I was cleaning up some photo folders on our computer and,
I realized that I have so many recipes from this summer that I still haven’t shared.
I’m sure that means I bake way too much and should probably slow down…
yeah, like that’s going to happen:-)
And I have the stretchy pants to prove it!!!
Yesterday our weather turned cooler…very fall like and wonderful.
Gotta love bringing out the jeans and hoodies.
I am so excited for my favorite season to be here non stop!!!
In the evening my husband got out our fire pit and we enjoyed a blazing fire.
The irony in this…we were huddled around the fire to keep warm…
while eating ice cream!!!
I came to the realization that just because summer is gone (I hope),
doesn’t mean we stop eating ice cream here.
And I’m betting that most of you keep eating ice cream too.
So, I think I am safe to share the couple ice cream goodies from this summer.
A chewy oatmeal peanut butter cookie…
studded with white chocolate Kit Kat bars.
What could be better?
Oh yeah, TWO of these cookies and vanilla ice cream in the middle.
Sandwich cookies are the best because you get 2 cookies + filling every time you have just one.
I definitely need to make more filled cookies just for that reason alone:-)
And you wonder why I wear stretchy pants…

- 1 c. peanut butter
- 1 c. butter
- 2 c. brown sugar
- 2 Tbsp. honey
- 3 eggs
- 1 Tbsp. vanilla
- 1/2 tsp. salt
- 1 tsp. baking soda
- 2 1/2 c. flour
- 2 c. quick oats
- 3 c. chopped white chocolate Kit Kat bars

I love kitkat’s! These look so chewy and perfectly delish! All that PB and brown sugar and candy bars – yes, great thinking!
I do love cookies with lots of brown sugar for that chewy factor and of course candy is welcome all the time!!!
It’s logic like you use (and I USE) that makes me gain weight!! Haha
Two cookies, stuffed with icecream, oh and delicious white chocolate kit kats. Yep, sign me up!
Can I borrow the stretchy pants?
Awesome, so awesome. I love Kit Kats!
I love ice cream all year round. So in the winter I wear two sweaters, gloves, and a blanket while I sit on the couch and eat my ice cream. So, yeah, these would be a year round treat. When we meet we’ll have to go shopping for stretchy clothes together.
Whoa! That looks sooo good! Who care what the temperature is outside, my body is always 98 degrees and it always wants ice cream!
Ice cream all the time, no matter the temps. That’s my new motto:-)
Anything with peanut butter, butter, brown sugar, and KIT KAT has got to be good!!
I’ll sometimes put on my robe in order to be warm enough to sit down with a dish of frozen yogurt or ice cream. lol
I’m a year-round ice cream eater, so I’m all for these! Plus, technically, it’s still a tad too warm to get all gungho fall here, so these sammiches would be perfect as an after-dinner dessert. I NEED to get my paws on some white chocolate Kit Kats. Still haven’t had ‘em but need them methinks!
Like you – I have tons of recipes I still need to share, but I keep spending more time baking….
These ice-cream sandwiches are wonderful any time of year, any time of day
I just LOVE white-chocolate
Yes, definitely good all year long:-)
I love Kit Kat’s Jocelyn! I feel like they are an underrating candy bar. NEver thought to mix them with peanut butter. I know.. strange! I love PB and never thought to do that lol!
I love peanut butter cookies and I am always looking for fun new flavors to try out with them:-)
Hello! Stopping by from Mix it up Monday. My mouth is drooling things about these ice cream sandwiches – YUM! I’m co-hosting Marvelous Mondays and would love for you to add this link. Thanks for sharing.
Happy Monday!
Are you kidding me? My husband would want to marry me all over again if I served these up!! Holy smokes!
If I can eat ice cream between two of these cookies, I’d definitely be eating it all year long

These look super duper delish! I’m jealous of your Fall weather..by the way. lol Will you send some of that cooler air my way?! K, thanks!
oh those look great!
Oh heavens! These look totally ahhhmazing!
Okay, oatmeal cookies are actually my very favorite (is that weird??)–and with white kit-kats and vanilla ice cream? Um, yeah–pretty sure my stretchy pants aren’t going anywhere soon! =)
I eat ice cream all winter long and I live in Alaska. Sure I’m usually curled up under a down blanket while I doing so, but I love ice cream. I love that you put white chocolate kit kat in your oatmeal peanut butter cookies. YUM!
