes the finish time by a few hours. This gives you a few hours in between if you forget to get it started on time. For this dinner, I chose the 4 hour option. All I had to do was think through our schedule and know that if we were eating at 5:30, the dinner needed to go in at 1:30.
Now that's the kind of dinner thinking I like. It leaves me more time to think about dessert...and we all know how much I love my dessert!
The noodles and veggies get stirred into the cooked mixture 30 minutes before you are serving them. Perfect for those nights when we get home close to dinner time. I can toss the rest of the ingredients in to finish cooking, while everyone takes care of their school gear and gets cleaned up for dinner. By the time we set the table, everything has cooked and is ready to be plated.
This meal was gone before I could even blink. That equals a dinner success in my eyes. My kids loved it so much that absolutely nothing got left behind in the pot.
The sweet ginger sauce was sweet, but not overpowering. There were plenty of chicken chunks and veggies in every bowl. Each meal is made with all natural ingredients and has a wonderful home cooked taste and smell. Perfect for serving and satisfying my hungry athletes.

Fun! Love how fresh the frozen veggies look. Fresh frozen is a thing right? These meals plus a crock pot are so fantastic for busy activity days! Also... that's a lot of sports, so good luck with that.

I love my crockpot. My kids go to Awana every Wednesday evening and using my crockpot on those days is the only way I can ensure to have dinner all ready for us so we can quickly get out the door.
