 This past few weeks we have been cleaning out our closets and rooms one by one.  It is amazing the amount of junk we have accumulated in just a few short years.  I thought we had gotten rid of so much when we moved here 4 years ago.

Brownie Batter Cookie Dough Popcorn

It’s no secret that I love chocolate covered popcorns.  I mean, you have seen this Reese’s Popcorn and this Almond Joy Popcorn right?  Popcorn coated in chocolate and filled with candy and marshmallows is definitely my favorite snack to make in a hurry.  Plus, it is a no bake recipe.  As we head into the summer months, those are great recipes to have on hand for days when it is too hot to turn on the oven.

Brownie Batter Cookie Dough Popcorn Have you seen this cookie dough bites candy?  I found them in my local Walmart’s candy aisle with the movie box candies.  Word of warning…I found some cookie dough bites at the Dollar Tree…not good!  Trust me and buy the ones from Walmart:-)

Another word of warning…buy an extra box of cookie dough bites because when you taste test them (and you will) there won’t be any left to put in your popcorn.

Brownie Batter Cookie Dough Popcorn

This popcorn is really so easy to make.  First make your popcorn.  We have a Whirly Pop and we absolutely love how the popcorn comes out of it.  But you could definitely use microwave popcorn too.  Then you melt up some CandiQuik to cover the popcorn with.   In my recipe I used two kinds of CandiQuik…it was actually because that was all I had left in my cupboard at the time.  But it turned out so perfect and delicious that I decided that was the way it needed to stay.    Using a little of both gave it the chocolate color and taste, but it didn’t overwhelm the brownie mix.

Now I ‘m sure you are wondering what to do with the extra brownie mix…don’t you worry your pretty little head.  Keep reading…I have four other recipes at the bottom of this post that you can use the brownie mix in :-)

I found these cute little chalkboard boxes at Target last week.  I knew right away that I wanted to decorate it with some washi tape and these cute Flowers Detailz Dies from Lifestyle Crafts.  I know this isn’t the greatest picture of the flower, but if you look really closely you can see how the flower is embossed around the edges and center.  I used two of the dies and layered them for a fuller flower.  I also added a polkadot brad and curled the edges of the center flower for some more pop.  These boxes are perfect for filling with any popcorn mix.  Make sure to put the popcorn in a plastic bag before handing out though.

Brownie Batter Cookie Dough Popcorn

Prep Time: 15 minutes

Yield: 10 cups

Brownie Batter Cookie Dough Popcorn

Chocolate covered popcorn gets another hit of chocolate from the brownie mix that is added to the chocolate. Cookie dough bites and mini chocolate chips add to the chocolate factor.

Ingredients

8 cups popped popcorn
2 cups mini marshmallows
1/2 cup dry brownie mix
5 oz. vanilla CandiQuik
5 oz. chocolate CandiQuik
1/2 cup mini chocolate chips
1 cup cookie dough candy bites
1/4 cup sprinkles

Instructions

  1. Combine the popcorn and marshmallows in a large bowl. Set aside. Place both flavors of CandiQuik in a microwave safe bowl and heat for 30 seconds. Stir and repeat until melted and smooth. Add the dry brownie mix to the melted chocolate and stir until dissolved. Pour over the popcorn. Toss with your hands until everything is coated. Stir in the cookie dough bites and the chocolate chips.
  2. Pour the coated popcorn onto a large baking sheet that is covered with parchment paper. Sprinkle the sprinkles over the popcorn before it sets up. Let set before breaking into chunks. Store in a sealed container on the counter for 3-4 days. Makes 10 cups of popcorn.

Key Lime Pie Popcorn

Do you have any family traditions?  One thing that we try to do with our kids each week is Friday movie night with pizza and popcorn.  Last week I created this  Key Lime Pie Popcorn for our night together.

It’s that time of year when Spring is just around the corner teasing us here in the Midwest.  We had a few mild days, and then a winter storm came through and dumped about 9 inches of wet, cold snow on us.  The good thing is that it is supposed to be warming up again, and that snow should melt.  I am starting to get anxious for warm weather, although I shouldn’t complain because we have had the mildest winter ever.  This is the first real snow storm all year.  But it still has me dreaming of warm beach weather.

All the fun new spring flavors at the stores are really putting me into that warm weather mode too.  Citrus must be the flavor for the spring season.  I have seen so many different products using key lime, orange, and lemonade.

 Duncan Hines has a new frosting creations packet in the key lime flavor.  I grabbed a few of those when I saw them at Walmart.  Key lime makes me think about Key West every single time.  My hubby and I went to Key West for our honeymoon, and then we also stopped there on one of the cruises that we went on a few years later.  Both times we were there, we had the Key Lime cheesecake at Kermit’s cheesecake shop.  I love the chocolate covered Key Lime pie on a stick.  So, immediately my mind went to key lime pie when I bought the flavor packet.

And because we have popcorn all the time, I decided to try another fun flavor.  How does Key Lime Pie Popcorn sound?  I added graham cracker chunks to mimic the pie crust and marshmallows…well, the marshmallows just because I love them in chocolate covered popcorn :-)  Then I added the key lime flavor packet to the melted chocolate (I love using CandiQuik because it melts so well) before pouring it on the popcorn.   Put the popcorn on a tray and let it set up before breaking it into chunks.

Chocolate drizzle over all the chunks was the perfect extra touch.  Eating handfuls of this totally transported me back to the beach on Key West.

Key Lime Pie Popcorn

Prep Time: 20 minutes

Yield: 10 cups

Key Lime Pie Popcorn

Chocolate covered popcorn gets a blast of summer flavor with a key lime coating.

Ingredients

8 cups popped popcorn
2 cups miniature marshmallows
2 cups graham cracker chunks
10 oz. white melting chocolate (CandiQuik)
1 packet Duncan Hines Frosting Creation Key Lime Pie
2 oz. chocolate melting chocolate (CandiQuik)

Instructions

  1. In a large mixing bowl toss the popcorn, marshmallows, and graham cracker chunks. Melt the white chocolate according to the directions. Stir in the flavor packet. Pour over the popcorn and toss until coated.
  2. Spread the popcorn on a large baking sheet that has been covered with parchment paper. Refrigerate for at least 5 minutes. Remove and break apart the popcorn into chunks. Drizzle with the melted chocolate topping. Let set again. Store in a sealed container for 3-5 days. Makes about 10 cups.

Notes

If you can't find the Key Lime flavor, feel free to substitute with any of the Duncan Hines flavors.

Today I am joining a wonderful group of blog friends in Cookies & Crafts for Sandy Hook.   (I know I’m stretching it slightly by calling this an edible craft:-)    This past week I was reminded again of how fragile our life on Earth is.  God has given us a precious gift in our children.  We love and serve them every day without thinking.  My heart breaks as I think of how much hurt those parents must be feeling right now.  How can me posting a tribute help them?  It can’t, but it can let them know we are in this together.  We will continue to pray for them in the coming weeks.   My prayer for the parents is that they rest in the faith that we have a great and loving God who wants us to lean on Him in times of hurt and despair.  He is greater than any fear or hurt we can experience.  His love covers all!   [Read more...]

Almond Joy Popcorn Munch

So the other day I was driving to pick my kids
up from school when I realized my hands
really could use some lotion.

I have been driving for so many years…no problem.
I knew that I could handle getting in my bag,
grabbing the lotion, and staying in my lane.

Like I said, no problem at all.
The problem comes as I keep my eyes
on the road and squeeze the lotion on my hands.

I drop the tube in my lap and start
to rub the the lotion on my hands.
Immediately I realize that I squeezed
way too much out…and my hands were WHITE.
I didn’t even want to touch the steering wheel.
It was bad…really bad.

My mind is racing with my options…
do I should just wipe it on my jeans or
just wipe it on the van seat?

Both sounded bad…
I don’t want lotion spots in my jeans forever, and…
I don’t want my husband to “kill” me for wiping it on the seat.

Then I remembered…I shaved this morning.
So, very carefully…remember I am still driving…
I pull up a pant leg and rub some lotion in.
Then I repeated on the other side.
All better:-)

What?
It seemed like a good idea at the time.
It’s just a good thing there wasn’t that much
traffic on that road.

Hey, I stayed in my lane the entire time.
I just was very preoccupied.
You know what else seemed like a good idea at the time?
Almond Joy Popcorn!!!!
And truly it was a great idea!!!
I mean, 2 kinds of chocolate, 2 kinds of Almond Joy,
toasted coconut and almonds. Be still my heart!!!!

The only problem…is trying to stop once you start:-)

Almond Joy Popcorn Munch

Prep Time: 20 minutes

Cook Time: 10 minutes

Yield: 10 cups of popcorn

Almond Joy Popcorn Munch

White chocolate covered popcorn with coconut, almonds, and Almond Joy bars and pieces...for the serious coconut lover.

Ingredients

1 c. shredded coconut
7 c. popped popcorn (I used extra butter flavor)
1 1/2 c. chopped Almond Joy bars
1/2 c. slivered almonds
1 c. Almond Joy pieces
1 c. white chocolate, melted
1/4 c. dark chocolate chips, melted

Instructions

  1. Spread coconut on a baking sheet and place in 400* oven for 10 minutes. Stir occasionally so the coconut does not burn. Cool on pan.
  2. In a large bowl combine the popcorn, Almond Joy bars and almonds. Pour the melted white chocolate over the popcorn and toss to coat. Spread on a large baking sheet that has been lined with wax paper. Sprinkle with the Almond Joy pieces. Place in the refrigerator to set up quickly.
  3. Break the popcorn into large chunks. Drizzle with the melted dark chocolate and let set again. Store in a tightly sealed container.
