My husband has an old black Saab convertible that he loves driving around when the weather is warm and sunny. I don't mind riding in it with him, but when the temperature gets over about 85 degrees it isn't quite as comfortable. The black seats get hot very quickly, so getting in with shorts on is interesting.
And of course, the minute you stop moving, anyone sitting on those black seats starts to cook. These little things don't stop my husband from enjoying his car.
Although, this week the temperature is supposed to be over 100 degrees here. Something tells me he will be getting his other car fixed pretty quickly.
I think I can count on one hand the times I have driven his convertible. It is a stick shift, and although I do know how to work that, I choose to drive our other car.
Another reason I don't drive it is because the car is old...and falling apart...and getting into first gear is hard. The other day I had to drive my daughter to summer school in that car. When you only drive a stick shift once a year, it takes a minute (or two) of remembering how it's done.
I probably should have had an extra Salted Caramel Mocha Latte that morning, so I was more alert and awake and functioning. My daughter was ready to call dad and see why I couldn't get the car started. Like I said, it just takes a minute to remember the differences. I finally got it, and we made it there and back.
I think I should probably stick to driving the automatic car though and doing all the dessert baking. I do much better remembering how to make desserts like Vanilla Cherry Pie Cupcakes or Strawberry Lemon Snack Cake.

Lately I have been feeling the urge to add key lime to everything. Blueberry key lime donuts or this Key Lime Pound Cake are a few treats that have the perfect summer flavor. It makes me think Florida sunshine every time I taste it.
I decided to make a pan of easy cheesecake bars using key lime juice and blueberry pie filling swirled on top. Don't you just love those fun fruit swirls??? Cheesecake bars in a 9x13 pan are the perfect dessert for crowds or dinner parties.
How to make Key Lime Cheesecake Bars
- Make sure you beat your cream cheese and sugar until it is soft and creamy before you start adding anything else.
- Do not over mix your batter once you add your eggs.
- Use a butter knife to swirl the blueberry pie filling into the cheesecake batter gently. Do not over swirl because too much swirling will make it start to become messy looking.
- To keep your cheesecake from cracking place a pan of water on the bottom rack of your oven. This steam bath will create a creamy texture in your cheesecake bars.
- Remove the pan of cheesecake immediately from the oven once the timer goes off. There is no need to cool it in the oven slowly. Let it cool on a wire rack for an hour.
- Chill the cheesecake bars in the refrigerator for at least 4-6 hours. This will give it enough time for the cheesecake to set up properly.
- Serve each slice of these Blueberry Key Lime Cheesecake Bars with a big swirl of Cool Whip and the extra pie filling.

Blueberry Key Lime Cheesecake Bars
These Blueberry Key Lime Cheesecake Bars are a fun way to add some citrus and blueberry goodness to your summer parties.
Ingredients
- 30 vanilla cream-filled cookies
- ¼ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- ¾ cup granulated sugar
- ¾ cup sour cream
- ⅓ cup key lime juice
- ¼ cup all purpose flour
- 3 large eggs
- 1 tablespoon key lime zest
- green gel food coloring, if desired
- 21 ounce can Lucky Leaf Blueberry Pie Filling, divided
- 8 ounce container Cool Whip, thawed
- key lime slices, if desired
Instructions
- Place a baking sheet on the very bottom rack of the oven. Fill halfway with water. Preheat the oven to 325 degrees.
- Line a 9x13 pan with foil and spray with non-stick spray.
- Place the cookies, cream included, in a food processor and pulse until they become crumbs.
- Stir together the crumbs and melted butter. Press evenly into the bottom of the prepared pan.
- Beat the cream cheese until creamy. Add the sugar and sour cream and beat again until smooth.
- Add the key lime juice, zest, and flour and beat again until mixed in thoroughly.
- Add the eggs, one at a time, and beat gently after each one. Do not over beat but make sure the eggs are mixed in.
- Add green food coloring to the cheesecake mixture, if desired.
- Spread the cheesecake batter evenly over the crust in the pan.
- Drop 1 cup of the blueberry pie filling randomly over the top of the cheesecake. Use a butter knife to gently swirl the pie filling into the cheesecake. Do not let the knife go through to the crust.
- Place the pan on the oven rack right above the tray of water. Bake for 45-48 minutes. Remove immediately and place on a wire rack for one hour, and then place in the refrigerator until completely chilled.
- Cut into 24 squares and serve with Cool Whip, the remaining pie filling, and key lime wedges.

This looks delicious! I would like to make it with a graham cracker crust instead of vanilla wafers (I don’t care for them) so I was wondering what amount of crumbs to use, 2 cups? Thank you

I actually used Golden Oreos, which are a vanilla cream cookie, for the crust of this cheesecake. I would guess if you used graham cracker crumbs that you would need 3 cups of crumbs, plus more butter since you don't have the cookie filling to help hold it together. Hello! I had a question on the first step Iv never done the whole water thing and I’m not really understanding it. Is the pan that the cheesecake is going to be in going in the baking sheet with the water or on the top rack and the baking sheet on the bottom rack?

You are going to place a large sheet pan on the very bottom rack of your oven, and then fill it with water. Let the oven heat up while you make the batter. When the cheesecake is ready to go in the oven, place the pan on the rack right above the steaming water. You are NOT placing the cheesecake in the water at all. The pan of water is there just to create steam and moisture to keep your cheesecake creamy as it bakes. Does that help? I hope you enjoy the cheesecake!

Oh, no! Leave the cheesecake in the pan and place it all on the wire rack to cool. You do not want to remove the cheesecake from the pan until it has chilled all the way. I hope you enjoy the bars!

I don't see why you couldn't do that. I make key lime cheesecake squares and freeze them before dipping them in chocolate, so it should work for these too! I hope you enjoy them!

In reading the recipe you said to line the pan with foil, however, in your pictures I don't see any foil in the pan. Is the foil necessary, wouldn't a spray vegetable coating work?

I removed the bars from the foil before taking pictures 🙂 You could just spray the pan with a non-stick spray too. I just like using foil because I can remove the entire thing from the pan without anything sticking. I hope you enjoy them!

This may be silly questions, but I need to know. Is key lime the same as a regular lime?

No, they are different. Key limes are a smaller version with a slightly different flavor. You can buy a bag of key limes in the produce department of most stores, and bottled key lime juice in the juice aisle.

The whipped topping looks so pretty on these bars, but I don't think I would want to cover up the beautiful swirled design! Decisions, decisions! 🙂 I can't drive a stick shift at all, so I am very impressed that once a year you can figure out how to do it. Once, we had to get my husband's stick shift car across the country. When I took over the driving, he handled the stick while shouting instructions for my feet! Talk about stressful! On the highway it wasn't so bad, but that was the end of stick shift driving for me!
