Toffee Cookies Recipe
A sweet brown sugar glaze and chocolate drizzles transform these easy Toffee Cookies into an amazing treat. Great dessert to make for holiday cookie trays.
Ingredients
For the Cookies
- ½ cup unsalted butter
- ½ cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 ¾ cup all purpose flour
- ¼ teaspoon baking soda
- ½ teaspoon table salt
- 3 bars - 1.4 ounce each chocolate covered English toffee candy (Skor bars), chopped
For the Glaze
- ¼ cup unsalted butter
- ½ cup packed brown sugar
- 2-3 tablespoons milk
- 1 â…“ cup powdered sugar
- â…“ cup milk chocolate chips
- â…“ cup white chips
Instructions
- Preheat oven to 325 degrees.
- Mix together butter, brown sugar, vanilla, and egg until creamy.
- Add the flour, baking soda, and salt and mix until a soft dough forms.
- Reserve â…“ cup of the chopped candy bars. Stir the rest of the candy bars into the dough gently.
- Roll the dough into 48 even balls. Bake on an ungreased baking sheet for 11-14 minutes or until the edges are slightly brown and the tops are set. Remove and let cool on a wire rack.
- heat the butter, sugar, and milk in a small saucepan over medium heat until it comes to a boil. Remove and stir in the powdered sugar.
- Immediately dip the tops of the cooled cookies in the glaze and place on a cooling rack.
- Place the chocolate chips and white chips in 2 separate bowls. Heat in the microwave at 50% power for 30 seconds at a time. Stir until melted and creamy. Spoon the melted chocolate into 2 plastic bags and cut one tip off.
- Drizzle the chocolates over the tops of the cookies. Sprinkle with the reserved candy. Let set.
