This month I had the priviledge of choosing a recipe from Hilary's blog, Baking Bad.
I was pretty excited to get hers because she lives about an hour from me, but we have never met...one day, maybe?
I was so inspired to cook some better food as I went through her blog...inspired to actually make some yummy food.
But my heart is always pounding after yummy sounding and tasting desserts, so off I went to check out her treats. I knew the minute I saw her mint fudge.
That was it...plus I had just bought mint Oreos. Cha-ching!!!! This was going to be awesome!
And the best part was going back later and realizing that Hilary adapted it from my blogging BFF Aimee.
If you have been reading my blog for any time at all, you know one major thing about me...I love to jazz my desserts up with all sorts of sugar bling. Hilary's fudge got the royal treatment in my kitchen.
First it was given a bottom layer of dark chocolate fudge. Then it was topped off with the cookies and cream layer that had been colored a bright fun green color.
I seem to have a thing for two toned fudge. Remember this Cappuccino Fudge and this Red Hot Oreo Fudge???
This Mint Chocolate Cookies and Cream Fudge may have converted me from just using a can of frosting for my fudge. I absolutely loved how creamy the sweetened condensed milk and fluff made it.
Definitely a good thing I sent most of it to work with my husband. Otherwise, I would be face planting right into the pan about now!!!

Mint Chocolate Cookies and Cream Fudge
Two layers of fudge loaded with cookie chunks makes this Mint Chocolate Cookies and Cream Fudge a dream dessert.
Ingredients
For the Chocolate Layer
- 2 cups dark chocolate chips
- 1 Tablespoon butter
- ¾ cup marshmallow cream
- ⅔ cup sweetened condensed milk
- ½ teaspoon vanilla
- ⅛ teaspoon salt
For the Mint Layer
- 2 cups white chocolate chips
- 1 Tablespoon butter
- ¾ cup marshmallow cream
- ⅔ cup sweetened condensed milk
- ½ teaspoon vanilla
- ⅛ teaspoon salt
- 10 mint Oreos, broken into chunks
- green food coloring
Instructions
- Line an 8x8 pan with foil.
- In a small sauce pan, combine the chocolate chips, butter, sweetened condensed milk, and marshmallow cream over medium heat. Stir until completely melted together.
- Stir in the vanilla and salt. Pour into pan. Refrigerate until set.
- In a small saucepan, combine the white chips, butter, sweetened condensed milk, and marshmallow cream over medium heat. Stir until completely melted together.
- Stir in the vanilla, salt, and a little bit of green food coloring.
- Stir in the broken mint Oreos. Pour on top of the chocolate layer.
- Top with extra broken cookie pieces. Refrigerate until set. Let the fudge come to room temperature before cutting into 49 squares.

The recipe says 1/2 marshmallow cream 7 oz jar does that mean the whole 7 oz jar or half of the jar?

No, it's half the 7 ounce jar...which is 3/4 cup. I went ahead and fixed the recipe to say that. Thanks for the heads up on how unclear I wrote that.

Marshmallow cream is a spreadable marshmallow mixture that is sold in jars in most stores. You can usually find in the same aisle as the regular marshmallows.

Is condensed milk correct or is it sweetened condensed milk?

Sorry about that...yes, it is sweetened condensed milk. I'll make sure I update that recipe.

Hi there. Just wondering, how does an 8x8 inch pan yield 50 squares? Or is this recipe meant to make more than one pan? I'm needing something to take into work, but one 8x8 pan just isn't going to do it. I'm not an experienced baker, so maybe I'm missing something 🙂 Thank you!

Hi, Robin. I used an 8x8 pan for the whole batch. It is really thick and sweet, so you will cut the pieces smaller.

I am so sorry to hear that. Did your bottom layer set up? I use this base on all my fudge recipes and have never had any problems.
