Monster Cookie Blonde Brownies

It’s after noon here,
and we are all just starting to move around here.
But I guess that’s what happens when you stay up to the wee hours…
blowing up your money:-)
We spent yesterday with family, and hip hip hooray,
they have had plenty of rain up north, so no burn bans there.
So of course the boys headed out to buy some fire fun!!!
Oh my word!!!
I can’t believe how much that stuff costs!!!
We saw one big package marked $750!!!
Seriously?  Who buys those things?
Monster Cookie Bars
Now we are home after a long night,
and it is time to get back into the swing of things.
Well, maybe not a full day swing of things.
 
I’m thinking it might be a “do a whole lot of nothing” kind of a day.
Even with sleeping in, we are feeling like slugs!
Maybe a run at the gym will get me feeling more like tackling the day?
Naaaaaahhh:-)
I’m going to put that off until a little later too!
Monster cookie blonde brownies

Until I find the motivation to do some laundry or dishes or something housework related…
I’m going to share some delicious and fun blonde brownies with you.

Last week my daughter turned 11 and we had a monster high birthday party for her.
Of course we tossed around the idea of cupcakes, cake, and ice cream.
I was breathing a sigh of relief when she decided on just ice cream sundaes for the party.
But not just any ice cream sundaes…these were MONSTER sundaes.
Brownies topped with ice cream and then 10 different toppings!
These girls were seriously hopped up on sugar when they left:-)

I took my basic blonde brownie and jazzed it up MONSTER COOKIE STYLE!
Inside these bars, we put the components of all different kinds of cookies.

Think oatmeal, M&M, cookie dough, chocolate chip, and Biscoff!!!!
Oh yeah!!!  All that wrapped into one glorious bar!

Let’s talk cookie dough bites candy…
you could totally make your own using THIS RECIPE
just make them quite a bit smaller.

But with all the other party stuff going on,
I went the completely easy way out!
I bought about 5-6  boxes of the theatre box candies…
you know the $1 boxes at Walmart.

***Warning!!!  Do not, I repeat, DO NOT get the generic ones
from the Dollar Tree.  They were not so good!  Ok, they were plain bad!!***

***2nd warning–don’t try to take pictures of food when it is dark and stormy outside…
uggghhh to trying to lighten these up enough to look somewhat good***

These bars are a full on sugar rush!
Maybe I need some more of these bars to get me going today:-)

 

Monster Cookie Blonde Brownies

Prep Time: 15 minutes

Cook Time: 20 minutes

Yield: 16 bars

Monster Cookie Blonde Brownies

Monster cookie bars filled with Biscoff, oatmeal, and M&M's for a fun new bar cookie.

Ingredients

1/2 c. butter, softened
1 c. brown sugar
1/2 c. Biscoff spread
2 eggs
1 tsp. vanilla
2 tsp. baking powder
1/2 tsp. salt
1 1/2 c. flour
1/2 c. oatmeal
3/4 c. M&M candies
1 c. cookie dough bites candies
3/4 c. chocolate chips

Instructions

  1. In a mixing bowl, cream the butter and sugar until light and creamy. Add the Biscoff, eggs, and vanilla and cream again. Sift the baking powder, salt, flour, and oatmeal together and slowly add to the butter mixture.
  2. Stir in the M&M’s, cookie dough bites, and chocolate chips by hand. Spread in a greased 9×13. Bake at 350* for 20-22 minutes. (do not overbake) Let cool completely before cutting.

We were out across the street watching a neighbor blow up their money :) And besides my oldest who was out the door for summer gym class at 6:45am, my girls all slept in until 9:30, 10:00 and 11:20am. Sloths I tell ya! I did get my run in and some weight lifting, but it’s only because I spend 4-6 hours in front of the TV watching tour de france! Might as well work out a little bit.

  12. Half of our neighborhood was out late last night blowing up their money…we got to watch the same stuff–for free! =) These monster bars look fabulous, and I never would have guess it was dark and stormy out when you took the photos–they turned out great, as always!

  14. Wow, $750? That’s insane!! Thank goodness some people buy that stuff so we can take advantage and watch their explosions from our driveway :) these blondies look AWESOME, Jocelyn! They have everything inside of a blondie that I adore, not to mention being blondies which are my total super duper favorite. I’m sure your cutie daughter was thrilled with them!

    • It is insane that people spend money to just blow it up…oh wait! We did that too! But no where near that amount. Sparklers and firecrackers go a long way:-) Blondies are my favs too!!!

    • Thank you!!! You could use peanut butter or any other nut butter in place of the Biscoff. Our Walmart just started carrying the Biscoff in the peanut butter aisle:-)
