You look like you could use some sugar.  Maybe some Hot Chocolate Cheesecakes would satisfy that sugar craving?

Hot Chocolate Cheesecakes

Winter is my enemy and I have been drinking lots of coffee and hot chocolate to stay warm.  My body is not loving this 12* stuff.  I know it could be a lot colder, but come on spring.  Please hurry here.

So while I am on this hot chocolate kick, I thought it would be fun to switch out the sugar in my basic cheesecake recipe for hot chocolate mix.  Word to the wise…DON’T try to use a diet hot chocolate mix.  That batch didn’t taste so great!  I also thought it would be a good idea to try to make these skinny-ish!  Again a bad idea!!  Maybe it was the diet hot chocolate mix, but the fat free cream cheese and fat free sour cream DID NOT bake up good at all.  So, I went full fat for these Hot Chocolate Cheesecakes, and they came out just perfect.

Some things aren’t meant to be fat free.  I’m pretty sure cheesecake is one of those.

Hot Chocolate Cheesecakes

Cheesecake is definitely a favorite around our house.   I gave up all thoughts of dieting when these hot chocolate cheesecakes were in my fridge.  Yes, I have will power issues.  The cheesecake wins every time.  Chocolate, cool whip, sprinkles…I couldn’t resist them.  If you make them cupcake size, you don’t feel as guilty eating them.   At least that’s the story I tell myself as I head to the gym again.

Hot Chocolate Cheesecakes

Prep Time: 20 minutes

Cook Time: 22 minutes

Yield: 15 mini cheesecakes

Hot Chocolate Cheesecakes

Little hot chocolate cheesecakes are the perfect ending to any meal.

Ingredients

1 1/2 cups chocolate graham cracker crumbs
2 Tablespoons sugar
6 Tablespoons butter, melted
2 cream cheese (8 oz. each), softened
1 cup hot chocolate mix
2 eggs
2 Tablespoons sour cream
2 teaspoons vanilla
2 Tablespoons flour
1 cup Cool Whip
1/2 cup Kraft mini marshmallow bits
1/4 cup colored sprinkles

Instructions

  1. Stir together the graham cracker crumbs, sugar, and butter. Divide into 15 cupcake liners and press down. Set aside.
  2. In a large mixing bowl, beat the cream cheese and hot chocolate mix until creamy. Add the eggs, sour cream, vanilla, and flour and beat again until mixed. Spoon into cupcake liners. Bake at 350* for 22 minutes. Remove from oven and let cool in pan 2-3 minutes. Remove to wire rack and cool completely. Refrigerate. Just before serving top with Cool Whip, sprinkles, and mini marshmallow bits.

Coffee Cheesecake Oreo Brownies

I am declaring today a party day!!  Any excuse to eat some more chocolate right?  This past weekend and the last few days have been just a little stressful for me!  Nothing super important, just computer things that make my eyes glaze over.  All this coding and blog moving and learning has taken a toll on my brain!!!  I am now officially all moved over to WordPress…what do you think of the new site?  Mad props to my blog designer for totally making my blog say, Hello, I’m Jocelyn:-)  I absolutely love it!!!  She is incredible, and I can’t sing her praises enough.  Do you need design work done?  Totally contact her!

I am slowly working my way around WordPress…I have figured out enough stuff to get a post up obviously.  Do not ask me anything else though, because I am so lost at the moment:-)  I am told after a few weeks, I’ll be a pro!  Somehow I am doubting that, since I’m quite the computer challenged person!  But I’m up for learning it.  Thank goodness for Dorothy holding my hand and walking me through stuff step by step as I wrote this post.

Dear Camping,
You are kind of ok.  I must admit you were not as bad as I remembered.  I think having cooler weather helped a lot with that.  Although walking to and from a public bathroom will never get any easier.   Thank goodness for campfires and s’mores to distract me from the fact that I was in the great outdoors.  At least until I went to bed and heard all the nightlife right outside our popup.  Headphones would be a good thing to remember if there is a next time.

Thank you for being so easy to work with.  I love how fast it is to make a yummy breakfast/snack for my kids when I keep you on hand.  Your flakey and buttery layers were a perfect match for the cream cheese and pie filling.  Never change your recipe.

Blueberry Cheesecake Danish

Prep Time: 15 minutes

Cook Time: 10 minutes

Yield: 16 danishes

Blueberry Cheesecake Danish

These Blueberry Cheesecake danishes are a quick and easy breakfast using only 3 ingredients.

Ingredients

2 cans (8 oz. each) refrigerated crescent rolls
1 (8 oz.) container Philadelphia Indulgences white chocolate cream cheese
1/2 c. canned blueberry pie filling

Instructions

  1. Unroll the crescent rolls and separate into 8 rectangles. Press the seams together. Cut each rectangle into 2 squares. Spoon 1 tsp. cream cheese onto the center of each square. Top with 1 tsp. of pie filling. Fold the corners into the center.
  2. Bake at 375* for 10 minutes. Let cool for 2-3 minutes and remove to a wire rack. Cool completely. Store in a covered container in the refrigerator. Makes 16 danishes.
