I get to celebrate my birthday by sharing an easy cake recipe in a surprise baby shower for my good friend Lisa from Wine and Glue.  I had the opportunity to meet Lisa a few months ago at the Pillsbury blogger event.  She is so sweet and fun to be around, and she makes the yummiest treats and dinners on her blog.

Lisa is expecting a little girl in just a few short weeks.  Yay for a little girl in pink and purple clothes, cute shoes, and fun matching headbands!!!

When I started thinking about what I wanted to make, I knew it had to be pink.  Immediately I thought about this dessert that I tried a few months ago on our cruise.  I’m not quite sure of what it was made of, but it reminded me of eclair cake with a strawberry twist.

Our Walmart carries an instant Strawberry Creme Jello Pudding Mix that I knew would work perfectly for this cake.  If you can’t find that pudding, use instant vanilla pudding and a Strawberry Shortcake Duncan Hines Frosting Creation or a little bit of strawberry Jello powder.

This cake is seriously so easy to have put together and in your fridge in minutes.  It is just layers of pudding and graham crackers in a pan. You really can’t get much easier than that.  I figured that since Lisa is going to be having a little munchkin waking her up in the wee hours of the morning for feedings and diaper changes, an easy, peasy dessert was needed.

 Most eclair cakes have a melted frosting that gets poured on top, but I wanted another layer of strawberries to make this dessert stand out.  Simmering strawberries with a little bit of sugar makes a thick jelly.  It was a delicious way to top off this easy no bake cake.  It also totally added to the strawberry shortcake look!

Congratulations Lisa! I wish we could all be together to share all our wonderful food and hugs with you.  I can’t wait to see pictures of that sweet little girl!

Strawberry Shortcake Eclair Cake

Prep Time: 30 minutes

Yield: 12 pieces of cake

Strawberry Shortcake Eclair Cake

Strawberry pudding, graham crackers, and a strawberry jam makes this such a fun and delicious no bake dessert. Perfect for those upcoming summer days!

Ingredients

1 small box Strawberry Creme Instant Jello Pudding (3.4 ounce)
1 1/2 cups milk
1 cup Cool Whip + extra for garnish
graham crackers
2 cups diced strawberries
1/4 cups sugar

Instructions

  1. Whisk together the instant pudding and milk. Fold in the 1 cup Cool Whip.
  2. Place a layer of graham cracker in the bottom of an 8x8 baking dish. Spread half the pudding on the crackers. Cover with another layer of crackers. Add the rest of the pudding over the middle layer of crackers. Top with one more row of crackers. You may need to break some into small pieces to cover all the pudding. Place in the refrigerator.
  3. Place the strawberries and sugar in a saucepan. Heat over medium heat until it comes to a boil. Lower the heat and simmer until it gets thick, about 5 minutes. Let cool. Spread over the top of the mixture in the pan. Keep refrigerated. Cut into 12 slices. Top with more Cool Whip and extra strawberries before serving.

Notes

*Use an instant vanilla pudding and a Strawberry Shortcake Duncan Hines Frosting Creation if you cannot find the Strawberry Creme pudding.

**You could also use a few spoonfuls of strawberry Jello gelatin powder in vanilla pudding. Stir to taste.

***For extreme strawberry flavor, use an instant Strawberry Pudding and the Strawberry Shortcake DH Frosting Creation together.

    Walmart has a strawberry pudding mix??? I need to keep an eye out for that — sounds incredible! My guy loves fruity desserts, especially ones with lemon or berries, and they’re basically the only ones he’ll eat. (Never any chocolate — oh well, more for me!) So sweet of you to make such a pretty pink dessert for Lisa!
