Apple Snickers Cake

Looking for a dessert recipe that is healthy and decadent at the same time?  This Apple Snickers Cake will have you going back for another piece in no time.

How many of you have had this Snickers Salad before?  It is a definite favorite with our kids.

Of course it always made me laugh every time I heard people talking about this salad, because Snickers and salad just don’t sound right together.  But then I had some of the deliciousness, and I was a believer.   The creamy Jello pudding and Cool Whip mixed with apple chunks and Snickers bars…now that’s the kind of salad I can get behind every night.  That’s one way of having your apple a day right?

The other day I bought more Crunch Pak apples for school lunches and after school snacks.  As much as the kids would like to have cookies and cake every day, we have been trying to enforce more healthy options and I love how convenient the bags are for kids to eat.  Nothing wrong with encouraging the kids to eat more healthy snacks with individual portion sizes. I also picked up an extra bag of apples because I also wanted to make some muffins or bread too.

But then I wandered into the Easter aisles at Walmart, and I had this crazy desire to put Snickers into said muffins or bread.  Of course a bag of those Snickers went into my cart in quite a hurry.  What was that I said about eating more healthy snacks?

My husband just shakes his head in disbelief every time I come home with more candy.  I realize I have issues if you are wondering.  This time I was telling him about my crazy need to bake some apple bread with Snickers when he stopped me.  His suggestion was an apple cake with the Snickers Salad on top as frosting.  The more I thought about it, the better it sounded!  Let me tell you people, he is a genius because this cake is simply to die for.

This Apple Snickers Cake is actually quite healthy…if you forget that it has candy bars and sugar in it.  I used a mixture of applesauce and yogurt in place of any oil and butter.  And 3 cups of chopped apples means lots of apple in every bite.  See totally healthy right?  Ok, fine, now you are shaking your head at me in disbelief too.

Whatever. This cake is amazing!  Case closed on whether it is really healthy or not!

Apple Snickers Cake

Prep Time: 30 minutes

Cook Time: 35 minutes

Yield: 16 pieces of cake

Apple Snickers Cake

Apple Cake with a fun Snickers Salad twist on top.

Ingredients

1/3 cup applesauce
1/3 cup plain yogurt (Chobani)
2 eggs
2 teaspoons vanilla
3 cups peeled and diced apples
3/4 cup sugar
3/4 cup brown sugar
1 3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 1/2 cup chopped Snickers bars, divided
1 cup milk
1 box Jello instant vanilla pudding (3.4 oz.)
1 Cool Whip (8 oz.)

Instructions

  1. In a large mixing bowl, combine the applesauce, yogurt, eggs, vanilla, and sugars. Beat until creamy. Stir in the diced apples. Combine the flour, baking soda, salt, and cinnamon. Slowly add to the apple mixture until thoroughly combined. Stir in 1 cup of chopped Snickers by hand.
  2. Pour the apple batter into a 9x13 pan that has been sprayed with non stick spray. Bake the cake at 350* for 35 minutes. Remove from the oven and place on a cooling rack. Cool completely.
  3. Whisk together the milk and pudding mix for 2 minutes. Fold in the Cool Whip gently. Spoon on top of the cooled cake and spread out. Place in refrigerator for about on hour to thicken. Serve with extra candy bar pieces. Makes 16 pieces.

You look like you could use some sugar.  Maybe some Hot Chocolate Cheesecakes would satisfy that sugar craving?

I’m sure that is what you need.

Winter is my enemy and I have been drinking lots of coffee and hot chocolate to stay warm.  My body is not loving this 12* stuff.  I know it could be a lot colder, but come on spring.  Please hurry here.

So while I am on this hot chocolate kick, I thought it would be fun to switch out the sugar in my basic cheesecake recipe for hot chocolate mix.  Word to the wise…DON’T try to use a diet hot chocolate mix.  That batch didn’t taste so great!  I also thought it would be a good idea to try to make these skinny-ish!  Again a bad idea!!  Maybe it was the diet hot chocolate mix, but the fat free cream cheese and fat free sour cream DID NOT bake up good at all.  So, I went full fat for these Hot Chocolate Cheesecakes, and they came out just perfect.

Some things aren’t meant to be fat free.  I’m pretty sure cheesecake is one of those.

Hot Chocolate Cheesecakes

Cheesecake is definitely a favorite around our house.   I gave up all thoughts of dieting when these hot chocolate cheesecakes were in my fridge.  Yes, I have will power issues.  The cheesecake wins every time.  Chocolate, cool whip, sprinkles…I couldn’t resist them.  If you make them cupcake size, you don’t feel as guilty eating them.   At least that’s the story I tell myself as I head to the gym again.

Hot Chocolate Cheesecakes

Prep Time: 20 minutes

Cook Time: 22 minutes

Yield: 15 mini cheesecakes

Hot Chocolate Cheesecakes

Little hot chocolate cheesecakes are the perfect ending to any meal.

Ingredients

1 1/2 cups chocolate graham cracker crumbs
2 Tablespoons sugar
6 Tablespoons butter, melted
2 cream cheese (8 oz. each), softened
1 cup hot chocolate mix
2 eggs
2 Tablespoons sour cream
2 teaspoons vanilla
2 Tablespoons flour
1 cup Cool Whip
1/2 cup Kraft mini marshmallow bits
1/4 cup colored sprinkles

Instructions

  1. Stir together the graham cracker crumbs, sugar, and butter. Divide into 15 cupcake liners and press down. Set aside.
  2. In a large mixing bowl, beat the cream cheese and hot chocolate mix until creamy. Add the eggs, sour cream, vanilla, and flour and beat again until mixed. Spoon into cupcake liners. Bake at 350* for 22 minutes. Remove from oven and let cool in pan 2-3 minutes. Remove to wire rack and cool completely. Refrigerate. Just before serving top with Cool Whip, sprinkles, and mini marshmallow bits.

Pumpkin Cheesecake Brownie Pie

Why is it that you get so nervous when you realize a police car is right behind you?
The other day I was driving along and I happened to look in my rear view mirror,
and there was a police car following right behind me.

Every single time that happens, my heart drops into my stomach,
and I instantly look at my speedometer to make sure I’m not speeding.

I hadn’t gone through a red light…that day,
and I wasn’t trying to text and drive.
So why do I get so jumpy?

I did the same thing another day when we went past the park,
and sure enough in the turn around was a cop car.
My eyes dropped right to my speed.
This time I was going about 10 over…
I thought for sure I was going to be busted.
My stomach was full of butterflies and I felt all jittery!
And of course the kids were in the van with me.

Thank goodness, no red lights and sirens came after me.

Pumpkin Oreo Cheesecake

Last week my hubby and I ate at the Cheesecake Factory…
it is definitely one of my FAV places to eat!!!
We always end up ordering an appetizer and 2 meals,
just to bring home most of the meal for another meal later:-)
The servings there are HUGE!
We could easily share just one meal and be content…
especially when there is cheesecake for dessert.
