Hello from a banana freak.
I can't be the only one out there that likes their bananas to crunch, right?
You know the kind of banana.
Slightly green. Peel hard to get off.
Yup, that is just how I like to eat my bananas.
In cereal, plain, with chocolate...
It just can't taste like a banana to me.
Strange. I know.
But in the cookies I made last week or these Toffee Banana Coconut Muffins,
you have to leave them on the counter for a while.
Not a problem for me because as soon as they loose their green hue,
I won't touch them with a ten foot pole.
I don't know what to say about these yummy cookies from last week.
Best cookie to date.
Chocolate. Toffee.
Banana bread like texture.
Even better the next day.
Gone.
Yea, that just about sums it up.
So get out those fat pants and whip up a batch today.

Recipe
Chocolate Toffee Banana Cookies
Yield:
36 cookies

32 minutes
Chocolate cake mix cookies with banana and toffee bits. You will want a big glass of milk with these.
Ingredients
- 1 box chocolate cake mix
- ยฝ cup unsalted butter, softened
- 2 teaspoons instant coffee granules (optional)
- 2 teaspoons vanilla
- 2 large eggs
- 2 ripe bananas, smashed (about 1 cup)
- ยพ cup flour
- 1 cup mini chocolate chips
- ยฝ cup toffee bits
- pinch of salt
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, lightly beat cake mix, butter, coffee, salt, vanilla, and eggs until combined.
- Add the smashed bananas and flour and beat gently.
- Stir in the chocolate chips and toffee bits by hand.
- Take half the dough and drop 12 spoonfuls onto a baking sheet lined with a silpat. Bake 12-14 minutes.
- Cool on sheet for 1 minute before removing and cooling completely.
- Repeat with the remaining dough.
- Store in a loosely sealed container.

These sounds delicious!!! Do you have any suggestions on substitutions for the instant coffee granules? I don't drink coffee, so I don't have any in the house... Please help ๐

You can just leave it out...they will be fine without the instant coffee. I hope you enjoy them!

I just made these tonight.. They are super delish!!! I used a ice cream scoop to spoon my dough.. Are the cookies supposed to be doughy & super gooey in the center?????! I love soft cookies, but wasn't sure if the bananas make the cookies more gooey in the center or if I just need to bake them longer... Help

I do know all ovens bake slightly different. It sounds like they might need to be baked 1-2 minutes more. Give them more time to set up though before you change your bake time. After they cool completely, you might be surprised at how fudgey and delicious they are.

Gack, I get that little lump in my throat when I think of green bananas. Well, any banana really, but especially the green ones. I can choke down a couple bites of a brown spotted one. But I can eat loads of bananas in treats. So these cookies are perfect for me. YUM! ๐
