Have you ever done something really dumb?
Like put your purse in the shopping cart...
and then walk away to look at clothes?
Not just away where you can still see the cart...
but away through the clothes almost to the other side.
Yea, that was my "dumb" moment yesterday.
My daughter and I were looking at girly clothes...
and I completely forgot that I had put my purse
on the seat of the cart.
Did I realize that it wasn't on my shoulder???
No.
Not until I wandered slowly back to the cart.
It was only a few minutes, but still...
God was watching out for us,
because everything was still in there when I got back.
It sure was enough to make me feel sick for a while 🙁
Maybe it is all the sugar that I have on the brain
that is making me be so forgetful!
One thing I won't be forgetting soon
is how yummy these Salted Caramel Coffee Chip Cheesecakes were.
Salted caramel just gets me every single time!
These would be great little treats to have on hand
for a super bowl party this weekend.
You could even top them with a football shaped Oreo cookie
instead of the pretzel...just sayin'.
Recipe
Salted Caramel Coffee Chip Cheesecakes

Coffee and salted caramel give these mini cheesecakes a decadent and delicious taste.
Ingredients
- 2 - 8 ounce packages cream cheese, softened
- ½ cup sugar
- 2 eggs
- 2 Tablespoons flour
- ¼ cup sour cream
- 2 Tablespoons instant coffee
- 1 Tablespoon hot water
- 1 cup mini chocolate chips, divided
- 1 cup dipping caramel (for apples)
- 1-2 Tablespoons sea salt
- Cool Whip

Instructions
- Preheat oven to 350 degrees. Place 12 cupcake liners in a muffin tin.
- Dissolve instant coffee in hot water. Set aside.
- Beat cream cheese until creamy. Add sugar, flour, sour cream, and coffee water and beat again.
- Beat in eggs, one at a time. Stir in ¾ cup mini chocolate chips by hand.
- Fill liners evenly with the cheesecake. Bake 24-25 minutes. Cool on wire rack. Refrigerate until chilled through.
- Heat dipping caramel until easily stirred. Stir in sea salt to taste.
- Top each cheesecake with 1 Tablespoon caramel. Serve with Cool Whip and extra mini chips.
- Top with pretzels right before serving. Keep refrigerated.
Notes
*If you do not like the taste of coffee, substitute 2 teaspoons vanilla extract for the instant coffee and water.

Don't feel too badly. How about putting your 6 year old daughter in the car, drive a ways to the grocery store, get her out and do your entire shop. When you get to the cashier, you realize that you've left your entire purse at home and just have your car keys. My daughter doesn't remember a lot about being 6, but she remembers that! I am so making this recipe, but I am not a fan of Cool Whip. I wonder what else I could top them with, without it being overkill. Any ideas?

Isn't it great the things kids remember? 🙂 Hey, at least it is good for laughs later in life. Do you like regular whipped cream? You could make your own from heavy whipping cream and a little sugar if you like.
